    Ingredients

    • ¾ cup lemon juice fresh or bottled
    • 1 cup water
    • ½ cup powdered sweetener
    • 1 teaspoon lemon zest

    Instructions

    Using a Ninja Creami:

    • Insert the container into the Ninja Creami and secure the lid with the blade attachment.
    • Select “Full”, turn the knob to "Sorbet" function and let the Ninja Creami process the mixture until smooth and creamy.
    • If needed, use the "Re-spin" function to achieve the desired consistency.
    • Serve immediately or store in the freezer for later use. If storing, allow the sorbet to soften slightly before serving.

    Without an Ice Cream Maker:

    • In a medium bowl, whisk together the lemon juice, water, powdered sweetener, lemon zest, and xanthan gum until the sweetener and xanthan gum are fully dissolved.
    • Pour the mixture into a shallow, freezer-safe dish.
    • Place the dish in the freezer. Every 30 minutes, remove the dish from the freezer and stir the mixture with a fork, breaking up any ice crystals that form.
    • Continue this process until the sorbet is fully frozen and has a smooth, scoopable texture. This should take about 2-3 hours.
    • Once the sorbet is ready, scoop and serve immediately. If storing in the freezer, allow the sorbet to soften slightly before serving.
