    What are enchiladas?

    Enchiladas are a classic Mexican dish that features rolled-up tortillas stuffed with all sorts of fillings, smothered in sauce, and baked until the cheese is melted and bubbly.

    The usual go-to fillings are chicken or beef, but you can also load them up with beans, cheese, or veggies for a tasty vegetarian option!

    Enchilada sauce is made with a mix of spices and chili peppers, giving it that rich and spicy flavor we all love.

    Are chicken enchiladas low carb?

    If you're on a low-carb or keto diet, traditional enchiladas might feel off-limits because of the high carb count in tortillas and regular enchilada sauce. But don’t worry! With a few easy swaps, you can whip up a delicious keto-friendly version of this classic dish.

    1. Try using low-carb tortillas made from almond or coconut flour to really cut down on those carbs.
    2. Opting for a homemade or store-bought low-carb enchilada sauce will keep the net carbs low while still giving you that awesome flavor.
    3. Load up your enchiladas with lots of protein and veggies to make them more filling and nutritious.

    Making keto chicken enchiladas at home

    To make this keto chicken enchiladas at home, you will need a few key ingredients...

    • Low-carb tortillas: Almond or coconut flour tortillas are awesome for reducing carbs. You can either buy them or make your own!
    • Shredded chicken: Grab some pre-cooked shredded chicken to save time, or go ahead and cook and shred your own chicken breasts if you prefer. I like to make a whole batch of shredded chicken in my crockpot.
    • Cheese blend: A mix of Mexican cheese blend brings that classic cheesy goodness to your dish. If you're dairy-free, use a dairy-free cheese alternative instead.
    • Green chilis: These give a nice tangy flavor and kick to the filling. You can use canned diced green chilis or roast your own fresh ones.
    • Enchilada sauce: I love to make my own red enchilada sauce (ready in 10 minutes!), or you can use store-bought low-carb enchilada sauce.

    What's the secret to good enchiladas?

    The secret to making delicious enchiladas is layering flavors. Season your chicken well, mix in some spicy green chilis, and add a rich and flavorful enchilada sauce.

    Pro tip: Don't forget the cheese! Shredded cheese inside and on top of the tortillas brings everything together with gooey goodness.

    Do I HAVE to make my own low carb tortillas?

    While homemade low-carb tortillas can be a healthier (and yummier) option sometimes, I'll admit they do require some time and effort to make.

    If you are short on time or want to keep dinner time prep under 10 minutes, consider picking up a pack of your favorite low-carb tortillas from the grocery store!

    • Guacamole: A classic side dish that brings some healthy fats to balance out your meal.

    This easy, keto chicken enchiladas recipe is a delightful twist on a classic favourite, allowing you to indulge without the carbs. With tender shredded chicken, zesty green chilis, and a rich homemade enchilada sauce, all wrapped in low-carb tortillas, this dish is sure to become a family favorite!

    Ingredients

    • 6 low-carb tortillas
    • 2 cups shredded chicken breast or rotisserie chicken
    • 1 cup Mexican cheese blend shredded
    • 1 can diced green chilis 4 ounces
    • 1 cup keto enchilada sauce
    • 1 teaspoon olive oil

    Instructions

    • Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
    • In a mixing bowl, combine shredded chicken, half the shredded cheese, diced green chilis, and half of the enchilada sauce. Mix until well combined.
    • Spoon a portion of the chicken mixture onto each tortilla and roll them up tightly. Place them seam side down in the prepared baking dish.
    • Pour the remaining enchilada sauce over the rolled-up tortillas, spreading it evenly to cover them.
    • Sprinkle remaining shredded cheese on top of the enchiladas.
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
    • Remove the foil and bake for an additional 5 minutes to lightly brown the cheese.
    • Once done, remove the enchiladas from the oven and let them cool for a few minutes before serving.
    • Serve with chopped fresh cilantro avocado, and sour cream.

      Made these using low carb tortillas and your home made enchilada sauce. It was delicious. I also used Costco rotisserie chicken. Quick, tasty and very satisfying. I did add 1 more T paste to the sauce and an extra 1/2 c cheese on top, for my non low carb family members I topped them with more sauce and lettuce tomatoes and sour cream. I did get eight enchiladas. We ate 2 for our meal.
