    Ice cream bars are incredibly satisfying and indulgent. My favorite kind is chocolate-dipped. I just love biting into it, the chocolate crackling, and my teeth sinking into the sweet and creamy ice cream!

    The best thing about making your own ice cream bars is that you know exactly what is in them. When you buy "low-carb" or "sugar-free" varieties at the store, you never know what you will get. Some brands use artificial sweeteners that are actually pretty unhealthy.

    I also like making my own ice cream bars because if I keep the ingredients on hand, I can have my favorite dessert whenever the craving strikes. Few things feel as good as knowing that I have everything I need to make salted caramel ice cream bars.

    You are going to love how these taste. There isn't any funky aftertaste with them; they are just as decadent as full-sugar bars!

    Ingredients Needed For Keto Sea Salt Caramel Ice Cream Bars

    There are only a handful of ingredients in these ice cream bars. Keep all of these in your refrigerator and pantry, and you'll be able to make them whenever you are craving something sweet.

    Here's what you need:

    Chocolate Baking Chips

    I used dark chocolate baking chips from ChocZero, but you can use any flavor that you like. The chocolate is going to be the shell on the outside. I really enjoy dark chocolate with vanilla ice cream because it has a fuller flavor.

    Coconut Oil

    You need coconut oil to make the chocolate the right consistency to melt and become the perfect shell for the bars.

    Sugar-Free Caramel Syrup

    You will use the caramel syrup to add the salted caramel flavor and sweeten the ice cream. But, you could leave it out and just make regular vanilla ice cream bars sweetened with allulose.

    For this recipe, I used sugar-free caramel syrup from ChocZero. It's my favorite! Plus, it gives the ice cream center a soft and smooth texture.

    Sea Salt

    Regular table salt won't work nearly as well as sea salt for the ice cream. Just trust me and use flaky sea salt.

    Vanilla Extract

    For this ice cream recipe, I recommend using real vanilla extract. It will have a lot more taste than imitation vanilla.

    Heavy Cream

    Always go with full-fat heavy whipping cream when you make low-carb ice cream. It's the best for those on the keto diet and will give you great results.

    Egg

    I prefer to use cage-free eggs, but any type of egg will work!

    Quick Tips:

    • To speed up the cooling process of the heavy cream, you can place the mixture in the freezer for 10-15 minutes. Just don't forget about it!
    • Use an electric mixer to whip the ice cream. It puts the air back into the cream.
    • Chill the baking sheets before you dip your ice cream bars into the melted chocolate. This way, your ice cream bars will freeze the best.

    How To Make Keto Salted Caramel Ice Cream Bars

    All of the details and step-by-step directions are in the printable recipe card at the bottom of this post. First, here are some photos of the entire process, along with some extra tips.

    Make The Salted Caramel Ice Cream Base

    The very first thing you will do is make the salted caramel ice cream. You'll whisk the heavy cream, egg, vanilla extract, caramel syrup, and sea salt together in a medium saucepan over medium heat.

    Be careful not to let it boil. Then, transfer it to a heat-safe bowl and allow it to cool.

    Fill The Ice Cream Molds

    After it is completely chilled, use an electric mixer to whip the mixture. Then, fill the ice cream molds and insert the popsicle sticks.

    Let them freeze for at least 4 hours until they are hardened.

    Make The Chocolate Coating

    Next, melt all the ingredients for the chocolate coating in a double boiler. You could also melt them in the microwave. Just be careful not to burn them!

    Then, dip the frozen ice cream bars into the chocolate.

    Store The Bars

    Let the bars harden on chilled baking sheets. After the chocolate coating solidifies, store the bars in mini popsicle bags or an airtight container.

    What other flavors can I make?

    Instead of caramel sauce, you can flavor the ice cream with any type of extract. Use peppermint extract to make peppermint ice cream or make chocolate ice cream by adding cocoa powder.

    Which brand of sugar-free chocolate chips is best?

    Out of all the ones I have tried, my all-time favorite is ChocZero! Not only do they have many different keto-friendly options, but anything you try is bound to be delicious.

    I also used ChocZero chocolate chips to make my sugar-free white chocolate pudding!

    How long will they last in the freezer?

    Frozen ice cream bars should last about 6 months if you store them properly in the freezer.

    Will heating the cream mixture cook the egg?

    No, heating the cream mixture will not cook the egg. To be safe, you should heat it slowly and remove it as soon as strands of steam form on top of the heated liquid.

    Ingredients

    • 2 cups heavy cream
    • 1 large egg
    • 1 tablespoon vanilla extract
    • ¾ cup ChocZero Caramel Syrup
    • ¾ teaspoon sea salt or pink Himalayan salt
    • ¼ cup coconut oil
    • 7 ounces ChocZero Dark Chocolate Chips (one bag)

    Instructions

    • In medium saucepan, whisk together heavy cream, egg, vanilla extract, caramel syrup, and sea salt. Cook mixture over medium heat until it begins to steep (strands of steam form on top of the heated liquid) being careful not to boil. Transfer to a heat-safe mixing bowl and place in the refrigerator to cool, about 1 to 2 hours. To speed up the cooling, you can place the bowl in the freezer for 10 to 15 minutes.
    • Remove mixture from refrigerator after chilled. Whip with an electric mixer for about 3 to 5 minutes to incorporate as much air as you can. Divide the mixture into ice cream pop molds and add popsicle sticks. Freeze for at least 4 hours until hardened.
    • Place 2 baking sheets lined with silicon mat or parchment paper in the freezer. Melt coconut oil and chocolate chips together in a chocolate melter, double boiler, or microwave being careful not to burn. Removed chilled lined baking sheets from freezer. Dip each ice cream bar into the melted chocolate allowing the coating to harden a bit before setting down on the lined baking sheets. Place dipped bars in the freezer for 30 to 60 minutes to harden chocolate completely.
    • Store bars wrapped in mini popsicle bags or in an airtight container in the freezer. Frozen ice cream bars should keep for at least 6 months. Any unused chocolate coating can be poured into molds and chilled in the refrigerator.

    Notes

    Cream mixture needs to be heated slowly to prevent cooking the egg.
    Placing the lined baking sheeting in the freezer will help keep the ice cream bars cold after dipping in the warm chocolate.

        It may not won't work because you need the fiber syrup as a sweetener and for the right texture.
