    It's surprising how much spinach you'll add to this dip. It wilts, so even if you use what you think is a lot of spinach, it isn't too much.

    For the best flavor, I recommend using fresh spinach if you can.

    Cheese

    My favorite combination of cheese to use in this spinach dip is parmesan and mozzarella. The parmesan adds a nice nutty taste, and the mozzarella creates that gooey texture.

    You'll also need some cream cheese. When you are on the keto diet, it's best to use full-fat cream cheese in this dip. Your body will use the fat for fuel!

    Butter

    The cheese is plenty salty, so you don't need to use salted butter. Unsalted butter will work best.

    Garlic

    Use whole cloves of garlic for the fullest flavor!

    Almond milk

    A bit of almond milk prevents the hot spinach dip from being too thick. You can also use a bit of heavy cream if you prefer it.

    • Chop the baby spinach in a food processor first. Before cooking, you'll want to chop your spinach. Use a food processor for this step if you have one – it will save so much time!

    • Broil at the end for a crispy top. For an extra touch, broil the dip for 1-2 minutes at the end to get a nice crispy top. Just be sure to keep an eye on it so it doesn't burn!

    Step 1: Cook the garlic and spinach

    First, melt the butter in a pan and add the minced garlic cloves. Cook for about 1 minute before adding in the spinach. Cook until wilted and season with salt and pepper.

    Add the cream cheese and almond milk in the same hot pan. Stir until fully combined and heated through.

    Pour the creamy mixture over the cooked spinach and garlic, along with the medley of shredded cheese. Stir until everything is fully combined.

    Transfer the creamy spinach mixture to a baking dish and bake at 350°F for 15-20 minutes or until bubbly and lightly golden on top.

    Tip: Make sure your oven is preheated before you add the baking dish.
