    One of the biggest things I miss since starting a low carb diet is sushi. Really good sushi with fresh fish and shrimp, rolled perfect in nori sheets and rice.

    Now, I have a way to satisfy my sushi craving without breaking my diet.

    This keto sushi recipe makes a wonderfully tasty meal if you are a seafood or shrimp lover. They are just as good as the rolls that you would get in sushi restaurants.

    Making the keto-friendly rolls is surprisingly simple. Once you get the hang of it, you might find yourself making them all of the time!

    I make these quite frequently as they are perfect for satisfying seafood or sushi cravings without having too many carbs.

    Ingredients

    This low-carb sushi rolls recipe is simple and delicious, with every ingredient creating a harmony of flavors. 

    Here’s what you need to make it:

    Cauliflower Rice

    Homemade cauliflower rice is used in place of traditional rice to make keto sushi. It’s very versatile and super low-carb.

    Cream Cheese

    The cream cheese adds a rich creaminess that pulls everything together in the rolls. It's the perfect add to cauliflower sushi rice.

    Cooked Shrimp

    The addition of cooked shrimp adds that seafood element that everyone looks for in a fresh sushi roll! It's also safer to use than pieces of raw fish. But you can use smoked salmon instead.

    Vegetables

    Cucumber adds a burst of freshness, while the avocado slices add another rich and fatty element. You will also get plenty of seafood flavor from the shrimp and sheet of nori that holds everything together.

    Dipping Sauce

    How your keto sushi rolls taste can also be changed according to the type of dipping sauce that you choose. You could make them spicy and rich with sriracha, wasabi, and spicy mayo.

    And, of course, you can’t forget the soy sauce! If you can't find gluten-free soy sauce, I recommend using liquid aminos or coconut aminos as an alternative.

    Quick tips

    • Season your cauliflower rice to get the best tasting keto sushi. This makes the nori rolls a lot more flavorful. Rice wine is the perfect seasoning for sushi.
    • Squeeze it together as you roll it. Squeezing is the secret to nice and tight roll that won’t fall apart on you. This helps all of the ingredients to become completely compact and hold together.
    • Don’t overstuff! The biggest cause of sushi that falls apart or is hard to cut and roll is overstuffing. Be careful to not overstuff the seaweed, or it won’t come together properly. Less is better than more!
    • Try salmon sushi rolls. Just replace the shrimp with smoked salmon! For safety reasons, I prefer not to use raw fish. You can also make a spicy tuna roll with cooked and shredded fish meat.

    Instructions

    It may seem like a lot of work to make keto sushi rolls, but it is really pretty simple. It just takes a little time to assemble and requires no cooking time.

    Mix The Rice

    Begin by mixing the chilled cauliflower rice with cream cheese and rice vinegar in a small bowl. Mix everything well to create a paste. You can pulse the mixture in a food processor if you want it well blended.

    Spread Paste Onto Seaweed Wrap

    Roll out your seaweed and place it on the sushi mat or bamboo roller. Spread a thin layer of your cream cheese and cauliflower rice mixture on the seaweed.

    Layer Ingredients

    At the bottom of your nori sheet, layer a line of shrimp, cucumber, and avocado. Make sure not to add too much.

    Roll Sushi

    Now that all of your ingredients have been added and layered, you can start to roll the keto sushi. Begin at one end, slowly rolling and squeezing until it has created a tube.

    Chill the roll and then slice to serve!

    ️ Serving suggestions

    Low carb sushi is a meal all on its own. It's usually just served with a little bit of soy sauce. But there are a few things you can serve with it that make it even better.

    Traditionally sushi is eaten with pickled foods such as ginger or with edamame. However, you could also eat it with a light seaweed salad with bean sprouts or a low-carb Japanese miso soup.

    Try serving it with this Japanese cucumber salad for an extra bit of refreshment in the meal.

    FAQs

    Before we get to the keto sushi rolls recipe card, here are some questions people often ask about low carb sushi rolls.

    Is sushi keto?

    Traditional sushi is, unfortunately, not keto-friendly. This is because it contains sushi rice which is a carb-heavy food, making it a no-go for a keto lifestyle. 

    Is wasabi keto?

    Even though wasabi is high in carbs, it's also very hot, so you will likely not be eating enough of it for it to matter. Its number of carbs should not really be a concern.

    Is ginger keto?

    Most types of pickled ginger that are served with sushi have been marinated in vinegar and sugar. Therefore, it's not the best option for those on a keto diet.

    You can eat the type of ginger that has just been pickled in vinegar, however, as long as it hasn't been in sugar as well.

    Is soy sauce keto?

    Because soy sauce is low in carbs, it can be enjoyed on a keto diet. But, I have found coconut aminos is a better option.

    Ingredients

    • 5 seaweed sheets
    • ½ cucumber seeded and cut into long thin strips
    • avocado thinly sliced
    • 2 cups cauliflower rice prepared and chilled
    • 3 ounces cream cheese softened
    • ½ tablespoon rice vinegar
    • ½ pound Cooked shrimp peeled and tails removed cut into pieces

    Optional Sauce:

    • 2 tablespoons mayonnaise
    • 2 teaspoons sriracha sauce

    Instructions

    • In a bowl, combine the chilled cauliflower rice, rice vinegar and cream cheese.
    • Lay a sheet of seaweed out on the bamboo mat.
    • Place a layer of the cauliflower rice mixture over the bottom ⅓ of the wrap.
    • At the bottom of the layer of cauliflower rice, place some of the avocado slices, cucumber strips and pieces of shrimp in a row.
    • Tightly roll the seaweed wrap around the filling to form a roll.
    • Chill the rolls and slice to serve.
    • Mix together the ingredients for the sauce and drizzle over the keto sushi before serving if desired.

    Notes

      Maybe a stupid question, but I'm assuming the 5 servings refer to 5 full rolls since the recipe calls for 5 seaweed wrappers. Is that correct, or does it mean 5 cut pieces from a roll? Thanks!

        While I love the filling, I do not like the seaweed wrap. Is there any way to go without the wrap or a replacement for the seaweed?

      A gluten-free alternative to soy sauce can also be tamari, keeping also the carbs lower than coconut aminos and a more similar taste to regular sushi (being always careful reading the label to be sure there aren't sugar nor other undesired ingredients); I've also found some low carb sushi recipes that use Brag's amminos instead of soy sauce, but I personally haven't experimented this way.

        Thanks for that info! Coconut aminos is a bit sweet so there's natural sugar that does add carbs. Gluten-free tamari is certainly more keto-friendly.
