    Salt And Vinegar Cucumber Chips

    Although most of our cucumber plants got destroyed last summer by a wild animal, we managed to get a few more cucumbers from the garden. A friend with a productive garden also gave us a couple more.

    With all the cucumbers lying around, I figured I better find a good use for them. So, I pulled my Excaliber dehydrator out of storage so I could preserve some.

    The dehydrator is basically just a low temperature convection oven used to slowly remove moisture from foods. It's perfect for preserving fruits and vegetables.

    I decided to make a batch of salt and vinegar baked cucumber chips with all the produce! If you don't have a dehydrator, you can bake them at a low temperature in a regular oven as well.

    Ingredients Needed To Make Homemade Cucumber Chips

    This recipe uses only whole ingredients - you probably already have all of them in your pantry.

    • Obviously, you need some cucumbers. The type of cucumbers isn't as important. Any variety of cucumber will taste delicious as a crispy chip.
    • Next, you need salt. I prefer to use sea salt since it is larger and has a bolder flavor. Any type of salt will taste amazing on the chips.
    • You also need vinegar. For this recipe, I used apple cider vinegar. Any type of vinegar is ok to use on the chips. If you use balsamic vinegar, it will stain the chips, so you try to avoid that one.
    • Finally, use some olive oil. This will help the cucumbers crisp up and become really crunchy. Extra virgin olive oil is ideal, but avocado oil is a perfect 2nd choice.

    Quick Tips:

    • I prefer using a dehydrator to make vegetable chips because they come out better. And, you don't have to worry about cooking them too long and burning.
    • However, it is a lot faster to make these baked cucumber chips in the oven. It takes only 3-4 hours compared to the 8-10 hours when using the dehydrator.
    • It's best to use a mandoline like this one to get consistently thin slices. I used an old Pampered chef mandoline slicer that isn't available anymore.
    • If you don't like vinegar, you can leave it out for plain salted chips. However, salt and vinegar were always my favorite potato chip so I wanted to have a low carb version.

    How To Make Low Carb Salt And Vinegar Cucumber Chips

    All of the detailed instructions are in the printable recipe card at the bottom of this post. You can scroll right on down to it - first, I'm going to share an overview of the recipe.

    The very first thing you need to do is slice the cucumbers really thin. Like I said earlier, a mandoline slicer is the easiest way to do it. You can also use a knife, but that takes longer.

    Then, dry the cucumbers with a paper towel.

    After they are dry, put them in a large bowl and toss them with the oil, vinegar, and salt.

    If you are using a dehydrator, place the slices on trays and dry at 125-135°F for 10-12 hours or until they are crispy.

    To bake them in the oven, place the slices on a parchment-lined baking tray. Dry the chips at 175°F for 3-4 hours or until they are crispy.

    Allow the slices to cool before serving.

    Frequently Asked Questions About Baked Cucumber Chips

    Before we get to the entire recipe in the printable recipe card, I want to answer some questions about cucumber chips that people ask.

    How long does it take to dehydrate cucumbers?

    If you use a food dehydrator, it takes about 10-12 hours for them to turn really crispy. If you use the oven, it only takes about 4 hours.

    How do you get the water out of a cucumber?

    For these chips, you just need to use a paper towel to blot them dry.

    Another way to get the water out of them is to sprinkle them with salt and then set them on a colander. The salt will dry them out and the water will drip out of them.

    How do you store cucumber chips?

    Store them just like you would potato chips! Keep them in a sealed container at room temperature. There is no need to refrigerate them.

    What do I do if I have leftover cucumbers?

    When I made this chips recipe, I still had a couple more cucumbers left. I ended up using them in a cucumber tomato salad as we are now getting a lot of fresh tomatoes from the garden.

    Cucumber water is another great way to use them! And, it's such a refreshing low carb drink for summer.

    With the success of these yummy salt and vinegar baked cucumber chips, I'm ready to venture out into making other veggie chips.

    Kale chips have been on my list of things to try for a while but so far, I have also made zucchini chips!

    The only reason I don't use my dehydrator as much as I'd like is that it's difficult with my work schedule. It's best to start early in the day and I don't have that kind of time before heading to work.

    However, I'm getting very close to an early retirement which will give me a lot more time to experiment in the kitchen.

    When the cucumber season is over, I may have to continue making these yummy salt and vinegar baked cucumber chips with store-bought produce. They are a fantastic low carb snack that's low calorie too!

    • 2 medium cucumbers or 3 small ones
    • 1 tablespoon olive oil or avocado oil

      It would be nice if you would tell us how to dehydrate in the oven using gas stove or electric stove , and whether we have to leave the oven door open or closed

        I'm not sure about a gas oven, but I've used an electric oven at the lowest setting (175°F) for about 3 to 4 hours without the door open.

      I do a similar thing using "popcorn" seasonings. May not be the lowest (but still pretty low) carb option but they are gosh darn tasty. I lay the cucumber slices on paper towel lined baking racks, blot dry, sprinkle the seasoning using a mini sieve (tea ball with a handle) for even and light distribution, put a rack on top, flip, do the other side and then into the dehydrator they go. Chili Lime, Sour Cream and Onion, and Ranch have been popular with the co-workers. I've also re-purposed Watkins Cucumber and Dill dip mix (with extra dill) as well for this technique.

      I made these today and they did not turn out crispy like the picture, I did everything right according to the recipe, I dried the cucumbers with paper towels, but it’s like I never did that, they are soggy now, and suggestions?

        As long as the temperature is low, you should be able to continue baking them to dry them out. It also helps to have very thin slices.

        You can lightly salt the sliced cucumbers and place them between paper towels to absorb excess moisture. That should help dry them faster. Also keep your slices very thin.

      I'm really excited about trying these! And, even my extremely picky husband is looking forward to trying them. I've got an electric salad shooter with two different slicing cones that I bought originally for slicing potatoes before we went keto. I think if I get the small cucumbers that are solid in the middle, I should be able to get away with shooting them through the salad shooter. It really sounds like the hardest part of this whole recipe is waiting for them to be done.

          Hi! So this recipe is a bit hard to do in the air fryer because it's at a lower temperature and for a longer period of time.

      I tried this and am really happy with the results. I can't stop eating these cucumber chips. I really left them in the dehydrator a long time, probably 13 hours and love the texture, very much like a chip. Now I will try a different flavor, I am hooked. Thank you.

      I made these a couple of days ago. I definitely need to let them sit in the coating for a bit. They taste like dried zucchini to me. Not a fan of zucchini at all. They were kind of over large cucumbers. Wondering if maybe that's why the flavor is off?

        It is best to soak longer. However, you can also sprinkle in some seasonings after they are dried as well.

          It can be anywhere between 8 to 12 hours depending on the temperature and moisture in the cucumbers.

      I am going to try making these. My question is for those who have made them following the actual recipe, once you've cooked (or dehydrated) them, is there still a strong vinegar flavor? Do you think they would benefit from soaking in the vinegar for a while before cooking? I love vinegar so I really want to taste it. LOL

      I'm new to the dehydrator. How do you keep the oil and vinegar from dripping down through the holes in the tray? My son gave me one for Christmas and I am excited to use this recipe

        You can place paper toweling under the trays. On my dehydrator, the liner lifts so I can put it between that and the tray.

        It depends on how long you bake/dehydrate them. Longer cook makes a crisper chip.

      I use my dehydrator mostly in the summer to help with the extra produce from our garden. This past summer I had tomatoes, but not enough to make sauce or salsa. I sliced and dried them for homemade “sun dried “ tomatoes. They are so good chopped up and added to casseroles. My husband has even eaten them straight out of the jar (no oil included) as a snack.
      Thanks for the cucumber chip recipe. I’m sure we’ll enjoy them in the summer when cucumbers are abundant!

      I have a big, round Pampered Chef pizza stone, can I use it to make these? If so, at what temperature, and for how long?

        Usually a stone needs more baking time as it takes a while to heat up, but the temp should be the same.

          I tried this in my air fryer at 380F for 15 mins...most of them were burnt to a crisp and the ones that were still green were soggy...I think that’s much too high of a temp for the air fryer. Will try again at a lower temp and let you know how it goes!

        A jar is preferable to a plastic bag. They should keep fine for a few days out, but I keep mine in the fridge for longer storage.

        You have to do them in small batches. It's a higher temperature (360 to 385) and you'll need to flip them halfway during the cooking time (usually about 15-25 minutes).

      I use my dehydrator several times a week. Our fur baby, Abby, has so many food allergies that it is hard to find treats, etc. that she can eat and I get so tired of reading labels. I buy beef and slice it (or buy it already sliced, for stir fry when on sale) and dehydrate it. Or I have several jerky recipes that I use to make them for my husband and his hunting buddies. I do several fruits and vegetables. If my dehydrator - that I have had for about 10-12 years - were to die I would have another one before bedtime. My favorite way to do cucumbers is olive oil and French fry seasoning or Italian seasoning. Same with summer squash.

        I keep any leftovers in the fridge as I usually make them in summer when it's humid. However, they never last long as they get eaten quickly.

      My dehydrator is used all year. Any veg/fruit getting close to its overripe stage gets sliced and dried. Cherry tomatoes, mushrooms, cabbage, kiwi ( Sour sweet candy!), Carrots, onions, blueberries, sliced potatoes and yams, green beans, shredded brussel sprouts... It all goes in the dehydrator. If a produce goes on sale, I but it and dry it.
      I even dehydrate eggs-- whisk them like making scrambled eggs, put into the fruit leather trays,
      then powder it when dry.
      I've never dried cucumber slices, but will be doing that now. That's a great idea!
      Kale, lightly sprayed with a light, flavorless oil, and sprinkled with salt and nutritional yeast is amazing!

      I tried these today. I used my mandolin and sliced them too thin! yikes! I'm trying a new batch tomorrow, a little thicker, and less salt. Still a really neat idea!! If this works I will know how to use up my summer cukes!

      these were easy. I had several mini cucumbers to use up. I added sea salt and dried dill to them. Baked them for about 3 hours. they are crunchy and good. Thanks for the recipe.

      Kyocera makes a small and larger size ceramic manodin slicer with larger preferred. for this recipe as well as cole slaw etc. After ceramic slicers and knives would not go back to metal. Cucumbers lighted sa lted for 30 minutess drains excess moisture away.

      Not at all impressed by these. I followed everything step by step. I even did the the temp the same along with the time. I tried leaving them in longer to see if they would reach that chip texture which they didn't, they remained rubbery and lack of flavor. I would just stick with the cucumbers uncooked with the vinegar and salt.

      I made these yesterday in my oven using an English cucumber. I am doing low carb and love cucumbers so this might be a great party chip for me. I was not overly impressed when I tried one yesterday and they got soft overnight. I decide to put them back on the parchment, added a light salting (I was stingy with salt originally) and baked for another hour at 175 (I can't recall if this makes it 4 or 5 hours). Oh.My.Gawd -- these are amazing! I havent had anything close to a chip in over 6 months, but these completely pass for chips in my book.

      I still have a little bowl, but have a second batch baking using a regular cucumber this time. Just based on thin-ness, I think I prefer how thin you can get the English cucumber. I can't wait to see how these turn out. Thank you for a great treat!

        It should. You'll just need to cook at low temp to remove most of the liquid. It may help to salt the eggplant first as that helps release moisture.

        I found that most of the salt and vinegar solution didn't stick to them so mine weren't that salty. But you can definitely half the salt if needed.

        It's F as you want to have the oven set at the lowest temperature. If your oven doesn't get that low, you can prop the door open a bit or just keep an eye on them.

      I didn't have parchment paper and I cut my cucumbers way to thin. Shaved. They wouldn't come off the foil. Tried again with thicker slices and turned them halfway. Worked great. Very tasty.

      For the oven...is that 175 regular setting or convection setting? Always heard convection cooks faster at lower temps or something like that. These chips look like they may be what I need on my quest for serious carb reduction.

        It's a regular oven setting so convection would be about 25 degrees lower.
