    Paleo Blueberry Cobbler Recipe (Coconut Flour)

    Paleo Blueberry Berry Cobbler Recipe

    An easy paleo blueberry cobbler recipe made with frozen or fresh berries. The topping in this low-carb blueberry dessert is made with gluten-free coconut flour.

    This week, we cleaned out our chest freezer as we were replacing it with an upright. Things always seemed to get lost in the chest freezer so I wanted to ditch it.

    I found two large bags of frozen blueberries from a berry picking trip we did a couple years ago. There was no freezer burn so I knew they were still good.

    How to make a paleo blueberry cobbler with any berry

    Blueberries are usually only good for two years so I plan to use them up over the next couple weeks. I'm hoping that things will be easier to see and use up with the upright freezer.

    I came up with a paleo berry cobbler recipe to use up some of the frozen berries. It turned out to be a delicious low carb blueberry dessert!

    Baked paleo blueberry berry cobbler

    This is a quick and easy recipe to put together. If you don't like the taste of coconut oil, I'd suggest using butter instead.

    Although I used a monk fruit erythritol blend, any low carb sweetener will work in this recipe. So, I gave the sugar equivalents for those who want to use something else.

    If you want a paleo berry cobbler, sub out the Truvia for honey. For a low carb blueberry dessert, you can use any low carb sweetener like Swerve, Pyure, stevia, or lo han guo.

    Paleo Berry Cobbler Low Carb Blueberry Dessert Recipe

    Although I used blueberries in the recipe, you can use any low carb berry. Strawberries, raspberries, blackberries, or any combination works well in this berry cobbler.

    A super easy low carb blueberry cobbler recipe. The topping is made using gluten free coconut flour. Use fresh or frozen berries in this sugar free dessert.

    Ingredients

    FILLING:

    • 4 cups blueberries fresh or frozen
    • 1 teaspoon vanilla
    • ⅛ teaspoon nutmeg
    • ½ teaspoon cinnamon
    • ⅓ cup low carb sugar substitute coconut sugar for true paleo
    • 1 teaspoon xanthan gum optional thickener

    TOPPING:

    • 4 large eggs
    • ½ cup coconut oil or butter melted
    • ¼ cup low carb sugar substitute coconut sugar for true paleo
    • 1 teaspoon vanilla optional (adds a touch of sweetness)
    • ¼ teaspoon salt
    • ½ cup coconut flour
    • ¼ teaspoon baking powder

    Instructions

    • Combine all the filling ingredients and pour in a 1 ½ quart baking dish.
    • In a medium bowl, blend together the eggs, oil or butter, sweetener, vanilla (if using), and salt.
    • Mix in coconut flour and baking powder until batter is smooth.
    • Spread batter evenly over blueberries.
    • Bake for 25-30 min at 400 degrees until top is browned.

    Notes

    Any fresh or frozen berries can be used.
    For Paleo, sub low carb sweetener with coconut sugar or honey. For low carb, I like to use a monk fruit erythritol blend.

        With coconut flour, you may need to make small adjustments as the absorbency of it can vary.

      I love this recipe. I have made it 4 times, with different berries. It has been delicious every time. Our favorite is a bag of frozen blueberries and one bag of mixed berries. We have been doing the paleo diet for more than a year, and this is my favorite dessert I have tried. Thanks for the recipe.

        I don't see why not. Sweeteners are generally by preference so I encourage others to use the sweeteners they like best.

        I'd just leave it out. You could try another low carb thickener like glucomannan or add just a small amount of arrowroot powder.
