    There are several recipes for a homemade Almond Joy Candy Bars that I've found on the internet. A couple are low carb versions.

    I've had my eyes on these for quite some time. As always, I like to tweak things in the recipes I find to make it my own. I used a can of Nestle Table Cream which is pretty easy to find in a Walmart store in the Hispanic food section.

    This is my version of the famous coconut with almond candy bars that is better known as a Almond Joy or Bounty bars. Most regular sugar recipes use sweetened condensed milk and I'm sure this makes for a chewy bar.

    I'm not sure how this chewy coconut center can be done without real sugar. However, the unsweetened coconut does hold together well with table cream and liquid sucralose or SweetLeaf stevia drops.

    Although I didn't try making these low carb candy bars with a erythritol and stevia blend, I'm sure the cream will still hold the coconut center together. A sweetener containing fiber like LC Foods - Inulin or Swerve may be a better choice.

    There's also the fiber syrups like VitaFiber IMO syrup that are marketed to the low carb community. However, you need to use caution with those as some notice blood sugar spikes after consuming them. Find out more here.

    I may try using only a tablespoon or so of the IMO syrup along with heavy cream rather than the table cream. I'm trying to eliminate processed foods and the canned cream does contain questionable ingredients.

    The hardest part to making these low carb candy bars is staying away from them once they are finished and stored in the refrigerator. I had to hide them in the back so I don't see them every time I open the fridge.

    If you love coconut as much as I do and miss eating Almond Joy candy bars, this is a recipe that is well worth your time.

    Low Carb Almond Joy Candy Bar

    A chocolate coated sweet coconut candy bar that I call my low carb Almond Joy candy bar. It truly will have you jumping for joy when you take a bite.

    Ingredients

    FILLING:

    • 7.6 ounces Nestle table cream or heavy cream
    • 1 cup low carb sugar substitute I used about 1 teaspoon SweetLeaf stevia drops
    • 1 tablespoon vanilla extract
    • 2 ½ cups unsweetened shredded coconut
    • 50 unsalted roasted almonds leave these out to make Mounds candy bars

    Chocolate Coating:

    • 8 ounces unsweetened baking chocolate I prefer Ghirardelli unsweetened baking chocolate
    • 2 ounces cocoa butter
    • 6 Tablespoons low carb sugar substitute or other sugar substitute
    • ¼ teaspoon stevia concentrated powder
    • 1 teaspoon vanilla extract
    US Customary - Metric

    Instructions

    • In a large bowl, stir together table cream, sweetener, and vanilla extract. Mix in the unsweetened coconut.
    • Using about one tablespoon of coconut mixture each, form into a log and set onto a parchment paper or silicon mat lined baking sheet.
    • Place two almonds on each log (or omit nuts if making Mounds bars).
    • Put baking sheet of logs into freezer while making chocolate coating.
    • In a chocolate melter or double boiler, melt all chocolate coating ingredients together.
    • Remove the coconut logs from the freezer.
    • Place each coconut almond log on a fork and dip bottom into melted chocolate. Then use a spoon to drizzle chocolate over top and sides until log is completely covered in chocolate.
    • Wipe excess chocolate off bottom of fork on side of melter and then set on non-stick sheet to harden.
    • Repeat steps until each log is covered in chocolate.
    • Place finished sheets of candy in refrigerator.
    • Let sit at least an hour then remove and place in covered container. Store in refrigerator.

It seems soupy, I don't think the chocolate would stick to a soggy mess..?????????????????????? Please help, any ideas how I can fix it? Thank you.☃️????????????

        If using heavy cream vs the canned cream, it should be whipped first and it does help to add in a little gelatin to stabilize. Xanthan gum may work too.

      I don't understand why, for the choc coating, the recipe says. "6 Tablespoons low carb sweetener or other sugar substitute" and,
      "1/4 teaspoon stevia concentrated powder". I use a low carb sweetener that measures like sugar. Why do I need both of these sweeteners in one recipe?

        You can use the liquid drops (you'll need twice as much) or try using 3-4 tablespoons of a powdered sweetener. If you use the powdered sweetener, it's best if it's one that's fine like a confectioner sugar.

      Smaller so that each bite got an almond. Slightly higher carbs, but yum!

          It's 3 tablespoons cocoa powder plus 1 tablespoon butter, shortening or oil for every ounce of unsweetened chocolate.

        Coconut butter works better than butter. If you use butter, it will need to be refrigerated or frozen.

        One cup sugar equivalent stevia drops is 1 teaspoon. I'm not saying to use 1 cup, I'm saying to use one cup sugar equivalent which is 1 teaspoon.

        I find it in the Mexican/Hispanic Food section of Walmart which is much cheaper. You could try whipped cream or stabilized whipped cream.
