    Introduction

    The first time you bite into this cake, you'll know you just found your favorite low carb chocolate dessert. It's so rich that you won't believe it fits in your keto diet!

    With only 5 grams of net carbs per cake, you can afford to treat yourself to this without any guilt.

    Ingredient Tips and Substitutions

    The entire recipe is at the bottom of this post. First, I want to share a few tips about these ingredients, including any substitutions you can make.

    This recipe has all the basic keto-baking ingredients like vanilla extract and baking powder.

    I used powdered sweetener to get the perfect texture in the cake. Use a powdered sweetener, don't try to use a granular or liquid one instead, it won't turn out the same.

    I also used almond flour. I recommend using almond flour, not almond meal. Almond meal has bits of the almond skin in it and it will make the cake taste grainy.

    You can use salted butter instead of unsalted. If you do this, just cut back on how much salt you use in the recipe.

    Quick Tips

    You can cook these even quicker if you use the microwave. Be careful when you do this so that you don't overcook the center of the cakes.

    Garnish the cakes with sugar-free whipped cream. You can also add a few raspberries on top. If you add a side of fruit, be careful that you aren't adding too many carbs to it.

    How To Make Keto Molten Lava Cake

    This has to be one of the easiest dessert recipes on my site. All you do is mix all the ingredients together in a mixing bowl until it's creamy.

    Then, pour the batter into ramekins. Bake them until the outside is firm but there is still a little jiggle in the middle.

    You can certainly eat them right out of the ramekins! I know it's going to be tough to wait for them to cool down. That aroma is going to fill your kitchen and make you drool.

    If you wait, then you can put the small cake onto a plate and then dust it with some substitute confectioner's sugar.

    This is a beautiful way to present and enjoy this dessert! When it sits on the plate, you can see the melted chocolate pour out of the cake like a volcano.

    What To Serve With Keto Chocolate Cake

    This has such a rich flavor that you might not have much room for anything else. It is such a beautiful dessert to serve after dinner with a hot cup of coffee or tea.

    You can also serve a scoop of homemade almond milk ice cream on the side. Use the gooey chocolate as a topping for your ice cream, it's delicious!

    If ice cream is too rich, you can also serve this with a lighter option such as low-carb pumpkin mousse. It's light and airy and will pair perfectly with the cake.

    Frequently Asked Questions About Molten Lava Cake

    Before we get to the recipe, I want to answer some questions about it first.

    How Many Carbs Are In This Keto Molten Lava Cake Recipe?

    There are only 5 grams of net carbs in each chocolate cake. This amount will change if you add anything to it or make your cakes larger or smaller than mine.

    I figured out the net carbs by taking the total amount of carbs and subtracting the amount of fiber.

    Can you substitute coconut flour for almond flour?

    No, you cannot substitute coconut flour for almond flour without having to change the recipe significantly. Coconut flour absorbs a lot more liquid, so you'll have to add more wet ingredients to this cake to keep it from being too dry.

    Are Molten Lava Cakes Safe To Eat?

    Yes, they are completely safe to eat. I know this sounds like such a strange question, but it's been asked pretty frequently because you aren't baking the cake completely through.

    Eggs only need to be cooked to at least 160 degrees to be safe to eat. This is baked at 350 degrees for 15 minutes, which is plenty long enough to make the cake safe to eat.

    Can I Freeze Molten Lava Cake?

    Yes, you can freeze these molten lava cakes. Let them cool completely and then wrap them up individually in plastic wrap before you put them in a freezer-safe bag or container.

    When you are ready to enjoy one, let it set in the refrigerator overnight to thaw out. Then, heat it in the microwave until it is just heated through - about a minute or so.

    These cakes will stay fresh in the freezer for up to 3 months.

    • 1 tablespoon Almond flour
    • 2 tablespoon Unsalted Butter melted
    • 2 large eggs at room temperature
    • ¼ cup Unsweetened cocoa powder
    • 3 tablespoon Swerve confectioners sugar substitute

    Instructions

    Notes

    You can cook the cakes individually in the microwave, but you'll need to be careful not to overcook the centers.
    If overcooked, the center won't be molten so be sure to check every few minutes so the cakes can be removed from the oven before the centers are set.

      Hi Lisa.

      I’m extremely allergic to all forms of anything ALMONDS, anything COCONUT and anything AVOCADOS (ie: flours, milks, oils, sprays). My nutritionist wants me to use Fairlife Milk for cooking because it has such low carbs.
      Do you have any suggestions for substitutions in recipes for flour, spray release like Pam and oils?

        You could try sunflower seed flour as it's a one-for-one sub for almond flour. Oat fiber is a good sub for coconut flour but it's not a one-for-one. As for oil, you should be able to use a seed based oil even though they aren't recommended for keto.

      This was just ok. What brand did you use for the Cocoa powder. I used Hershey and my husband said It tastes like cheap baker’s chocolate. How can I get this to tastes more rich. Maybe it was the brand I used. I might try the chocolate cup recipe.

        Sorry about that! You do need to be careful not to overcook and keto desserts tend to be on the less sweet side. You can always add in a few drops of liquid sweetener if needed. I don't recommend adding more erythritol based granular sweetener as it can crystallize if too much is added.

      Would like to make for my Valentine Sunday. Can I make ahead of time? Is it OK to sit at room temp for a few hours, wondering if the chocolate will set up.

        It's best to make this just before serving. If making ahead, I'd recommend taking out of the oven early so you can place in a warm oven before serving and not cook the center. Preparing the batter ahead may also work.

        Wide mug is fine. However, the cake will cook fast on high power so you may want to try reducing the power setting on the microwave so you don't overcook.

          The molten part results from uncooked batter inside the cake. You could fully cook the cake then fill it with a filling using a pastry bag.

        It does impact baking time. I use two 6-ounce ramekins. If you use another size, it will impact baking time.

        I used 6-ounce ramekins. For the microwave, you need to be very careful not to overcook. I'd recommend cooking on 60% power and checking every 30 seconds or so.
