    I recreated the classic coffee shop coffee cake and made it gluten-free and low-carb. You'll love everything about this sweet cake - it's showstopping.

    You don't have to be an experienced baker to be able to create a lovely coffee cake. Just layer the ingredients together, and it bakes gorgeously. It's effortless!

    You'll also love how it looks and tastes, just like a coffee shop cake! Slice it, and you won't be able to tell the difference between this and a traditional coffee cake.

    This coffee cake amazingly melts in your mouth. The sugary crumbs fall over your tongue, and the almond flour cake is delightfully spongy and has the perfect balance of sweetness and strong cinnamon spice.

    Ingredients

    This keto cinnamon coffee cake is made from whole ingredients, completely from scratch. Here's a bit more information about what I used to make this low-carb coffee cake.

    I've split the ingredients into two parts for this coffee cake recipe - the batter and the crumb topping.

    Coffee cake batter

    I used an almond flour mixture to make this soft coffee cake.

    Almond flour

    Use finely ground almond flour instead of almond meal.

    Almond meal contains bits of almond skins and will make the coffee cake grainy. Almond flour has a finer texture that resembles wheat flour the best.

    Baking powder

    The baking powder is what gives the coffee cake a spongy texture.

    Powdered sweetener

    To keep the cake light and airy, use a confectioner's sugar substitute.

    Eggs

    Eggs are an emulsifier and hold all the ingredients together.

    Vanilla extract

    Add some vanilla extract to give the coffee cake a richer and deeper flavor.

    Greek yogurt

    Plain Greek yogurt gives the coffee cake more protein and balances out the sweet flavors in the cake.

    Butter

    Use unsalted butter to balance out the amount of salt you use in this recipe.

    A delicious brown sugar substitute will caramelize beautifully as the cake bakes.

    Just like the batter, you need to use almond flour, not almond meal, in the crumb topping.

    Ground cinnamon

    Cinnamon is a classic flavor in coffee cake.

    Butter

    Make sure the butter is cold so you can cut it up into pieces and use it on the topping.

    Tips

    • Don't overmix the crumb topping. Since it needs to stay crumbly, use a fork to cut the butter into the other ingredients.
    • Layer it. The crumb topping in the middle of the coffee cake will enhance the overall look and taste of the cake.
    • Use a toothpick. Bake the coffee cake until you insert a toothpick into the middle, and it comes out clean.

    It's easier than you might think to make sugar-free coffee cake. Just mix the ingredients, layer them, and bake them! Here's a bit more information about how I made it.

    Mix the batter

    Grab a large mixing bowl and place all the batter ingredients into it at the same time. Beat it all together until they are completely blended.

    Mix the crumb topping

    Mix all the crumb topping ingredients together in a separate bowl. Don't overmix it, and keep the butter cold.

    Pour batter into the pan

    Place half of the keto coffee cake batter into your prepared baking pan. Keep half of it in your mixing bowl because you will create layers.

    Add some crumb topping

    Sprinkle a bit of the crumb topping onto the keto coffee cake batter.

    Layer more cake batter on top of the crumb mixture and then top with more cinnamon sugar last.

    Bake the coffee cake

    Finally, bake the coffee cake until it is golden brown and an inserted toothpick comes out clean.

    • Make mini coffee cakes. Instead of a large cake pan, use mini loaf pans.
    • Add nuts. Sprinkle chopped walnuts into the crumb mixture. This adds more texture and protein.

    Ingredients

    Cake:

    • 3 cups almond flour
    • 2 teaspoons baking powder
    • ½ cup powdered sweetener
    • 3 large eggs
    • 1 ½ teaspoons vanilla extract
    • ⅓ cup plain Greek yogurt
    • 8 tablespoons butter melted

    Topping:

    • ¼ cup brown sugar substitute
    • ½ cup almond flour
    • 1 ½ teaspoons ground cinnamon
    • 4 tablespoons cold butter cut into pieces

    Instructions

    • Preheat the oven to 350 degrees.
    • Add the ingredients for the cake to a mixing bowl, and beat until well blended.
    • Place the ingredients for the topping into a mixing bowl, and use the tines of a fork to cut the butter into the other ingredients, and form a crumb topping.
    • Layer half of the batter for the cake into the bottom of a well greased loaf pan. Top the batter with ½ of the crumb topping.
    • Add the remaining batter to the loaf pan, and top with the remaining topping. Bake for 50 minutes, or until cooked through.
