    Sometimes, I don't want something that is filling or hearty. I might just want a light snack... preferably something sweet.

    Being on the keto diet doesn't mean I've lost my sweet tooth. I still crave desserts and sweet snacks!

    The difference is that instead of grabbing the nearest processed junk food or sweet treat, I make it myself at home. Making so many keto dessert recipes at home, I have learned how to take shortcuts and not spend hours in the kitchen.

    This sugar-free white chocolate pudding is the culmination of all of these skills!

    It is low in carbs, uses keto-friendly ingredients, and only takes minutes to make. Keep reading and discover just how game-changing this recipe is.

    Ingredients Needed For White Chocolate Pudding

    This pudding is completely homemade and the ingredients are affordable and easy to find. Here's a bit more information about what you'll need.

    White Chocolate

    The main ingredient and flavor in this pudding is sugar-free white chocolate. While it might seem impossible to find white chocolate with zero sugar, I was able to find some white chocolate chips from ChocZero that worked perfectly for this recipe!

    They have an authentic white chocolate flavor without any aftertaste.

    Sweetener

    Since this a pudding, you will need to use a powdered sweetener. This will dissolve better in the pudding and give it the creamy texture that we all love.

    Xanthan Gum

    Don't forget the xanthan gum! This ingredient is essential for the thick texture. Without the xanthan gum, the pudding will be a lot thinner and not very pudding-like.

    Cream

    For that creamy taste, use either heavy whipping cream or just whipping cream. I recommend the heavy whipping cream because it's thicker and whips up better.

    That's normally what I use when I make this white chocolate pudding!

    Almond Milk

    On the keto diet, try to use unsweetened vanilla almond milk. It has more flavor without the added sugars. If you don't like almond milk, you can use coconut milk instead.

    Egg

    You only need egg yolks for this recipe. Don't worry, you will be boiling the mixture after you add the yolks.

    Vanilla

    Finally, buy real vanilla extract! Imitation vanilla can work in a pinch but won't have nearly the same amount of flavor as the real stuff.

    Quick Tips:

    • Use different flavors or extracts. Replace the vanilla extract with your favorite extract to give the white chocolate pudding a different taste. Try it with raspberry, orange, or rum!
    • Substitute konjac powder for xanthan gum. You can also use guar gum instead of xanthan gum.
    • Serve it warm or chilled. It tastes divine both ways!

    How To Make Keto White Chocolate Pudding

    The entire recipe is in the printable recipe card at the bottom of the post. First, I have some step-by-step photos and additional information that I hope helps you out.

    Simmer The Milk Mixture

    The very first step is to mix the sweetener, xanthan gum, salt, cream and almond milk in a small sauce pan.

    Keep simmering it on low heat and whisk the mixture really well until it thickens.

    After it is thicker, remove it from the heat.

    Add Egg Yolks

    Beat the egg yolks in a small bowl and then stir a little bit of the hot milk mixture into the egg yolks. Mix them together really well.

    Next, add this yolk mixture back to the saucepan with the rest of the milk and cream. Then, bring it to a gentle boil and stir it constantly so it doesn't burn.

    Mix In The White Chocolate Chips

    After it boils for about 3 minutes, remove it from the heat again. Add the white chocolate chips and vanilla extract.

    This will cause the white chocolate chips to melt. Keep stirring it until they are completely melted. It is ready to eat!

    What To Serve With Low-Carb Pudding

    Whenever I serve this pudding, I like to serve it with some keto whipped cream and some sort of berry. I also like to add a scoop of raspberry jam!

    How do you store keto pudding?

    The best way to store this white chocolate pudding is in an airtight container in the refrigerator. It will stay fresh for up to 3 days.

    What are keto-friendly toppings for pudding?

    For this recipe, I added some whipped cream and raspberry for garnish, but you can top with your favorite fruit.

    If you want to add some crunch, you can top with some chopped nuts or crumbled shortbread cookies. Another option - drizzle some sugar-free caramel or chocolate sauce on top!

    Which brand of sugar-free white chocolate chips is best?

    I've tried a few different kinds of chocolate chip brands but my all-time favorite is ChocZero! All of their products are sugar-free and carb-free, making them perfect to use in any keto dessert.

    I also used ChocZero chocolate chips to make my keto chocolate donuts!

    Can you freeze white chocolate pudding?

    Yes, you can freeze pudding easily!

    Just put it in a freezer-safe container with a lid. When you are ready to eat it again, let it thaw overnight in the refrigerator.

    Are pudding and mousse the same thing?

    No, they are not the same thing, but they are very similar. Mousse is lighter and fluffier than pudding. The biggest difference is that my pudding is made from egg yolks, but mousse is usually made from egg whites.

    If you really like mousse, then you should try my keto mousse. It is decadent!

    Ingredients

    • ¼ cup powdered erythritol
    • 1 teaspoon xanthan gum increase slightly for thicker pudding
    • 1 pinch salt
    • ½ teaspoon vanilla extract
    • 1 cup heavy whipping cream
    • 1 cup almond milk
    • 3 large egg yolks
    • ⅓ cup ChocZero White Chocolate Chips

    Instructions

    • In small saucepan, mix together the erythritol, xanthan gum, and salt. Slowly add the cream and almond milk. Bring to a simmer over medium-high heat, stirring constantly. Reduce heat to medium-low. Cook and whisk a few minutes more or until mixture is thickened.
    • Remove from heat. Place egg yolks in a small bowl and beat slightly. Stir ¾ cup hot mixture into the egg yolks. Add the warmed egg yolk mixture to the hot mixture in the pan gradually. Bring to a gentle boil, stirring constantly. Cook and stir for 2-3 more minutes.
    • Remove from heat. Stir in white chocolate chips until melted. Add vanilla extract and stir in. Can be served warm or chilled. Keep leftovers stored in the refrigerator.

    Notes

    The vanilla extract can be changed with a flavor extract like raspberry, orange, or rum for a change of taste.
    If you don't like using xanthan gum, you can use a xanthan gum substitute like konjac powder (glucomannon) or guar gum.

        It may not have many carbs per serving, but some of the ingredients aren't keto-friendly like corn syrup.
