    There are just a few simple ingredients in this almond flour cake recipe. Here's a bit more information about what I used to make it.

    Almond Flour

    Do not use almond meal, as almond flour is finer and they cannot be substituted in this recipe. Almond meal is ground almonds, skins, and all. The keto almond cake will have a grainy or gritty texture if you use almond meal.

    Always bake with almond flour instead when following keto cake recipes!

    Eggs

    You need plenty of eggs whenever you make almond flour cake recipes because they are an emulsifier. They basically hold everything together.

    Butter

    I use melted butter to give this almond flour cake a texture that literally melts in your mouth. It's best to use unsalted butter if you can.

    Baking Powder

    Baking powder interacts with all the other ingredients to make the almond cake extra springy.

    Powdered Sweetener

    Use a powdered sugar substitute. Liquid or granular sweeteners won't work as well in this almond flour cake!

    Vanilla Extract

    You'll also need a little bit of vanilla to add the flavorful undertones to this almond flour cake.

    • Always preheat the oven. If you don't, the cake will not bake evenly.
    • Use a toothpick to test if it is done. If the toothpick comes out of the middle of the cake and is clean, the cake is finished baking.
    • Add your favorite toppings. This is a basic almond flour cake with lots of room for customizing.

    1. Make the Batter

    Add all the keto almond cake ingredients to a large mixing bowl. Beat on high with an electric mixer until it is well combined.

    Pour the cake batter into the prepared 9x13 inch cake pan. Bake it for about 25 minutes or until it is completely baked through.

    3. Cool & Serve

    Let it cool completely, and then dust with a bit more powdered sugar substitute on top.

    You can use coconut oil instead of butter if you need to and use almond extract instead of vanilla extract.

    Top your warm cake with fresh berries and keto whipped cream. This is a fun way to make the perfect gluten-free cake for outdoor cookouts.

    Another fun idea is to add cocoa powder to the batter, and you'll have chocolate cake!

    Yes, this almond flour cake is freezer-friendly. After you bake it, let it cool off completely. Then, take it out of the pan, wrap it up tightly in plastic wrap, and store it in a plastic freezer-safe food storage bag.

    Almond flour cake will stay fresh in the freezer for up to six months.

    Can you use coconut flour instead of almond flour?

    No, you cannot use coconut flour instead of almond flour in this almond cake recipe. If you try, it will alter the amount of moisture in the cake, and it won't turn out very well.

    Is coconut sugar keto-friendly?

    Even though coconut flour is keto, coconut sugar is not. That is why I used powdered sweetener in this almond cake instead of coconut sugar. There are just 3 grams of net carbs in each serving of my almond cake!

    Can you use baking soda instead of baking powder?

    No, you cannot use baking soda instead of baking powder in this almond cake recipe. If you try, it will alter the chemical reactions, and it won't have the same consistency.

      How much cocoa (and added sweetener to counteract the bitterness of the cocoa) would you suggest to make this a chocolate cake?

        It's hard to say without testing a chocolate cake recipe. I would try using 1/4 cup cocoa for 1/4 cup of almond flour and see how that does without adding more sweetener. It usually takes a couple experiments so I will generally half or 1/4th the recipe for testing.

      The numbers on this are pretty accurate except for carbs. I plugged ingredients and number of servings into my app and it says TEN carbs.

        The data doesn't include erythritol carbs which are non-impacting. That's usually the issue.
