    Now that my youngest has started going to school for full day kindergarten, I'm finding myself much busier in the mornings before work. Not only do I have to get my lunch ready for work, I have to pack a lunch and snack for her to take to school as well.

    I usually try to cook bulk dinners over the weekend so I have leftovers to bring to work. But, between end of summer picnics, fall sports, and school projects, I haven't had the time.

    For a change of pace, I stocked up on some McKenzie turkey slices to pack quick and easy lunches for me and my daughter. I make low carb lettuce wraps for myself and prepare turkey cheese rolls for the school lunch.

    Although I could buy the lower priced store brand of deli turkey, I chose the McKenzie brand because it's much higher quality. And, there's never any added growth hormones or antibiotics used in their products.

    We think the meat tastes a lot better too. While shopping at the deli, we decided to compare McKenzie smoked turkey breast to the store brand.

    My daughter and I both liked the McKenzie one best. It has a nice smokey flavor and the meat is so tender it tends to separate more than the store brand.

    I was actually surprised how much my daughter liked the turkey breast. She's super picky, but ate the entire slice without one complaint.

    It was a huge win to find a deli meat that she likes so I can pack a quick healthy lunch for her. And, I was happy to find a delicious deli meat to prepare quick low carb lettuce wraps for my work lunch.

    How to make low carb lettuce wraps

    Making my daughter's lunch for school is a snap. I just place the meat over a slice of cheese and roll it up. It fits perfectly in a reusable zipper snack bag.

    Although it's not required, I like to make my low carb lettuce wraps using parchment paper. It helps to keep the sandwich together and makes it easier to eat.

    For my turkey wrap, I like to include strips of cucumber and roasted peppers. If you don't care for the peppers, tomato could be used instead.

    You can add your favorite condiment for a little added flavor. I've been staying away from mayo because of an egg white sensitivity so I squirt on a little spicy mustard.

    There are endless variations of low carb lettuce wraps that you can make. Just change up the meat, cheese, and veggies so you aren't eating the same thing all the time.

    McKenzie deli meats come in a wide variety including Buffalo Style Chicken, Rotisserie Seasoned Chicken, Rotisserie Seasoned Turkey, Uncured Rosemary Herb Ham, Hickory Smoked Turkey, and Herb Roasted Turkey. They do offer Honey Ham and Maple Honey Ham, too, but I avoid those due to the added sugar.

    Where to Find McKenzie Deli Meats

    McKenzie deli meats are available at Big Y and Dave's Marketplace. I purchase mine at a local Big Y only fifteen minutes away.

    Low carb lettuce wraps are a great option when you don't have the time to make your own bread. Or, you can simply layer your meat and veggies between two slices of cheese.

    If you prefer sandwiches made with low carb bread, it's best to use homemade bread. Those lowest in carbs are pork rind keto bread, cloud bread, and Soul bread.

    • 1 large lettuce leaf
    • 1 slice provolone cheese or preferred cheese
    • 3 slices Smoked Turkey
    • ¼ small cucumber sliced in thin strips
    • 3 pieces roasted pepper
    • mustard or mayonnaise
    • parchment paper or toothpick optional

    Instructions

    • Lay parchment paper down if using. Top lettuce leaf with cheese, turkey, cucumber, roasted pepper, and cucumber.
    • Wrap lettuce leaf around filling and securely wrap with parchment paper to hold it together. If not using the paper, a toothpick can be used instead.

      If you have an egg whites sensitivity, make your mayonnaise with your stick blender in the normal way but just using two egg yolks.

      You can also make a vegan mayonnaise which is absolutely fabulous using the water from bottled or canned chickpeas. it is called aquafava ...There are a lot of recipes out there that do not include egg white – no one should go without mayo! x

      Hi Lisa, I started making these with iceberg lettuce too, like Jimmy John's unwich, but much less expensive. Trick with iceberg is to core lettuce then run under water while removing each layer. Keeps the pieces whole. Thanks, great site.
