    With only 3 ingredients, these keto pancake mix donuts bake up quickly. Enjoy them plain for breakfast or top them with a low-carb chocolate glaze and sprinkles for a special treat.

    The Best Keto Donuts

    I'm always looking for simple recipes that can be made fast. That's why I created a couple mixes to make preparing my low-carb meals even easier.

    One of the most popular posts on this site is my coconut flour pancakes recipe. To make things even easier, I created a mix so you only need to add unsalted butter, heavy cream, and water to get perfect pancakes every time!

    But you can make a lot more than pancakes with the mix. So I've been doing some testing with it in in the kitchen.

    My first experiment was to create some easy and delicious donuts. The best part of this recipe is that you only need to add two ingredients to make the batter!

    Ingredients for Pancake Mix Donuts

    The donut batter is made with just three ingredients: keto pancake mix, unsalted butter, and almond milk. You'll find the mix in my online shop.

    Because the donuts aren't very sweet, I top them off with a dark chocolate glaze and keto-friendly sprinkles. The glaze is just a blend of black cocoa powder, powdered sweetener, vanilla extract, and water.

    If you don't care for the cocoa based glaze, you can leave the cocoa powder out and reduce the water. This will create a simple vanilla glaze instead.

    Another option is to just dust the baked donuts with powdered sweetener or a blend of granulated sweetener and cinnamon.

    How to Make Keto Donuts with Pancake Mix

    These are so easy to make that even a kid can do it. That's why I usually have my youngest daughter help with the preparation.

    All the steps are shown in the photos below. For more details, refer to the printable recipe further down.

    Prepare the Batter and Bake

    The first step is to combine the pancake mix with the melted unsalted butter and almond milk. I like to just whisk them together in a medium bowl.

    The batter should become fairly thick as the coconut flour absorbs the liquid.

    The next step is to transfer the batter into eight medium-sized donut molds. A silicone baking pan always gives me the best results.

    Although you can use a small spoon to spread the batter into each mold, a piping bag works much better. Just add the mix into the bag and squeeze it into each mold. Then bake for 15 to 20 minutes.

    If you don't have a piping bag, simply use a large zipper bag and cut a small hole in one corner.

    Topping The Baked Low-Carb Donuts

    After baking the donuts, allow them to cool completely on a cooling rack before adding the glaze.

    To make the glaze you'll combine confectioners sweetener with dark cocoa powder, water, and vanilla extract.

    Dip the top of each cooled donut into the glaze. Then place back on the rack and sprinkle on the keto-friendly sprinkles.

    Quick Tips for Perfect Donuts

    • Use a greased silicone pan. This will ensure the donuts release easily after baking.
    • Pipe the batter into each mold. Squeezing the batter into the circular molds is much faster and easier than using a spoon.
    • Dip the donuts into the glaze. Dipping provides an even coating of glaze. It's also easier and faster than drizzling it on.
    • Add sprinkles immediately after adding glaze. The glaze will begin to harden in a few minutes so add the sprinkles right away so they stick.
    • Dust donuts while still warm. If you want add a coating of powdered sweetener or sweetened cinnamon, it will cling best to warm donuts.

    Frequently Asked Questions About Pancake Mix Donuts

    Before getting to the recipe, take a look at some questions that others have asked.

    Where can I buy keto pancake mix?

    The recipe was created using the Low Carb Yum Keto Pancake Mix which is sold exclusively at Global Belly. This mix is great for making coconut flour muffins too.

    Can I use regular cocoa powder?

    Absolutely! Any unsweetened cocoa powder works in the recipe. However, you'll want to use black to get the dark chocolate color.

    Is it okay to use regular salted butter?

    There is already salt included in the pancake mix so it's recommended to use unsalted butter for the best taste. However, you can use coconut oil or lard instead. Using regular salted butter will result in less sweet donuts with a slightly salty taste.

    How should I store the donuts?

    The donuts are fine to leave out for a couple days at room temperature. If it's humid, I recommend keeping them in the refrigerator where they will last up to a couple weeks. For longer storage, they can be frozen for up to 3 months and thawed in the refrigerator.

    DONUT:

    • 1 ¼ cup Low Carb Yum Keto Pancake Mix
    • ⅓ cup unsalted butter melted (or melted coconut oil)
    • 1 cup almond milk

    GLAZE:

    • ⅓ cup Swerve Confectioners Powdered Sweetener
    • 1 tablespoon black cocoa powder
    • 2 tablespoons water
    • ¼ teaspoon vanilla extract
    • Keto-friendly sprinkles optional

    Instructions

    • Preheat oven to 350*F. Grease silicone donut pan.

    Donuts:

    • Mix together pancake mix, butter, and almond milk. Divide evenly between 8 donut prepared molds.
    • Bake for 15 to 20 minutes or until toothpick inserted in center comes out clean. Allow to cool in pan for 5 to 10 minute then remove donuts from molds and allow to cool completely on wire rack.

    Chocolate glaze:

    • Combine all glaze ingredients in small bowl.
    • Dip each donut in the glaze or drizzle on. Sprinkle with keto friendly sprinkles.

    Notes

    For best results, use the weight measurement (130 grams) instead of cups for the pancake mix.

    The black cocoa powder gives a dark rich color to the glaze. But any type of unsweetened cocoa powder can be used. You can also leave it out for a vanilla glaze.
    The donuts are fine to leave out for up to 2 days at room temperature. If it's humid, it's best to store them in the refrigerator where they will last up to a couple weeks. For longer storage, they can be frozen for up to 3 months and thawed in the refrigerator.

        The recipe was developed specifically for the Low Carb Yum coconut flour based pancake mix. That is why it did not work for you. You'd have to follow the directions on the specific mix you are using (if you don't have the Low Carb Yum mix) and may need to make a few slight adjustments depending on the consistency of the batter.

      My question could sound silly -apologize if so, I'm quite new to glazed things....-, but I'm not sure to have understood right: you do not specify if for making the glaze the cacao powder has to been mixed in hot or cold water, from wht it's written it seems you just put every ingredient of the glaze togheter and mix, room temperature... is it simply all you have to do? Thank you if you'll explain it more clearly to an ignorant like me 😉

        I just use water right from the fridge tap so it's actually more on the cooler side. You shouldn't need warm water to dissolve the sweetener as it's powdered.
