Over the next month, I am scheduled to work long 12 hour days for six days a week. That doesn’t give me a lot of time, especially with a very active 22 month old toddler waiting for me at home.

Thank goodness my older daughter is usually home in the evenings when her after school activities are done to help me out. But, I really could use a little help with dinner during these busy work days.

Last week, on my one day off, I set aside a little time in the evening to cook up some pre-made meals for the upcoming week. I had some baby spinach left over from the pumpkin lasagna that I had made so I needed to come up with something to use that up.

What I ended up creating is an easy one pot chicken spinach tomato dish that takes little time to prepare. And, I love that cleanup is pretty easy too.

How to make an easy chicken spinach tomato recipe

I used chicken because I had some boneless breasts partially thawed in the refrigerator. There was also a can of diced tomato in my pantry and some fresh mushrooms  in my refrigerator.

Since I had canned mushrooms in the pantry closet, I could have used those as well. With working long hours, the last thing I wanted to do was head to the grocery store.

Since the chicken was still a bit frozen, I cut it up so it would cook up faster. Then I added the tomato, spinach and mushrooms and cooked until the liquid was reduced a good amount.

This chicken spinach tomato dish turned out to be pretty tasty. I think if it were a planned meal, I would have served it on some cauliflower rice.

Although the dish can be served plain, I chose to sprinkle some grated parmesan cheese on top. I'm such a cheeseaholic that I tend to add cheese to just about everything I eat.

But, the parmesan really does up the flavor. I used the canned kind, but I like the shredded cheese better. I just didn't have any on hand in the refrigerator.

I'll be keeping this easy chicken spinach tomato recipe handy so I can cook it again. It's so simple that I'm going to be adding it to my regular meal rotation.

Next time, I'm going to experiment with adding in some herbs and spices. This was just a quick fix dinner on a busy night. When I have more time, I'd like to spice it up a bit.

I hope you give this chicken dish a try. It's one of the easiest low carb chicken recipes you'll find on the internet. My family really enjoyed it and I'm sure yours will too.

My kids even ate the spinach. But, my husband isn't a fan of the vegetable so he just grabbed the chicken. You can't always please them all.

Do you have a favorite keto chicken recipe that's a go to for busy night? I'd love to hear about your favorite quick fix meal in the comments.

I have not made this but I have a surplus of cherry tomatoes from my vines and think I could use these here. I roast chicken and keep in freezer for quick meals and thought I could use here. I figure I should be able to cook sauté mushrooms, garlic and add tomatoes Then add diced roasted chicken and serve with cauliflower rice. I may still have basil so will add ribbons and Parmesan as a topper.

Thanks for posting a healthy tomato recipe that doesn’t call for use of pasta and isn’t a salad.

Love this recipe! We use it quite often. I double the carrots and celery and add minced onion flakes to it and use Uncle Ben's Wild Rice. After a couple hours check it to see if it needs a little bit more water added.

Sounds great, but for low carb, I’d use cauliflower rice and keep carrots on the lighter side.

This recipe is incredible! I halved everything and didn't add mushrooms. I also added parmesan cheese to the pan while it was all cooking. The one you find near the pasta sauce at the supermaket, it's really sharp. I'm from Western Australia so I'm not sure where you'd find it in your local store? It made the dish just that much better I think. I love love love this recipe and I am also adding it to my regular meal rotation! I also add cheese to everything, its the best stuff! Thanks so much for recipe!!! <3

Sounds good, but there is no mention of any kind of stock, just the juice In one 15oz can of diced tomatoes. That's hardly enough to make soup with 2 1/2 lbs of chicken. Missing ingredient?

I may have left it out. It probably needs at least 10 ounces or more of broth.
