    Ingredients needed

    Here's everything that goes into my steak bites recipe:

    Olive oil

    To brown the beef in this recipe, I use a bit of olive oil. It adds good fat content and flavor to the dish while preventing your beef from sticking.

    Beef

    The base of this recipe is, as expected, beef!

    I use beef round – a lean, boneless cut that is perfect for beef stew meat.

    Mushrooms

    For extra umami flavoring and a satisfying texture, I include baby portobello mushrooms in this recipe. Mushrooms are the ideal pairing to any beef dish, in my humble opinion.

    Onion

    Onion is one of my most used low-carb vegetables for its wonderful flavor possibilities and versatility across cuisines.

    Beef broth

    Beef broth adds incredible depth to this dish, adding salty, umami flavors. The longer your beef tips cook stew in it, the better!

    Worcestershire sauce

    My homemade keto Worcestershire sauce adds tons of flavors to this recipe without any added sugars or starches.

    It's also a fitting addition because of its New England roots – just like steak tips.

    Seasoning

    When it comes to seasoning this recipe, I don't mess around! To best bring out this recipe's flavors, I add:

    • Garlic powder
    • Salt and pepper
    • Thyme
    • Oregano
    • Basil
    • Parsley

    Xanthan gum

    Xanthan gum is an optional addition if you want to thicken your sauce.

    This may also depend on how you plan to serve these steak tips; a thinner sauce is great if you have something to soak up all of the deliciousness.

    How to make sirloin steak tips

    Ready to make this delicious recipe? Here's how to make tender steak bites in just 3 steps:

    Step 1: Brown the meat

    First up, heat a bit of olive oil in your frying pan over medium-high heat. While heating, season bite-sized pieces of beef with a bit of salt and pepper.

    Add your beef to the hot oil and brown it for a few minutes on each side.

    Step 2: Load the slow cooker

    Next, add your sliced onions and portobello mushrooms into the slow cooker, topping with the cooked beef, beef broth, Worcestershire sauce, garlic powder, thyme, oregano, basil, and parsley.

    Step 3: Stew meat

    With that, your work is practically done! Place the lid on your crockpot and turn the power to low.

    Cook your steak tips for several hours, adding in a bit of xanthan gum if you prefer a thicker sauce. The sauce is naturally thin, perfect for soaking into a delicious slice of bread.

    Your dish is ready to eat when the meat is fork-tender. Top with a bit of fresh parsley, and serve!

    How to serve sirloin steak tips

    This delicious marinade is practically begging to be soaked up by a slice of buttered pumpkin seed bread.

    Alternatively, add these beef tips to a bed of keto "mashed potatoes," like mashed turnips or garlic cauliflower mash with mashed celery root.

    Finally, finish your plate with a vegetable side dish like green beans almondine, oven-roasted vegetables, or air fryer cauliflower for a nutritious addition!

    Recipe variations

    While this recipe is darn tasty on its own, there are several ways to add a little extra yum! Here are a few ideas for variations:

    • Along with beef broth, include my easy steak marinade for a delectable flavor combination.
    • Create garlic butter steak bites! Simply top your finished dish with fresh minced garlic sauteed in a healthy amount of butter.
    • Add a splash of gluten-free soy sauce for even more umami flavor.
    • Get creative with your seasonings, adding a bit of heat from red pepper flakes or a bit of cayenne pepper.
    • Use this recipe for different cuts of beef, like beef tenderloin.

    What are sirloin steak tips?

    The name of this meat cut can be a little misleading. The sirloin tip does not actually come from the sirloin cut, nor is it the tips of steaks. So keep this in mind when shopping for low-carb beef dishes calling for it.

    Sirloin tips actually come from the round portion of the hindquarter, which runs from the ankle to the rump.

    Beef round is generally less tender than other cuts of meat because the leg muscles have been toughened by exercise.

    It's a lean, boneless cut that is great for stew meat and kabobs. The best way to prepare sirloin steak tips is to use moist-heat methods, which makes this crock pot steak tips recipe perfect.

    How can you make sirloin steak tips more tender?

    The best way to create tender, juicy pieces of Sirloin steak tips is to cook them in a slow cooker since the low-and-slow method works very well with this cut of meat.

    But if you’re still finding the meat is tougher than you would prefer, here are some ways to tenderize your meat before cooking:

    - Hit room temperature: Before cooking the meat, take it out of the refrigerator and let it come to room temperature.
    - Use a meat mallet: Use the flat side of a meat mallet to gently tenderize the meat before cooking.
    - Add salt: Before cubing, lay your steaks out in a single layer and lightly cover each side with about 1 teaspoon of kosher salt or sea salt (avoid using table salt). Using the back of a spoon (or your fingers), gently nudge the salt into the surface of the meat.
    - Slice against the grain: Make sure that when you are cutting your meat into cubes, you slice against the natural grain of the meat. In other words, cut across the long muscle fibers that are running throughout the meat. This will make the meat more tender and easier to chew.

    How do you prepare sirloin steak tips for the slow cooker?

    One of the most important steps in preparing sirloin steak tips (or any cut of beef) for the slow cooker is to brown the meat.

    Although you can add raw meat directly to the slow cooker, browning (or searing), the meat adds a lot more of the deep, rich flavor that you expect from a beef stew.

    To properly brown your sirloin tip steak cubes, place the meat into a hot pan and cook them for a couple of minutes until the bottom develops a nice, dark crust.

    Turn the cube over and sear, repeating for each side of the meat.

    How do I store leftover Sirloin steak tips?

    After cooking, do not leave the meat at room temperature for more than two hours. Also, be sure to store any leftover steak tips in the refrigerator as soon as possible.

    Properly stored, your leftovers will be good for two to three days.

    If you won’t be eating the leftover steak tips within three days, then it is best to freeze them. This makes them a great freezer-friendly low-carb meal as well.

    Divide the leftovers into single-serve or family-sized servings and store them in airtight containers or heavy-duty freezer bags.

    If you are using freezer bags, be sure to press the bags flat so that they take up less space in your freezer.

    Properly stored and frozen, the dish will keep well for 2-3 months.

    NOTE: Please keep in mind that frozen and reheated mushrooms may not have the same texture as when the dish is first served.

    • 2 tablespoons olive oil
    • 2 pounds beef round cubed
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 8 ounces baby portobello mushrooms sliced
    • 1 small onion sliced
    • 3 cups beef bone broth
    • 1 tablespoon Worcestershire sauce
    • ½ teaspoon garlic powder
    • 1 teaspoon dried thyme
    • ½ teaspoon dried oregano
    • ½ teaspoon dried basil
    • ½ teaspoon dried parsley
    • xanthan gum optional thickener

    Instructions

    • Heat oil in large skillet over medium-high heat. Season beef with salt and pepper. Brown meat in hot oil, about 3-5 minutes per side, then set aside.
    • Place sliced mushrooms and onions into slow cooker. Top with browned beef, broth, Worcestershire sauce, garlic powder, thyme, oregano, basil, and parsley.
    • Cover crock and cook on low 6 to 8 hours or until meat is fork tender. Sauce will be thin. If thicker sauce is desired add in small amounts of xanthan gum (about 1 teaspoon or so). Or, use low carb thickener of choice.

    Notes

    • Although they are often called sirloin steak tips, they are actually cut from round steak.  So if you can't find steak tips already cut, simply cube round steak.

        You could try to do it on HIGH for 4 instead of 6-8 hours. The one thing I would look out for is that it might not be as tender since it needs to cook longer and on a lower setting. Let me know if you do!

      Super easy and flavor was outstanding. Mine was ready after about 6 hr 45 min in the crock pot. I did it without the mushrooms (because I hate mushrooms) and spooned it over cauliflower mash. Perfect for this rainy day.

        Sirloin tips are actually cuts from round steak (not sirloin) which comes from the rear leg of the cow. It's a cheaper cut of meat that works best with slow cooking to tenderize it.
