    Keto Rice Pudding (In A Crockpot)

    Why you'll love it

    Making keto rice pudding is easier than you might think! This will soon become one of your favorite dessert recipes because the slow cooker does all the work. You don't have to cook rice or worry about messing up pudding rice. Just follow this recipe, and you'll make the most incredible slow cooker rice pudding.

    Keep reading, and I'll even share some of my favorite ways to change it up, too! Add some brown sugar substitute on top, or mix in a few dried cranberries.  

    When you use Miracle Rice, the calorie count and carbs are easily kept low. You can either serve it immediately or save it for later. 

    Ingredients

    I used the following simple ingredients to make my delicious pudding. 

    Eggs

    These are the emulsifiers. You need them to thicken everything and hold it all together. 

    Sugar substitute

    Sweeten the rice pudding with your favorite low-carb sweetener. This guide to keto sweeteners will help you decide which one to use. 

    Miracle Rice 

    Miracle rice is a low-carb rice substitute that is made with shirataki mushrooms. The pieces of shirataki are rounder than normal rice. They do look a lot like tapioca, so you can use them as a replacement for tapioca pearls as well.

    Coconut cream

    Since I've been cutting back on dairy, I made this pudding with coconut cream. I like to use coconut cream over other low-carb milk products. I prefer it over coconut milk because of its higher fat content. It's also lower in carbs than using heavy cream.

    Vanilla extract

    This gives the rice pudding a deeper flavor. It's important because it enhances the overall flavor of this sweet recipe. 

    Nutmeg

    A dash of nutmeg will make the entire rice pudding pot taste richer and slightly spicier.

    Tips

    • Use a rack in the slow cooker. If your crock pot came with a rack, you're all set. If not, you'll need to make one out of aluminum foil. The baking pan needs to be lifted off the bottom of the crock during cooking.
    • Use a larger slow cooker. You need enough room to add the rack and the dish with the rice pudding in it. 
    • Don't ignore it while it cooks. Stirring occasionally is very important so that it cooks evenly. 
    • Thicken in the fridge overnight. If you want it to be slightly thicker, just let it set in the fridge overnight. 

    Instructions

    This is one of my favorite rice pudding recipes because it is so easy to make. This delicious slow cooker rice pudding comes together in just a few simple steps.

    Prepare the Miracle Rice

    Rinse the Miracle Rice in a large water bowl and then drain it well.

    Remove the rest of the water that might still be remaining by stir-frying the Miracle Rice in a dry pan. Keep frying it until the Miracle Rice feels like it is sticking to the pan.

    Prepare the slow cooker and baking dish

    You want to have about 2 cups of hot water in the bottom of the crock when slow cooking. A water bath is typically used when baking custard to help prevent curdled custard. It also provides moisture, so the pudding doesn't crack.

    Before adding the water, place a rack at the bottom of the crock to lift the baking dish up. You can make one out of aluminum foil if you don't have one that fits.

    Then, grease the baking dish. Make sure you use a baking dish that fits inside your slow cooker. 

    Mix the ingredients

    Mix all the ingredients, except the Miracle Rice, in a large mixing bowl. After they are all mixed up, add the Miracle Rice into the mixture.

    Cook the keto rice pudding 

    Pour the rice pudding mixture into your prepared baking dish. Sprinkle some nutmeg on top. Place the rice pudding on top of the rack at the bottom of your slow cooker.

    Then, cover your baking dish with aluminum foil or some other cover while it is inside the crockpot. This is important because it prevents condensation that builds up under the slow cooker lid from dripping into your pudding.

    Serving suggestions

    There are a lot of different ways to serve this creamy keto rice pudding. If you want to serve it hot, then enjoy it like you would a dessert. Sip your favorite hot latte with it, and maybe even add a warm slice of low-carb banana bread.

    You can even serve this rice pudding at a party - just place it in individual containers. Add some cute little keto gingerbread cookies to the dessert table with it. They taste delicious with the light nutmeg flavors in the rice pudding.

    Variations

    You can change up slow cooker rice pudding in a few different ways. If you make any adjustments, please let me know in the comments.

    • Cook with a cinnamon stick. Just add the cinnamon stick on top of the rice pudding. 
    • Toss in a few raisins. Adding raisins will increase the carb count but can also add some delicious flavors. 
    • Add a dash of warm rum. Rum has no carbs and will add deep flavor notes to the rice pudding. 

    FAQs

    Here are some questions people often ask about making this rice pudding recipe. If you don't see your question in this list, please leave it in the comments.  

    Is arborio rice keto-friendly? 

    Rice pudding is typically made with arborio rice - which is a type of long-grain rice. And unfortunately, it is not keto-friendly. 
    Do not use uncooked rice, minute rice, or instant rice. These choices contain too many carbs for it to be a low-carb recipe. 
    This recipe uses Miracle Rice, and it turned out perfectly. 

    What do you do with leftover rice pudding? 

    Store leftover rice pudding in an airtight container in the refrigerator for up to three days. 

    What size crockpot do I need to make slow cooker rice pudding? 

    You can use any full-size crockpot for this rice pudding recipe, as long as your baking dish fits inside of it. 

    Can you freeze rice pudding? 

    No, do not try to freeze rice pudding. It will change the texture too much. 

    What other types of milk can I use? 

    You can use either skim milk or whole milk if you aren't lactose-intolerant. Do not use condensed milk or evaporated milk because they have too many carbs. 

    How do you make Miracle Rice taste better? 

    The secret to preparing this rice alternative and getting rid of any unpleasant taste is to drain the packaging liquid, soak in plain water for at least 5 minutes, drain well, then stir fry in a dry pan over medium-high heat to remove most of the water. You can also use a microwave to dry it out, but I've been using the stove.

    How do you prevent slow cooker rice pudding from having too much liquid in it? 

    You certainly don't want to add unnecessary water into your pudding, ruining the top and making it runny! Some liquid may naturally separate from the pudding when it's cooked. You can drain it if needed or see if it soaks back in when cooled.

    Ingredients

    • 3 eggs lightly beaten
    • ¼ cup low carb sugar substitute
    • 1 teaspoon vanilla extract
    • 1 can coconut cream 13.5 ounces, or coconut milk
    • 7 oz Miracle Rice 1 bag, properly rinsed and dried
    • ½ teaspoon nutmeg
    US Customary - Metric

    Instructions

    • Prepare Miracle Rice by rinsing in a large bowl of water then draining. Then, to remove excess water, stir fry in a dry pan (no oil) until the rice feels like it's sticking to the pan. Remove pan of rice from heat.
    • Lightly grease 1-½ quart baking dish which fits into your crock pot.
    • In mixing bowl, combine eggs, sweetener, vanilla extract and coconut cream, and water with electric mixer until well blended. You may want to drain off some of the liquid at the bottom of the can in the coconut cream.
    • Stir Miracle Rice into the cream mixture.
    • Pour mixture into prepared dish and spread out evenly. Sprinkle nutmeg on top.
    • Place a rack or aluminum foil ring on bottom of crock, then pour in 2 cups of hot water.
    • Cover baking dish with foil, then place on rack in crock pot.
    • Cover and cook on high for 3 to 3 ½ hours or until pudding is set.
    • For best results, chill completely before serving.

      I just want to thank you for this recipe. I followed it to a T with one exception. I wanted something a little tangy/fruity but not raisins. I had some freeze-dried cranberries and added a 1/4 cup to the mix with a bit more liquid. It was DELICIOUS! My husband loved it too. I did add the bourbon and chef's kiss to you!

      This looks delicious! I adore rice pudding! Miracle Rice isn't mushrooms though, I believe you're thinking of shiitake mushrooms. Miracle Rice is made from a root vegetable flour.

        You can cook the pudding in the oven or an air fryer, but you'd have to experiment with temperature and time. For the oven, I'd start with 350°F and check after 15 minutes or so.

      Excellent pudding recipe for Keto diet! I didn’t have a Casserole dish small enough to fit my crockpot so I did it in a pan on the stove boiling the water with a cover on for about 40 minutes and it was done.

        I find erythritol does have some kind of impact as it does seem to stall weight loss (or cause weight gain) for me.

        it says use 7 oz of rice but the bag is 8 oz. What measurement did you use to remove an ounce and couldn't I use the whole 8 oz but adjust the other ingredients and if so what are those adjustments?

      You don't need such an elaborate process to eliminate the smell from the Miracle Rice. I use the noodles and virtually ANY cooking eliminates the smell/taste. I don't even bother washing them off any more when I saute them w/ curry and veggies.

      Hi Lisa,
      This recipe sounds delicious and I would love to try it. I'm new to the low carb/Keto lifestyle and am getting my feet wet with great recipes like this. Unfortunately I'm allergic to eggs and have been struggling on finding a substitute for them in recipes. Do you by any chance have any recommendations on what the eggs could be replaced with? (I'm allergic to both whites & the yolk 🙁

        The only sub I know of is chia eggs and I'm not sure how it would work out in this recipe as you would likely see/taste the chia.

      I make this all the time and my family loves it. We add a tablespoon of whiskey and a teaspoon of cinnamon. This is easy to make, requires just a few ingredients that you usually can have on hand.

        Water is not an ingredient for the pudding. It's used to make a water bath in the crock pot.

          Your recipe does say to add the eggs, sweetener, vanilla, coconut cream and water and combine with mixer.

          I didn't add any water, but my pudding came out separated and thin

      Loving your recipes, they make me so hungry! I was wondering, you say above that coconut cream has fewer carbs than heavy cream...but I thought heavy cream was 0 carbs (That's what mine says anyway). Is this a portion/rounding issue? Thanks, I've been going way overboard if this is the case!!

        Pure heavy cream is near zero carb per serving. A lot of brands have additives that can have an impact. I always look for cartons that list only cream as the ingredient.

      SO I THINK YOU SHOULD HAVE PUT THE INSTRUCTIONS OF HOW TO HANDLE THE RICE IN THE ACTUAL RECIPE PART - (THAT WE ALL PRINT)- I LOVE TO READ ALL OF WHAT YOU WRITE ON HOW TO PREPARE YOUR RECIPES - BUT YOU DID LEAVE OUT THE PART ABOUT DRYING OUT THE RICE. AND WAS WONDERING IF I WANTED TO USE THE OVEN TO BAKE THIS AS OPPOSED TO THE CROCK WHAT WOULD THE CHANGE BE? THANKS!

        You need to try it! Just be sure to rinse, soak, rinse, then stir fry dry. Shiratake is the best when prepared correctly!

        You can certainly use a regular water bath in an oven. Just bake at like 325-350F until set.

          I'd say at least an hour at a lower temp (around 300°F) and you wouldn't need to stir during the cook time.
