    Ginger Lime Sweet Pork Recipe (Crock Pot)

    Even if you aren't a huge fan of pork, you will love this Asian pork tenderloin in the slow cooker. It's a fantastic copycat of takeout pork. It's so tender, and the thick and sweet gravy is so delicious that you'll want to lick it off your plate!

    Pork tenderloin is a pretty healthy cut of meat. It is high in protein and low in saturated fat.

    Whether you are a beginning cook, a busy/distracted cook, or you just want to try something new, this recipe is for you!

     Why you’ll love it

    This slow cooker Asian pork looks and tastes like a fancy meal, but it is almost laughable how easy it is to make.

    You will adore the sweet gravy that has spicy notes from ginger and bright, zesty flavors from the lime.

    The sauce really makes the dish look elegant. It covers up the somewhat ugly-looking pork loins. I always have trouble getting photos of meat. But, with the sauce in this low-carb crockpot sweet lime ginger pork recipe, the photos came out pretty appetizing.

    Save this recipe for a special occasion or when you need to feed a lot of people at once. You'll be surprised at how many people this recipe will feed!

    Ingredients

    There are basically two parts to this sweet pork recipe - the pork loin and the incredible gravy. Here is what I used for both:

    Pork loin

    Use as large of a pork loin as you want. I used a 2.5-pound pork loin. You can also use a couple of pork tenderloins instead of one roast.

    Zesty sauce

    For the bold spices in the gravy, I used tamari, Worcestershire sauce, and lime juice. Instead of gluten-free tamari, you can use coconut aminos or soy sauce!

    Spices

    Use your favorite Asian spices in this recipe. I used garlic cloves and fresh ginger. For more spice, add some red pepper flakes.

    Sweetener

    I only used a couple of tablespoons of fiber syrup (brown sugar substitute) in the recipe. For the rest of the sweetness, I added concentrated liquid stevia. That keeps the carbs in check for each serving.

    Sauce thickener

    Instead of using cornstarch to thicken the sauce, I used glucomannan powder, but xanthan gum also works.

    Garnish

    Garnish the pork with fresh cilantro or your favorite green herbs.

    Tips

    • Use coconut aminos to eliminate soy. I find the coconut aminos a bit expensive so I do use tamari on occasion.
    • Eliminate the fiber syrup if you'd like to cut back on total carbs in this sweet pork recipe. You can sub it out with some more stevia or monk fruit. Or, just leave it less sweetened.
    • Sear the pork before you slow cook it. This one step will lock in the juices and prevent the pork from drying out.

    Instructions

    There are just a few simple steps for this sticky-sweet pork loin. Most of the time you'll spend letting it cook. It literally cooks all day, filling your home with the most amazing aromas!

    Season and sear the pork

    First, rub the pork with salt and pepper. Then, sear it in a skillet with your favorite type of oil. You do not have to cook the pork completely, just make sure it is browned on all sides.

    Then, place browned meat in the slow cooker.

    Mix together sauce ingredients

    In a separate bowl, mix together all the ingredients for the sauce. Once it is completely combined, pour it over the pork loin in the slow cooker.

    Cook this all day.

    Thicken the gravy

    When the pork is completely cooked, set it on a platter. Then, thicken the gravy by pouring the juices from the slow cooker into a small saucepan.

    Add some glucomannan or xanthan gum and cook until the sauce thickens.

    When it is thickened to your liking, drizzle it on top of the pork.

    ️ Serving suggestions

    This is a pretty dish that you could take along to a gathering with friends and family. The crockpot will keep it warm. If you need to feed more than ten, you can always double the recipe.

    Serve some easy oven-roasted vegetables on the side! You can even drizzle some gravy on top of the veggies.

    Oven-roasted asparagus will taste especially perfect with it.

    Keto ramen shirataki noodle soup is a light soup that is the perfect way to start out a meal with this sweet pork.

    You don't have to garnish the dish with cilantro or cut lime. But, I think the green color really makes this low-carb crockpot sweet pork recipe shine.

    How do you keep pork from drying out in the slow cooker?

    Slow cooking makes the meat so tender and juicy. I just hate when pork dries out after cooking. But not when you use the crockpot with a marinade!

    What is the best low-carb substitute for honey?

    There is a pretty good low-carb substitute for honey called Fiber Syrup Gold made by Sukrin. But, too much of the syrup can spike insulin, so you'll still want to use it sparingly.

    Can I leave out the sweetener?

    Yes, you can leave out the Sukrin gold fiber syrup and make this without a sweetener. It will still taste fantastic even without the sweet notes.

    Ingredients

    • 1 tablespoon avocado or olive oil
    • 2.5 pounds pork loin
    • salt and pepper
    • 2 tablespoons Sukrin Gold Fiber Syrup or any low carb brown sugar or molasses substitute
    • 1 teaspoon SweetLeaf Stevia drops I used vanilla flavor
    • ¼ cup tamari
    • 1 tablespoon Worcestershire sauce
    • Juice of one lime
    • 2 cloves garlic minced
    • 1 tablespoon fresh ginger or ½ teaspoon ground
    • ½ teaspoon glucomannan powder or xanthan gum
    • Fresh cilantro optional

    Instructions

    • Heat oil in large skillet.
    • Rub salt and pepper over pork loin. Place into hot oil and sear until edges are browned.
    • Remove from heat. Put pork loin into bottom of oval crock pot.
    • In small bowl, whisk together the sweeteners, tamarin, Worcestershire sauce, lime juice, garlic, and ginger. Pour over pork loin.
    • Cover and cook on low for 6-8 hours or on high for 4-7 hours.
    • When finished, place pork onto platter.
    • Pour juices into a small saucepan. Sprinkle glucomannon or xanthan gum on top. Whisk the powder in. Cook until mix begins to thicken. Pour over pork loin. Top with fresh cilantro.

      I just wanted to clarify which cut of pork to use. The picture looks like tenderloins rather than a pork loin. Tenderloin doesn’t do well with long cook times.

        Pork loin is what should be used as they are better for slow cooking.

        I recommend using a keto diet app. Start by calculating your macros and then track things each day. If you still aren't losing, you should seek the help of a health professional.

      Super into this. I'm attempting to do pulled pork with this as I had a pork butt in the freezer that needs to be eaten. As someone who loves a typical bbq sauce-style pulled pork, I've been wracking my brain trying to think of a fun way to do the shoulder. This seemed like a good solution, though I think I may have to be conservative with the sauce? It may be a little rich to be fully combined? Maybe have it over riced cauliflower. Either way, looking forward to trying this! Thanks! 🙂

      I'm new to this I'm trying find recipes that I can eat I haven't had any bread in 16 yrs so I'm trying to find food I can eat I have ibs and my stomach. Won't handle very much food some I'm learning to make some I not sure of cheese is one of them what to use for that

      I love this recipe, Lisa. We eat a lot of pork at my house, but I am seriously lacking in crock pot recipes. I'm home all day, so I rarely use it. I love the flavor combination going on here. And the pork does look elegant in that rich velvety sauce. This is a recipe I will be trying for sure!

      You don't need any sweetner including honey in this recipe. Throw a little black rum or white wine or Sherry in the pot. Don't make very many pork recipes-shame!
