    Keto Flourless Brownies (Dairy-Free and Nut-Free)

    Sugar cravings tend to hit hard and don't go away easily. So, instead of denying yourself chocolate while on a keto diet, make a batch of these flourless brownies!

    They still have all the flavors of chocolate chips, cocoa powder, and the same flavor as your favorite brownie recipe.

    The difference is that these are safe for people with some food sensitivities to eat. Plus, these fudgy flourless brownies are gluten-free and dairy-free too!

    You are going to really enjoy this fudgy flourless brownies recipe because it is made with whole ingredients that are good for you.

    Have you ever tried to read the ingredient label of a box of processed keto brownies? They are made with confusing ingredients. In fact, many low net carb products with high fiber are actually highly processed junk food.

    It's much better to get your fiber intake from whole foods.

    Whipping up a batch of these tasty treats can be a safe dessert that will actually feed your body the nutrients it needs.

    These paleo brownies are very similar to a flourless chocolate cake that I've made! Most of the carbs are from the chocolate itself, some of which are in the form of fiber.

    Recipe's Ingredients

    This is one of the best brownie recipes! There are three parts to make these brownies – the chocolate, binding agents, and sugar-free sweeteners. Here's what you need:

    Chocolate (of course!)

    Of course, brownies are going to have chocolate in them. I used unsweetened baking chocolate and unsweetened cocoa. You can also sub in some sugar-free chocolate chips in place of the chopped chocolate.

    My favorite brand is Good Chocolate!

    Binding Agents & Fats

    You can't beat the power of psyllium husk as a bulking and binding agent.

    However, you do need to be cautious when incorporating this high fiber supplement into your diet. It should always be used with adequate water intake.

    And, like consuming any fiber, you don't want to go overboard. If you do, it can result in bloating and gas. So use it moderately!

    I also added in some eggs and coconut oil as well. If you are sensitive to eggs, you can substitute them with duck eggs.

    Sugar-free Sweeteners

    Instead of granulated sugar, use a combination of Sweetleaf stevia drops and monk fruit liquid extract. However, there are a lot of different sugar free sweeteners available.

    And finally, don't forget about vanilla extract and salt. They enhance the other flavors in this amazing recipe.

    Recipe Tips

    • Add sugar-free chocolate chips. For a little extra chocolate flavor, mix in some sugar-free chocolate chips.
    • Use an extra egg instead of psyllium. It will have the same consistency and work as a perfect replacement.
    • Replace monk fruit liquid with stevia liquid. The stevia is twice as strong, so you'll use half as much stevia as you would monk fruit sweetener.

    Recipe Instructions

    This is a fun and simple recipe! Here is a bit more information about how to make flourless brownies.

    1. Melt the chocolate

    The very first step is to melt the baking chocolate.

    Add some coconut oil to it - this makes the chocolate smoother and thins out the consistency.

    I prefer to melt the chocolate and coconut oil in the microwave because it's so much faster. If you do, just remember to heat it at 30-second intervals, stirring really well in between each one.

    Alternatively, you could also melt them in a double boiler on the stove. Place a glass bowl inside a pot of boiling water and melt the chocolate and coconut oil this way.

    2. Mix it with the wet ingredients

    After the chocolate is melted, mix it in a larger mixing bowl with the eggs, stevia, monk fruit, and vanilla extract.

    The easiest way to do this is with an electric mixer, but you can also just mix it by hand.

    3. Stir in dry the ingredients

    Next, add the unsweetened cocoa powder, psyllium husk powder, and salt. Keep mixing until it is completely combined.

    4. Bake the flourless brownies until done

    Finally, pour the gluten-free brownie batter into an 8x8 baking pan.

    Tip: To make clean-up easier, you can line the baking pan with parchment paper first!

    Then, bake the brownies for about 25 minutes. Let them cool completely before you slice them. They will be soft and fudgy when cooled.

    Serving Suggestions

    These gluten-free brownies are so rich that you won't want to eat much with them.

    I love to eat these delicious flourless brownies with a scoop of homemade almond milk ice cream. It cuts the sweetness down a touch and tastes like a brownie a la mode.

    Sprinkle some sugar-free chocolate chips or unsweetened chocolate on top.

    For a little change of taste, sip on a keto white hot chocolate as you enjoy these fudgy delights.

    You really can't go wrong with flourless chocolate brownies as a late-night snack, all by themselves!

    Common Recipe FAQs

    Before we get to the printable recipe card, here are some questions people often ask about how to make it.

    If I am sensitive to vanilla, can I leave it out?

    I find the vanilla is a flavor enhancer. You could leave it out and add a touch more sweetener.

    What does flour do in brownies?

    Flour works by absorbing moisture in the brownie batter. That's why my flourless brownies have a different consistency.

    Can you use hot cocoa powder instead of cocoa powder?

    I have not tested them this way, but I can tell you that hot cocoa mix contains sweeteners, which might make them a bad idea for people on a keto diet.

    If you try to use sugar-free hot cocoa mix, you will have to cut back on how sweetener you use to keep the brownies from tasting too sweet.

    How do you store flourless brownies?

    The best way to store flourless brownies is in an airtight container in the refrigerator. They will solidify a bit and stay fresh for up to 5 days!

    Ingredients

    • ½ cup coconut oil
    • 8 ounces unsweetened baking chocolate
    • 3 large eggs or 2 duck eggs at room temp
    • 1 ¼ teaspoon Sweetleaf stevia drops
    • 1 ¼ teaspoon monk fruit liquid extract
    • 2 teaspoons vanilla extract
    • ¼ cup unsweetened cocoa
    • 1 tablespoon whole psyllium husks or additional egg - see note
    • ¼ teaspoon salt preferably sea salt

    Instructions

    • Place coconut oil and unsweetened baking chocolate in a microwaveable bowl. Microwave until completely melted.
    • Add eggs, stevia, monk fruit, and vanilla extract to melted chocolate mixture. Combine with electric mixer.
    • Stir in unsweetened cocoa, psyllium husks, and salt.
    • Spread into parchment paper lined 8x8 baking pan.
    • Bake at 350°F for 25 minutes. Cool completely before slicing.

    Notes

    An additional egg can likely be substituted for the psyllium. I will test that next time around and update the recipe if needed.

      Can I substitute "chia/flax eggs" instead of the chicken/duck eggs for a vegan recipe?

        You can try that, but I haven't tested the recipe using either. However, psyllium eggs have worked out well for me in other baked goods.

        You can. You'll just need to convert. It's a little more than a half cup of sugar equivalent.

          You'd need about 3/4 cup of granular but I would not use anything erythritol based.

        You can replace with stevia liquid which is twice as strong (so you'd use half). Or, you could try adding in 1/4 to 1/3 cup of another low carb sugar replacement.
