    Strawberry Chia Pudding with Almond Milk

    You'll love this low carb strawberry chia pudding with almond milk. The fruity flavor is very refreshing and it's a tasty way to get the benefits of chia seeds.

    I was looking for an easy treat to make this weekend. It had to taste good and be a cinch to make. And, it had to use ingredients I had on hand.

    After a quick look at what I had available in the kitchen, I came up with a yummy low carb strawberry chia pudding with almond milk. Our strawberry plants aren't producing yet, but I had some frozen strawberries in the freezer.

    For this tasty treat, you'll need a handful of basic ingredients. I used almond milk, chia seeds, lemon juice, frozen strawberries, and low carb sweeteners. One of the sweeteners also provides vanilla flavor so if you only have plain sweeteners, you'll want some vanilla extract too.

    I've done a lot of chia pudding in the past, but I never thought to add fruit. Not really sure why, but berries are a nice complement to chia seeds. I used strawberries, but any berries work just as well. When the blueberries start to come in here, I'll have to give them a try in the recipe.

    I thought about pureeing the frozen strawberries, but ended up chopping them up instead. That way, there are chunks of fruit in the strawberry chia pudding with almond milk. I also limited the amount of fruit so there isn't a lot of fructose in each serving.

    If you have a nut allergy, you can sub out the almond milk. Really, any low carb milk beverage is suitable for the recipe. I may have to try coconut milk next time as I love the coconut flavor.

    I thought this low carb strawberry chia pudding with almond milk made a nice breakfast at work. And, the chia seeds are very filling so I wasn't hungry until lunch time.

    I may even try putting these in small cups for our summer parties. A lot of people are into healthy eating now so I bet they would go. They do look rather cute topped with the strawberry pieces.

    If you look at the total carbs, the number does appear to be high. But, you need to remember that chia seeds are all fiber so they shouldn't cause an insulin spike.

    Chia seeds are high in omega-3 fats which many people fall short on in their diet. The standard American diet tends to be too high in omega-6.

    Although pudding is my favorite, chia is also great for making low carb jam.

    Ingredients

    • 2 cups unsweetened almond milk
    • ⅓ cup chia seeds
    • ⅛ teaspoon vanilla stevia drops
    • ⅛ teaspoon monk fruit liquid extract
    • 1 tablespoon lemon juice
    • 1 cup fresh or frozen strawberries chopped

    Instructions

    • In medium bowl, stir chia seeds into almond milk.
    • Add in sweetener(s), lemon juice, and strawberries.
    • Mix all ingredients well.
    • Stir every 5 minutes for the next 15 minutes.
    • Divide into serving dishes and chill for at least 4 hours or overnight.

    Notes

    Stevia and Monk fruit extracts can be replaced with about 1 to 2 tablespoons sugar equivalent or to taste plus ½ teaspoon vanilla extract.

      My husband and I really liked this (I used raspberries and splenda for the sweetener). I dropped my rating one star because the pudding never really thickened up. It was more like half-way thickened. I have double-checked the recipe and I can see what I did wrong. Any tips?

        For a thicker pudding, just stir in more chia seeds. When the added seeds gel up, it will thicken more.

        You can use any sweetener or combination of sweeteners that you like. I just prefer blending stevia and monk fruit. You can use all stevia if you prefer or another sweetener.

      Could you make this with heavy cream instead of almond milk? I just can't do almond milk (not sure I can do coconut either), it's a texture thing for me - slimy. Additionally, if you can add 1 - 2 T of sugar, can I assume you can add 1 - 2 T of swerve in place of the liquid sweeteners?

        You can definitely use heavy cream. You may want to dilute it with water, though, as it will be pretty rich and high calorie.

          I did heavy cream/water (water was a chia tea with energy) and no sugar added cinnamon and Vanilla and it is the bomb!!!!! Had a 2 oz cup for breakfast and it was great!!

      Hi Lisa! I am new to the LC lifestyle. I keep seeing recipes for chia seeds. What do they taste like? I have a friend that puts them in water and drinks it. They look kinda slimy. Is there any way I can get some chia seeds that aren't in huge quantities in case I don't care for them? Or maybe I can make my own chia pets.. LOL!

      I made this with frozen raspberries and it is very good. I used coconut milk because that's what I had. I also added more sweetener. I did find that it was kind of runny and so will try adding more chia seeds next time. Thanks for sharing!

        It got thicker for me the longer it sat in the fridge. You can add more chia as the frozen berries add more liquid. I tried not to add too much as I get a bit sensitive to fiber. I also prefer things less sweet as I've been really cutting back on sweeteners since the beginning of the year.
