    As you bite into them, the powdered sugar substitute sticks to your lips and falls to the plate.

    Ingredients needed

    These fun little cookies only use five ingredients. Plus, if you have ever made any keto desserts before, you probably already have these ingredients in your pantry.

    Here's what you need:

    Almond flour

    Since these cookies are crumbly and aren't known for their smooth texture, you might be able to use either almond meal or almond flour. The difference between the two is that almond meal has bits of the almond skins mixed into them.

    I like to use almond flour whenever I bake because it resembles flour so closely.

    Butter

    Use unsalted butter and let it soften at room temperature before you mix it into the dough.

    If you use salted butter, don't add more salt to the mixture.

    Swerve confectioner sugar substitute

    You will use this twice in the recipe! First, use it to sweeten the cookie dough. Then, save some in a bowl.

    You'll need to roll the baked cookies in the Swerve at the end so that they look like snowballs.

    Vanilla extract

    Vanilla extract flavors the cookies with a light vanilla taste. If you want the cookies to have a stronger almond flavor, add a few drops of almond extract too.

    Chopped pecans

    Some recipes use walnuts instead of pecans. Pecans have 1g net carbs in each ounce, and walnuts only have 2g net carbs per ounce. It's perfectly fine to replace the pecans with walnuts if you want.

    • Wait until the cookies are completely cooled off before you roll them around in the Swerve confectioner's sugar substitute coating.

    How to make homemade snowball cookies

    Ready to make the best Christmas cookies this holiday season? Here's how to do it!

    Step 1: Cream the butter and sugar substitute

    The first step is to use an electric or stand mixer to mix the butter with the powdered sugar substitute.

    This is why it is so important to let the butter soften first. It's so much easier to mix when it is soft!

    Step 2: Mix in the flour, salt, and vanilla

    Next, add the almond flour, vanilla extract, and salt. Only add the salt if you use unsalted butter.

    Keep mixing the cookie dough together until everything is completely mixed.

    Scrape the bottom and sides of the bowl to incorporate the butter mixture into the flour.

    Step 3: Add pecans and freeze

    Next, gently fold in the chopped pecans. To fold something in means you add it but don't over mix it. Gently incorporate the pecans into the rest of the cookie dough.

    Then, make dough balls, all equally sized, and place them on a baking sheet lined with parchment paper.

    Freeze the balls of cookie dough for about half an hour.

    While they are chilling in the freezer, preheat the oven.

    Step 4: Bake and coat the cookies

    Place the frozen cookies and cold baking sheet into the preheated oven and bake the cookies for about 12 minutes.

    After they are fully baked, let them cool off completely. Then, roll the cookies in the powdered sugar substitute.

    Now they look like snowballs!

    These jolly little cookies are so much fun to eat! They are the perfect thing to serve at holiday parties.

    Ingredients

    • 2 cups almond flour
    • ½ cup butter unsalted and softened
    • ⅓ cup Swerve confectioner sugar substitute
    • 1 teaspoon Vanilla extract
    • ⅔ cup pecans chopped

    Instructions

    • Add the butter and ⅓ cup sugar substitute to a mixing bowl and beat until creamy and smooth.

    • Roll the dough into 24 evenly sized balls, and freeze for 30 minutes.
    • Preheat the oven to 350 degrees and bake for 10-12 minutes until the bottoms are browned.

      Taste very much like the original. First time I made them I misread the recipe and used regular sugar substitute and they really had a "chemical taste". The second time was as the recipe called for and they were very delicious.

      Do you roll them warm like regular snowballs, or do you wait until they’ve completely cooled to roll them in swerve?

      The recipe says both. You might want to correct it.

      All I can say about these powder balls is that they are dangerous! I love Mexican wedding cookies but couldn't have them since switching to keto. Took a chance on this recipe and oh my goodness are they delicious. Normally only make these for holidays but these are going to be a keeper in my freezer at all times.
