    I don't know about you but I think it's amazing to come home to a 'ready to eat' meal like this delicious crockpot cheeseburger soup! This warm keto soup recipe is so simple to prepare. Just prep the ingredients in the slow cooker before leaving.

    Low Carb Cheeseburger Soup For A Cold Winter Night

    The weather is still not warm enough to go without a jacket. But last Saturday was sunny and warmer. It was a great day to be outside!

    It definitely got me in the mood for a delicious cheeseburger. That is how I was inspired to make this keto-friendly version in soup form.

    I decided to take my daughter to the park. So before I left, I added all of the ingredients for this cheeseburger soup into my crockpot. Then, I let it cook while we were enjoying some fresh air outside.

    This soup recipe is definitely one of those 'dump and go' crockpot soup recipes. I have to say that it really does make my life easier as well as sticking to my low carb diet!

    Ingredients Needed For Homemade Cheeseburger Soup

    This recipe combines the ingredients of a juicy cheeseburger and a warm winter soup. All of the exact ingredient amounts are in the printable recipe card at the bottom of this post!

    Ground Beef

    For this cheeseburger soup recipe, I decided to use some lean ground beef. You can also swap out the ground beef for some lean ground turkey, venison, or pork. You could even do a mix of them!

    Cauliflower

    While researching on how to make this soup keto-friendly, I realized many people used potatoes as the starchy element. So I swapped that out with cauliflower florets, since it is one of my favorite low carb vegetables.

    Dairy

    For the cheese, I went with shredded cheddar cheese but you can easily swap it out and use whatever cheese you like. I just found that one to have the best flavor and it melts well.

    I also used some sour cream to really make this cheeseburger soup creamy!

    Liquid

    I used a beef broth to really enhance the ground beef flavor.

    Seasonings

    To make this soup really flavorful, I added dried basil and parsley along with some salt and pepper and that was enough!

    Quick Tips:

    • Want to make this soup vegetarian? You can swap out the ground beef for a plant-based option like Beyond Beef and the beef broth for veggie broth.
    • Fresh or frozen? For this recipe, it doesn't really matter if you use fresh or frozen cauliflower. It will soften all the same as the soup cooks down.

    But first, I wanted to share some step-by-step pictures first so you can see how I made this yummy low carb cheeseburger soup.

    All you need to do is simply layer the ingredients out in the crockpot.

    I started out with the ground beef, followed by veggies, cheese and lastly the cauliflower. I told you it was that simple!

    Let the soup cook for a few hours in the crockpot and then enjoy!

    You are seriously going to love this recipe! Before I get to the printable card next, I wanted to answer some questions people ask about cheeseburger soup.

    What burger toppings can I add to this soup?

    To sometimes surprise my family, I'll cook up a couple of slices of bacon and crumble it up on top of the soup before serving. They love it!

    You can also add:

    • Extra shredded cheddar cheese
    • A dollop of sour cream
    • Diced dill pickles
    • Chopped tomatoes
    • A few dashes of hot sauce

    I don't have a crockpot. Can I make this cheeseburger soup on the stovetop?

    Yes! This could be made on the stovetop if you don't have the time to wait for the slow cooker. But, I really like letting the crockpot do the cooking while I go out and do other things.

    How long does cheeseburger soup last in the fridge?

    You can store this soup in the fridge for up to 4 days in an airtight container.

    Can I freeze this cheeseburger soup?

    Since this is a dairy based soup, I do not recommend freezing it. The dairy with separate from the soup and just leave you with a weird texture and flavor.

    If you want to meal prep it, cook all of the ingredients together and just leave out the dairy products. When you are ready to eat, heat up the soup and add of the cheese, sour cream and milk.

    Keto Crockpot Cheeseburger Soup- Perfect For Dinner!

    Some people may see soup as comfort food that's just for cooler weather. But, we love to enjoy soup year-round. Seafood chowders are especially popular in New England during the summer months!

    After I came back from the park with my daughter, I got to relax with a cup of crockpot cheeseburger soup. It was just as delicious as it smelled!

    The crockpot cheeseburger soup ended up being a winner with my family. So, I'll certainly be making this recipe again.

    I will say- Using the crockpot is a great way to get dinner ready early so you can come home and relax with a comforting meal. I do need to get better at doing meal prep the night before and setting up the crock pot before leaving for work. I'm just always too rushed in the morning to do much!

    Ingredients

    • 1 tablespoon olive or avocado oil
    • 4 cloves garlic
    • 1 small onion chopped
    • 1.5 pound lean ground beef
    • 2 cups diced celery about 8.3 oz
    • 1 teaspoon dried basil
    • 1 teaspoon dried parsley
    • 32 ounces beef broth
    • 2 cups cheddar cheese shredded
    • 1 ½ cups almond milk
    • ¼ cup sour cream
    • ½ teaspoon salt or to taste
    • ¼ teaspoon pepper or to taste
    • 1 pound cauliflower florets fresh or frozen

    Instructions

    • Cook garlic and onion in skillet with hot oil until fragrant.
    • Add ground beef and cook until browned. Remove from heat and drain oil (if needed)..
    • Transfer cooked beef into a 4 or 6 quart crock pot. Add remaining ingredients
    • Stir to combine ingredients. Cook on low 4-6 hours.

        Half and half is a bit heavy so you may want to use a little water with it, but it's fine to use.

      I had made this last two winters and into spring. I had forgotten about it till I saw cauliflower on sale . My youngest loves cauliflower so I tripled the recipe as he and dad both take for lunch. There have been times I used cream cheese also to thicken as only had vanilla almond milk and it was still devoured. I love that I can do in morning and come home to it. Thank you again. I also have used different cheeses to use what I had on hand and added spinach too on leftovers.

      I am sensitive to the sugar alcohols in the cauliflower, so I didn't add it to the soup. I made cauliflower rice so i could adjust the amount of it I eat. I added the rest of the soup to the 'rice' when I ate it. DELICIOUS!

      Hi, I have this going in the crock pot now. We didn't have sour cream so we subbed cream cheese. I hope that will be ok. Seems good so far. Wondering if you have suggestions for low carb ways to thicken the soup? Kids are used to a baked potato type thickening...this is thinner. I tried pureeing a little of the soup and mixing it in...but I'm not sure if that's going to do it.

        You can puree some cauliflower as a thickener or add xanthan or guar gum. Using cream cheese should also help thicken the soup.

      Tried this recipe in my instant pot and it was very good! Not super creamy but that can be adjusted, if desired. I did add some chopped curly kale for an extra boost of nutrition. My husband loved it. I'd make this again. Thank you.

      I don't understand the serving size when grams are used. Is a serving about a cup?

        It does equate to about a cup. The grams are based on the ingredient amounts. It's a more accurate way to represent the serving and provide nutritional data.

          I don't understand all this nutritional value stuff i just started doing low carbs 20 net grams or lower but for an example with this soup how Sri i know how many net grams are in entire recipe? I see some recipes you have posted says 2 net grams for one slice ect i get that but when it comes to serving sizes for other recipes i don't understand like this one and the spaghetti squash recipes ect can you help me?

          To get net, you just subtract fiber.

      Can you taste the cauliflower in this? My kids and I are not huge cauliflower fans, so I'm a bit skeptical. Otherwise, I love CB soup!

        You could puree to hide the cauliflower. I don't think it has a big cauliflower taste, but the kids might recognize it.

        Almond milk used is always unsweetened when used in low carb recipes! I never touch the sweetened stuff. There's no need to sweeten it. Tastes great without.
