    Air Fryer Mushrooms (Low-Carb + Keto)

    Ingredients needed

    Here's everything that goes into my fried mushrooms:

    Mushrooms

    The base of this recipe is a pound of halved mushrooms in any variety you prefer - they are all keto-friendly!

    From shiitake mushrooms to lobster mushrooms – each variety offers a unique flavor.

    Olive oil

    Olive oil adds great fat content and flavor to this side dish.

    Soy sauce

    A bit of soy sauce pairs well with the equally umami mushrooms.

    Opt for gluten-free soy sauce or tamari to keep things gluten-free and low-carb. Worcestershire sauce will also do!

    Fresh rosemary

    While dried herbs are great in a pinch, there's nothing quite like the flavor of fresh herbs!

    Fresh rosemary adds a woodsy, complex flavor to this dish.

    Salt

    I add a bit of salt to these mushrooms as a flavor enhancer; it makes every ingredient taste better!

    Air fryer tips

    • For the most flavorful air-fried mushrooms, marinate your mushrooms for an hour before cooking.
    • While marinating, stir your mushrooms a couple of times to ensure each mushroom is coated.
    • Store leftover air fryer mushrooms in an airtight container in the refrigerator. To reheat, just pop them back in the air fryer for a few minutes!

    How to make air fryer mushrooms

    Here's how to cook mushrooms –  air fryer style!

    Step 1: Cut mushrooms

    First things first – clean mushrooms by gently removing any dirt with a paper towel. Cleaning mushrooms using water wrecks your flavor potential, as the mushrooms will soak that water right up! 

    If you're working with smaller mushrooms like button or shiitake, half them and set aside.

    For larger varieties like portobello, acorn, or lobster mushrooms, chop them into bite-sized pieces.

    Step 2: Prep marinade

    Next, prepare your marinade by adding olive oil, soy sauce, salt, and sprigs of fresh rosemary to a mixing bowl.

    Mix your ingredients to combine.

    Step 3: Marinate mushrooms

    Now, add your prepped mushrooms to the marinade, tossing until each piece is well coated.

    I suggest you marinate your mushrooms for at least 15 minutes, preferably an hour, for the most delicious flavor.

    Step 4: Air fry mushrooms

    As your mushrooms are marinating, go ahead and preheat the air fryer to 380°F.

    When ready, add your marinated mushrooms to the air fryer basket, ensuring the pieces aren't overlapping; this is going to give the mushrooms the best texture.

    Air fry the mushrooms, shaking the basket halfway through cooking time for an even cook.

    I suggest you check your mushrooms intermittently the first time you make this recipe. Different air fryers and mushroom types will cause small variations in cooking times.

    Step 5: Garnish and serve

    You'll know your air fryer mushrooms are done when they're tender and golden brown.

    Then, remove them from the air fryer basket and garnish with a squeeze of fresh lemon juice and rosemary.

    How to serve air fryer mushrooms

    These air fryer mushrooms make a delicious side dish. Serve them with light proteins like keto grilled salmon, baked cod, or salmon loaf with dill white sauce.

    They also pair swimmingly with chimichurri flank steak!

    As an appetizer, serve air-fried mushrooms with lemon wedges, fresh parsley, and a drizzle of low-carb dipping sauce like creamy avocado sauce or chimichurri sauce.

    Finally, try these air fryer mushrooms as an umami topping to baby kale salad with avocado, homemade fettuccine alfredo, or ramen shirataki noodle soup.

    Variations

    • Feel free to play with herbs and spices to fit different dish pairings. Experiment with yummy additions like garlic powder, onion powder, chili flakes, fresh basil, and thyme.
    • Make keto breaded mushrooms by rolling your marinated mushrooms in pork rinds before air frying.
    • Create garlic mushrooms by air frying mushrooms in fresh minced garlic, garlic powder, salt, and parmesan cheese.
    • Air fry crispy mushrooms by raising the temperature. Then, use them as a crunchy topping to soups and salads.
    • Use any kind of mushroom you prefer for endless flavors and textures! Try portabella mushrooms, acorn mushrooms, shiitake mushrooms, and more.

    While air fryer recipes have the power to make food super crispy without added fats, my air fryer mushrooms still have a good fat content. This comes from olive oil, having about 14 grams of fat and 1.9 grams of saturated fat per tablespoon.

    Ingredients

    • 1 pound mushrooms any variety you prefer halved
    • ½ teaspoon salt adjust to taste
    • 2 tablespoons olive oil
    • 1 tablespoon soy sauce

    Instructions

    • If the mushrooms are too large, you can cut them into bite-sized pieces.
    • In a bowl, combine the olive oil, soy sauce, and a few sprigs of fresh rosemary. Mix well.
    • Add the mushrooms to the marinade and toss until they are well coated. Allow the mushrooms to marinate for at least 15 minutes or up to 1 hour to enhance the flavor.

    • Once the mushrooms are tender and golden brown, remove them from the air fryer and garnish with fresh rosemary.
