My husband loves growing squash each year in the garden. And this year, we had a nice crop of zucchini. He also planted spaghetti squash so I had a nice supply of vegetable noodles.

I made a low carb chocolate cake and zucchini bread for a couple summer potlucks. But I also wanted to make an easy dish with zucchini and spaghetti squash that I could enjoy for lunch.

It only took a little homemade low carb Alfredo sauce to turn the veggies into a meal. And for something a little heartier, I added in some deli chicken and ham.

In the past, I’ve used this recipe to make a simple sauce while following an egg fast diet plan. However, I wanted to make a larger batch with heavy cream which is typically avoided while egg fasting.

    Ingredients used

If you’ve never made your own white pasta sauce, you’ll be surprised how easy it is. You can make a simple cream sauce with butter, heavy cream, parmesan cheese, and cream cheese. Those are the four basic ingredients I use to make homemade keto Alfredo sauce.

I like to add a few more ingredients to mine to enhance the flavor. For me, garlic is one of the best seasonings ever so I add in a few freshly minced cloves. I also add in a few shakes of fresh ground black pepper.

There's very little preparation needed to make homemade sauce. And, it’s much better to make it yourself because commercially prepared ones always contain unnecessary ingredients that up the carbs.

Note: You’ll find the full list of ingredients to make this low-carb dish with amounts used in the recipe card at the bottom.

How to thicken the sauce without flour

To keep the sauce low carb it needs to be made without flour. Traditional sauces use a mixture of flour and fat known as a roux. However, cream cheese can be used instead to make the sauce thicker and creamier.

How to make Alfredo sauce keto

I love this recipe because it’s quick and easy to make. Once the butter is melted in a medium saucepan over low heat, stir in some minced garlic until fragrant. I add in two cloves, but more or less can be added to taste. Garlic powder can also be added if you don’t have fresh.

    adding cream and cheese

Stir in cream cheese, heavy cream, and parmesan cheese after the garlic is fragrant. Then allow the sauce to simmer for about ten minutes or until it thickened. Sprinkle in salt and pepper to taste before serving.

    Carbs in the sauce

This keto friendly alfredo sauce recipe makes about four cups of sauce. It’s plenty to serve sixteen people if you use about ¼ cup per serving. It’s a very filling sauce with about 28 grams of fat and only 2 grams of net carbs per serving.

Tips for keeping the sauce creamy

A common problem with homemade Alfredo sauce is that it can separate. The reason this happens is usually because the temperature was too high. When preparing the sauce, keep the liquid below a simmer and do not allow it to boil.

    Serving Suggestions

The best way to serve this creamy sauce is over low carb noodles like:

    • Homemade keto noodles are perfect for fettuccine alfredo!
    • Spiralized zucchini is easy to prepare at home or purchase fresh or frozen in most markets.
    • Crockpot spaghetti squash or Instant Pot spaghetti squash are two ways to prepare easy vegetable noodles
    • Shiratake pasta is another great option that has close to zero net carbs.

You can even add in some meat like cooked chicken breast or ham cut up into bite-sized cubes. A couple family favorite dishes with low carb Alfredo sauce are spaghetti squash shrimp Alfredo and a chicken alfredo casserole.

    Storing leftovers in the refrigerator

Serve this cream sauce immediately for best results. But since this recipe makes over a dozen servings, you might want need to stash some away for later.

If you’ll be using it up within a week, you can go ahead and store it in an airtight container in the refrigerator.

Reheating is easy. Just reheat it on the stove on low to medium heat. Or, you can warm it up in the microwave. Just be sure to use a low power so the sauce does get too hot and separate.

The sauce tends to thicken more after being chilled. If you need to thin out the sauce, add in a little more cream and or water as needed.

    Can you freeze Alfredo sauce?

For longer storage, store the sauce in the freezer for up to 3 months. Just make sure you place it in an airtight container with as much air removed as possible.

I like to use reusable silicone zipper bags. They are much more economical and environmentally friendly than disposable plastic bags. But you can also use a freezer safe containers made of glass or plastic.

oh my gosh! I was feeling a little blue today and just wanted something decadent for lunch. I am a diabetic so I watch my carbs and sugar. This was so good with zoodles. I did what was suggested and just warmed them in the microwave. It was wonderful. It was a tad thin for me so, poor me, I had to add a little more parmesan. I always have the ingredients on hand. I have a little dinner party coming up and this along with baked chicken breast is now the menu. Thank you so much for the recipe.

Amazingly easy and super delicious! My partner said It was the best alfredo sauce he'd ever had. I did increase the amount of garlic quite a bit, because I am a garlic fiend. I also added a couple of shakes of nutmeg at the very end of cooking. This is definitely a KEEPER!!!

Can I ask if you don't have fresh garlic, can you possibly use either garlic powder or mixed garlic? And if so, what would you recommend for measurements? I understand you didn't make it this way, but I'm in a pinch, and I know I have garlic powder (not garlic salt), and might possibly have a jar of minced garlic.
          Thank you

One clove of garlic is equivalent to about 1/4 teaspoon powder. For minced garlic, I usually go with the conversion of 1 teaspoon minced for every clove. Hope that helps!

You could use coconut cream or thicken up a low carb milk.

Homemade Alfredo is one of my favorite things to make and it's really quite simple (when you have the ingredients). I'm going to try it tonight with either powdered garlic or hopefully just minced garlic in the jar (not sure if I have minced though). I don't use a ton of garlic because I tend to get really bad heartburn from it, but not usually when I make Alfredo.... thank goodness!

Delicious recipe but don't heed the advice about microwaving the veggies- NEVER microwave your food. Simply spiralize your zucchini and heat it in a skillet until starts to release water, then put it in a colander until ready to use.

Hi, I have a serious problem! When I put your recipe into MyFitnessPal, it came back reading over 40 grams of Carbs!!! I ate it before I entered. I know that those ingredients don't add up to many carbs at all much less 40. Have you heard of this happening? I even went back to check the recipe, it was exactly the measurements and the serving sizes you suggest. This throws everything off for me. Do you know how I can fix it? The recipe turned out great though ? I used it over zoodles mixed with HEALTHY NOODLES which are 1 net carb/serving

You need to check the ingredients that were picked. A lot of those are WAY OFF in MFP. I entered the recipe and the macros for the parmesan cheese were wrong.

It can be higher if the food is coming from Europe, as they deduct fiber from the total carb count and list it separately. So if it's a European label, the carbs list are net.
