    This syrup recipe is completely sugar-free, making it the perfect sweetener of choice for those on the keto diet. The cinnamon flavor pairs well with so many drinks and is the best way to sweeten them without the usual brown sugar.

    I especially love to make this homemade cinnamon dolce syrup to make fun, seasonal drinks. It helps me to transform my homemade beverages into Starbucks copycats! And since it's homemade, I of course know exactly what I'm putting into it!

    If I were to choose a seasonal syrup that everyone should make this time of year, it would be this sweet and slightly spicy homemade syrup!

    Ingredients

    This sugar-free cinnamon dolce syrup is simply delicious, perfect for adding to all kinds of treats! It is very easy to make and only needs a few ingredients.

    Water

    You will need a bit of water for the liquid in this recipe. It will help the sweeteners to dissolve and create a sticky syrup perfect for pouring.

    Swerve Brown Sugar Substitute

    This brown sugar substitute gives this syrup the caramel-like flavor that traditional brown sugar has. It also gives the syrup that signature deep color as well as helps to enhance the flavor of the cinnamon.

    Swerve Confectioners Sugar Substitute

    Most of the sweetener in this recipe is the swerve confectioners sugar substitute since we do not want the syrup to taste too much like brown sugar. We still want the sweetness to stay fairly neutral to allow the cinnamon flavor to shine through.

    Vanilla Extract

    Just a touch of vanilla extract gives this cinnamon dolce syrup recipe an extra depth of flavor. In my opinion, vanilla extract makes whatever you add it to taste even better!

    Cinnamon Sticks

    Cinnamon sticks are what I used to give this syrup that traditional cinnamon flavor. You will want to use fresh cinnamon sticks that are still very fragrant and spicy.

    For a stronger cinnamon syrup, you can break up the sticks to release more flavor!

    You could use ground cinnamon in place of the sticks, but I prefer the clean taste from the sticks way better. If your only option was ground cinnamon, then start out by replacing the sticks with a ¼ teaspoon, and increase that amount until you reach peak cinnamon flavor!

    Instructions

    This sugar-free cinnamon dolce syrup is amazingly easy to create and doesn't take too much hands-on time. For the full recipe and list of instructions, scroll to the recipe card at the bottom of the page.

    But first, some tips to make this sweet syrup!

    Combine Ingredients

    Start by adding all of the ingredients except the vanilla extract into a pot, and set it on the stovetop at medium-high heat. Within a few minutes, the sugar dissolves and its time for step 2.

    Heat Cinnamon Dolce Syrup

    Next, stir the ingredients to combine as the mixture heats up. Then, take it off of the heat just before it starts to boil. The syrup should be able to evenly coat the back of a spoon.

    Remove the pan from the heat and add the vanilla extract, stirring to combine.

    Let It Cool

    Now that your syrup is made, you will need to allow it to cool down so that it can thicken up. Let the syrup sit out at room temperature for an hour until it is considerably thicker.

    Once cooled, pour the syrup into an airtight container and store it in the fridge. It will stay fresh for up to 10 days.

    Serving Suggestions

    This syrup is a delicious way to sweeten all kinds of treats, like drinks and breakfast items.

    It is strongly flavored with cinnamon and has a touch of spice to warm things up. I use it all the time to make cinnamon dolce latte at home, but it would taste amazing added to a pumpkin spice latte or a chai masala tea too!

    You could also drizzle this syrup over the top of some almond flour pumpkin pancakes or keto cinnamon waffles.

    You can add this syrup to anything that could benefit from a touch of cinnamon and some extra sweetness!

    Yes! Most sugar-free syrups are keto-friendly since sugar is the main culprit of carbs. This isn't always the case, so if you are buying a sugar-free syrup, make sure to check the ingredients.

    Even though it is very easy to make this syrup on the stove, you can still make it in a microwave if you prefer. A microwave is going to heat it up much faster, so you will need to keep a close eye on it. If you don't, it could burn or boil over.

    Heat it up in 30-second intervals until it coats the back of a spoon. Then, leave it to cool as the recipe states.

    Ingredients

    • 1 cup Water
    • ⅔ cup Swerve brown sugar substitute
    • ⅓ cup Swerve confectioners sugar substitute
    • 1 teaspoon Vanilla extract
    • 2 Cinnamon sticks

    Instructions

    • Place the water, brown sugar substitute, confectioners sugar substitute and cinnamon sticks into a saucepan over medium high heat on the stove.
    • Whisk to combine, and heat until just before boiling. The mixture should thicken enough to lightly coat the back of a spoon that is dipped into it.
    • Remove the mixture from the heat and stir in the vanilla extract.
    • Let the mixture sit for 1 hour to thicken.
    • Remove the cinnamon sticks and store the mixture in an airtight container in the fridge for up to 10 days.

    Notes

    To speed things up, the syrup can be made in the microwave. Just heat in 30-second intervals in the microwave until it coats the back of a spoon. Then, let it cool.

      No mention was made of the fact that this syrup separates and turns into rock candy at the bottom. Is there anything that can be done to prevent this?

        Linda you're iver cooking it if it's going hard. You only need to simmer for 1 to 2 mins and then set aside

          It should last up to 2 months at room temperature. For longer storage, it should keep for up to 6 months in the refrigerator and slightly longer in the freezer.
