    Keto Cucumber Tomato Salad With Vinegar

    This keto cucumber tomato salad recipe is an easy way to serve popular summer garden crops. The combination of apple cider vinegar and stevia comes together for a simple, yet unforgettable dressing!

    The end of the summer always brings in an abundance of garden vegetables. But, what do you do with them all? Freeze them? Cook them all? Give it away?

    I personally like to repurpose the veggies as much as I can. For example, with cucumbers, I like to make:

    • Creamy Cucumber Dill Salad
    • Baked Cucumber Chips With Salt and Vinegar
    • Cucumber Sandwiches With Cream Cheese

    I also love to make this simple cucumber tomato salad! I like to use up some of the late summer vegetables where I can. I'll keep adding more veggies to the bowl as I pick them from the garden.

    For me, this dish is like a never-ending salad. The vinegar preserves the vegetables so they will last longer in the refrigerator.

    I'm am thrilled to share this recipe with you, as the beauty is in its simplicity. In fact, it is such an easy recipe that you'll have it memorized after making it one time.

    Ingredients Needed For Cucumber Tomato Salad Recipe

    There are two parts to this recipe - the vegetables and the dressing. The ingredients are all really easy to find in the grocery store.

    Vegetables

    The only two vegetables I used in this salad are tomatoes and cucumbers. Even though I think that garden-fresh vegetables taste the best, I believe this salad can taste just as delicious all year long.

    If you like onions, go ahead and add them to the salad, but it will increase the carb count.

    Keto Vinegar Dressing

    This is a very basic salad dressing! I used apple cider vinegar, Stevia packets, and salt and pepper.

    If you don't have apple cider vinegar, you can replace it with white vinegar or red wine vinegar.

    If you want to add some fresh herbs, dill and basil will have the sweetest and best flavor.

    Quick Tips:

    • Make the dressing and keep it in an airtight container, then add the cucumbers and tomato slices. As the amount of veggies gets low, just add more to the container.
    • You do not need any oil in this dressing. Just vinegar, stevia, salt, and pepper.
    • Use any type of tomatoes in this salad - large garden tomatoes, cherry tomatoes, or even grape tomatoes.
    • You do not need to peel the cucumbers, but it is an option if you don't like eating the peels.

    How To Make Cucumber Tomato Salad

    All of the exact steps are in the printable recipe card at the bottom of this post. First, I have some extra tips I want to share with you.

    Slice The Veggies

    The very first step is to rinse and slice your vegetables. Since this is a raw veggie salad, you don't have to worry very much about chopping them the same size. Just roughly slice them.

    If you want to quickly peel the cucumbers, then feel free to do it before you add the dressing. It's safe to eat cucumbers with the peel on, so this is all a matter of personal preference.

    At this point, you can add different vegetables as well. Just remember that every vegetable you add will increase the number of carbs in the salad.

    Make The Dressing

    Now it is time to make the salad dressing. This is very simple!

    Just add all the ingredients to your large resealable food container and whisk all the ingredients. Make sure the sweetener, salt, and pepper dissolve and combine with the vinegar.

    Store The Salad

    Add the cucumbers and tomatoes to the bowl that has the dressing in it. Stir it so that all the vegetables are completely covered in the salad dressing.

    Seal the container tightly and store it in the refrigerator. It will last about a month, but you will probably eat all the cucumbers and tomatoes before then!

    What To Serve With Cucumber Tomato Salad

    Even though you can eat this salad any time of year, it is the most popular in the summer, when the cucumbers and tomatoes are ripe in the garden. That's why I usually prefer to eat it with other typical summertime meals, like grilled foods.

    Some of my favorite keto food that tastes amazing with this salad is Puerto Rican grilled chicken kabobs or keto BBQ pulled chicken. You could also just grill some burgers and your favorite veggies - then you'll have a wonderful feast!

    What are some other ways to use garden-fresh tomatoes?

    There are lots of different ways you can use the tomatoes you grow in your garden. Some people love to can theirs, but I never seem to have the time for canning.

    Instead, I just skin the tomatoes, vacuum-seal them and store them in the freezer to use later.

    Tomatoes are also perfect for making low-carb marinara sauce or homemade pizza sauce.

    How many carbs are in cucumbers?

    As for the cucumber, my husband and son love to eat them as snacks. I don't think you can ever have enough cucumbers.

    There are about 4 grams of carbs total in a cup of sliced cucumbers. So, there's no reason not to enjoy them on a ketogenic diet.

    What are some easy ways to eat cucumbers?

    Sliced cucumbers make a fantastic low-carb sub for chips. I like to dunk them in a homemade ranch dip.

    You can also make baked cucumber chips in the oven. They are very low in carbs and make terrific keto chips.

    I also like to make cucumber salads over the summer. My favorite one has a vinaigrette dressing. I also like this creamy salad and this Japanese-style cucumber salad.

    You really can't go wrong with a light cucumber tomato salad. It's a perfect dish to take to a summer potluck or bring along for a picnic.

    And, cucumber slices can be pickled as well. That way, they are ready to serve with those grilled burgers over the summer.

    • 2 medium tomatoes cut in wedges
    • 2 large cucumber sliced
    • 1 cup cider vinegar
    • 2 cups water 16 fluid ounces
