    Keto Raspberry Vinaigrette Salad Dressing

    I don't know about you, but every time I pass by the salad dressing section of the grocery store, my eyes go right to the fruity flavors - especially raspberry.

    I just love using vinaigrettes on my salads (like this strawberry spinach salad)!

    There is something amazing about the combination of sweet and tart. It's almost as though the vinegar tempers the natural tart and sweetness of the fruit.

    Unfortunately, every time I thought I found a keto-friendly dressing, I'd read the nutrition label and feel disappointed. When you are tracking your macros, it's not worth it to indulge in too many carbs in your salad dressing.

    So, I decided that I'd just make my own!

    It turns out when you puree fresh raspberries, they still have lots of fiber which decreases how many net carbs they have. Plus, using fresh raspberries gives the vinaigrette a more robust flavor profile.

    This dressing has so many interesting layers to it. I bet this will make you enjoy salads again!

    Ingredients Needed For Raspberry Vinaigrette Dressing

    From the bright zing of the fresh lemon juice to the sweet flavors of plump raspberries, this dressing is going to become one of your favorites.

    All of the ingredients are fresh and whole ingredients. It is packed with fiber and so many nutrients that your body is going to love it.

    Here's what you need:

    Olive Oil

    My favorite type of oil to use in salad dressings is olive oil. It has a very light flavor so that what you taste are all the other ingredients. The type of olive oil - whether extra virgin or extra light - isn't as important.

    I have heard of people using avocado oil instead of olive oil as well. It does have a different flavor that might alter the taste of the dressing.

    Lemon Juice

    Fresh-squeezed lemon juice from ripe lemons always has the best flavor. Jarred lemon juice will work as well, but always try to use fresh-squeezed juice if you have it.

    Mustard

    You only need a small amount. Feel free to use your favorite type of mustard! I really enjoy the bold flavor of dijon mustard in my salad dressing.

    You can also just use yellow mustard or spicy brown mustard too.

    Sweetener

    The best keto-friendly sweetener to use in salad dressing is sugar-free honey. It binds all of the ingredients together and brings out the natural sweetness of the raspberries.

    Vinegar

    White wine vinegar has the best combination of sweet and tart that makes this an impeccable raspberry vinaigrette. White distilled vinegar or apple cider vinegar will both work as well, but white wine vinegar is the best!

    Raspberries

    Since you are going to puree the raspberries, you can use either fresh or frozen ones. If you use frozen raspberries, allow them to thaw first. Otherwise, you will be making a smoothie instead of salad dressing.

    Quick Tips:

    • If you don't have a food processor, you can use a blender instead. As long as it purees the ingredients, it will work just fine.
    • Add more lemon juice if you want the vinaigrette to have a thinner consistency.
    • Store it in a mason jar with a lid. This way you can give it a nice shake before you use it. It might separate, so shaking it will combine the ingredients again.

    How To Make Low-Carb Raspberry Vinaigrette

    This is an incredibly simple recipe to make. In fact, it might just be easier than driving to the store to buy some.

    Use A Food Processor

    The easiest way to puree all of the ingredients is with a food processor or a blender. You can even use a single-serving blender too.

    Nothing else will give it the same creamy texture.

    Add Raspberries First

    Whenever you make a puree, always add the heaviest ingredients first. In this case, it is the fresh raspberries.

    Puree Until Smooth

    Then, add all the other ingredients on top. Pulse or puree everything until it is as smooth as you like it.

    What To Serve With Raspberry Vinaigrette

    My favorite way to use this dressing is on top of a chopped salad with kale, arugula, and baby spinach.

    Since it is so sweet, serve it with something savory and salty - like beef tenderloin with herb garlic butter. It will also bring out the bright flavors of baked cod because it also uses fresh lemon juice.

    Is raspberry vinaigrette keto-friendly?

    Typically, the raspberry vinaigrette you buy in the store will not be keto-friendly. Most jars will have too much sugar and carbs in them.

    My homemade recipe only has 2g net carbs in each serving, so it is definitely keto-friendly!

    How do you store homemade salad dressing?

    Since it has a tendency to separate in the refrigerator, I like to store it in a mason jar with a lid that seals tightly so that I can easily shake it up when needed.

    It will stay fresh for up to 30 days.

    Can you use this as a marinade?

    Yes, this recipe makes a fantastic marinade! Use it on light types of meat, such as pork or chicken. For the best results, allow the meat to soak in the marinade overnight.

    • 1 C. Fresh raspberries

      I am confused. You are writing in the article "It will stay fresh for up to 30 days" but in the recipe you wrote "Store covered in the refrigerator. Keeps for 3-4 days." Could you please clarify what is the shelf life of the dressing?

        It should keep for 30 days in the refrigerator as the lemon and vinegar act like a preservative. But I typically use it up within 4 days.
