    Next time, just whip up a batch of this easy low carb coleslaw! It takes less than 5 minutes to prep, and you only need 5 ingredients.

    Plus, it stays fresh in the refrigerator for up to a week. You can have it ready to go any time you want a creamy, tangy, refreshing side with your summer dishes.

    Most restaurant or store bought coleslaws have added sugar in the dressing. This recipe replaces that sugar with low carb sweetener for a similar taste without the sugar.

    Carrots also increase the carbs in coleslaw, so I like to leave them out. You’re welcome to add a few if you like, but I don’t miss them.

    This keto coleslaw recipe is one of my summer staples. It’s a great side, but I also eat it plain as a snack. It’s so refreshing!

    How to make keto coleslaw

    This keto coleslaw recipe takes 5 minutes or less to whip up.

    For the easiest prep, you can buy pre-shredded coleslaw mix. Personally, I like to buy a head of cabbage and shred with the grating blade of a food processor. Then, you simply combine the ingredients!

    • In a small bowl, mix together the apple cider vinegar with the stevia (or other low carb sweetener).

    • Add in mayonnaise and celery seed and whisk until a smooth dressing forms.

    • Add the shredded cabbage to a large bowl or serving platter.

    • Pour the dressing over the shredded cabbage and toss until all the cabbage is well coated.

    Your coleslaw can be eaten right away, but it’s better if you can chill it first. I recommend putting it in the fridge for a couple hours before serving.

    What’s more keto friendly, mayo dressing or vinegar?

    This easy keto coleslaw dressing is a simple mix of mayonnaise, raw apple cider vinegar, stevia, and ground celery seeds. I think the mayo gives it just the right amount of creaminess.

    However, some people prefer to make coleslaw dressing without the mayonnaise.

    If you want to make a vinegar coleslaw dressing, just omit the mayo and use a little more vinegar. You may also want to add some Dijon mustard for creaminess.

    Both versions are low carb and delicious. In fact, most of the carbs in this recipe come from the cabbage itself, not the dressing. So it’s completely your preference.

    Of course, you want to make sure you’re using a zero carb mayonnaise without any added sugar. My favorite is avocado oil based mayo. It’s also very easy to make my coconut oil mayonnaise right at home. 

    As long as you’re using sugar free mayonnaise, a mayo dressing will not increase the coleslaw carbs.

    Carbs in Keto Coleslaw

    Most of the carbs in this keto coleslaw are from the cabbage. However, there’s no need to worry because they are mostly fiber.

    There is some natural sugar contained in cabbage. Each leaf has about 1.3 grams of carbs of which 0.6 grams are fiber and 0.7 grams are sugar. But that’s not enough to knock you out of ketosis.

    What goes well with keto coleslaw?

    For me, coleslaw and barbeque are a classic pair. 

    I love making this low carb coleslaw recipe to go with my keto pulled pork. If you’re in the mood for sandwiches, serve it up on top of my keto hamburger buns!

    This coleslaw would also be delicious added to my low carb fish tacos. The flavors together will taste so fresh.

    • 4 cups cabbage , finely shredded
    • ¼ cup mayonnaise (preferably avocado oil mayo)
    • ¼ cup cider vinegar
    • ½ teaspoon SweetLeaf stevia drops or 2 tablespoons other sugar equivalent sweetener
    • 1 teaspoon ground celery seed

    Instructions

    • Mix cider vinegar with stevia (or other low carb sweetener) packets.
    • Whisk in mayonnaise and celery seed until smooth dressing forms.
    • Pour dressing over shredded cabbage. Toss to coat cabbage with dressing.

      I am saving this recipe for when I want a change of pace. We always have a bowl of coleslaw in the refrigerator, which I make with an oil and rice vinegar dressing, and herbs - including garlic powder, marjoram, ground sage, a touch of cinnamon and lots of ground coriander. I do a batch in a 2-quart casserole; the dressing is ¾ cup water, ¾ cup rice vinegar, and ¼ cup avocado oil, plus the herbs and spices. This recipe has gone through many iterations over the years, and one of the things I like about the current recipe is that diluting the vinegar gets rid of the need for sweetener.

      This recipe looks great .. except for the sweetener. Is it usual to put stevia in a coleslaw? It's not something I've seen in the UK, but I'll definitely try the recipe (without anything sweet)! =)

        Here in the US, the dressing is usually sweetened just a little to offset the vinegar.

      We increased the mayo by a couple of tablespoons, and added another squirt or two of liquid stevia. Also, a couple of dashes of kosher salt. Ended up very tasty for our fish tacos.

          I love this recipe! I am making it for the 2nd time this week. I serve a big scoop over top of my regular spring greens salad that I eat each day. This time I am experimenting with using the regular green as well as purple cabbage. I love the thinner consistency of this dressing and the tanginess of the ACV. I am doing Keto/OMAD so building giant salads with lots of flavor and good fats are important to me. I use 1.5 tablespoons of the Lakanto Brown sugar for sweetener (monk fruit). It dissolves nicely without grittiness.

      1/4 cup cider vinegar is quite a bit and makes for some really tart close slaw. Is this correct?

        Yes, I just made it without reading your comment. It was very tart and not at all creamy as I am accustomed. It was good but I like sour. For my family, I added more mayo and a bit more sweetner as well as some pepper.
