    The ingredients in this ground turkey cauliflower casserole are pretty simple. In fact, you might just have all of them in your refrigerator or freezer right now.

    Here's a bit more information about what I used!

    Ground turkey

    This ground meat has a really light flavor that allows the cheesy sauce to have the boldest taste.

    Cauliflower rice

    I used an entire head of cauliflower to make my own fresh cauliflower rice. If you want to save yourself time, use some frozen cauliflower rice.

    Seasonings

    In addition to the freshly ground black pepper and salt, you'll also need some garlic powder and onion powder.

    Heavy whipping cream

    You will also need some heavy whipping cream in order to make the sauce thick and creamy. Use full-fat heavy cream for the best results and to keep it low-carb.

    Cheese

    For the shredded cheese, use a combination of cheddar and mozzarella cheese.

    You'll also need some cream cheese. Be sure to use full-fat cream cheese as well for the best results.

    Butter

    Either salted or unsalted butter will work in this recipe!

    Tips

    • Make the cauliflower rice ahead of time. Store the cooked cauliflower rice in the refrigerator for up to three days.
    • Add extra cheese on top. The more cheese you use, the better it will taste.
    • Make it as spicy as you want. My recipe is pretty mild, but it has a lot of room for creativity.

    Instructions

    This ground turkey cauliflower recipe is really simple. Here's a bit more information about how to make it, along with some photos of each step.

    Brown the turkey and spices

    Brown the ground turkey in a large skillet over medium-high heat with a wooden spoon. Keep cooking it until it is completely browned.

    Add the other ingredients

    In the same skillet, stir in the cauliflower rice, cream cheese, butter, heavy whipping cream, ¼ cup cheddar, and ¼ cup mozzarella cheese.

    Pour into a casserole dish

    Pour the turkey mixture into a prepared casserole dish. Spread it out evenly.

    Bake the casserole

    Sprinkle the rest of the cheese on top. Then, bake uncovered for about 30 minutes. This is just long enough for the cheese to melt beautifully.

    This ground turkey cauliflower casserole is an entire meal, so you don't really need to add very many side dishes along with it!

    It is an absolutely delicious low-carb meal by itself, but if you want to add something, make a low-carb green beans recipe. The flavors and colors go really well together.

    This will also taste good with some stuffed bell peppers as a side dish!

    Variations

    There are a lot of different ways to change this ground turkey cauliflower recipe. If you make any changes, please let me know how you liked it in the comments.

    Instead of ground turkey, use either ground chicken or ground beef. If you use ground beef, drain the grease really well so that the casserole doesn't come out greasy.

    You can also use olive oil instead of butter.

    Use spaghetti squash in place of cauliflower rice. This change will increase how many carbs your recipe has, and it will give it a different texture, but it will work.

    For a different flavor, add some soy sauce or coconut amino - this gives the casserole an umami flavor that's pretty incredible.

    If you want to increase how much fiber the casserole has, mix in chopped bell pepper.

    Adding tomato sauce will increase the number of carbs, but it will also make it taste slightly sweeter at the same time.

    Finally, garnish with fresh parsley and chopped green onion at the very end.

    No, brown rice and white rice both have way too many carbs to be a good idea on a low-carb or ketogenic diet. This is why I made cauliflower rice and used it instead.

    Store leftover ground turkey and cauliflower rice casserole in an airtight container in the refrigerator for up to three days. After about three days, the quality will begin to deteriorate.

    Can you freeze this casserole?

    Yes, this is a freezer-friendly casserole. Just combine all the unbaked ingredients in a freezer-safe casserole dish and wrap it tightly in aluminum foil.

    Keep it in the freezer for up to six months. When you are ready to enjoy it, let the casserole thaw in the refrigerator overnight. Then, just bake it like normal.

    • 1 pound ground turkey
    • 1 small head cauliflower rice (2 cups)
    • 1 teaspoon garlic powder

      YUM!! So simple but so good! Thank you for this recipe!

      My tweaks were:
      - twice as many veggies; 2 c riced cauliflower/broccoli & 2 c carrot matchsticks.
      - toasted/lightly buttered/cubed 2 slices of keto bread for breadcrumb topping.
      - used only cranberry white cheddar cheese (it was divine!)

      I made this tonight and it was soooo good! My husband and very picky little boys ate it right up. My only question is, how much (ounces or cups) equal one serving? I am keeping track so I want to make sure I get the right amount. Thank you!

        I'd say a serving size is about a cup or more. I just divide the whole pan into six equal servings.

        I made this with a packet each of ground turkey and chicken and a good ½ squeezed lemon and it delicious. This is a keeper for sure and it got me out of a spot as what to use the ground meats I'd purchased without a plan!!

      I am just guessing that you mean we need to prep the cauliflower rice ( as in COOK it ahead of time since I don't think 30 min in the oven will ensure that it is soft)....your pictures seems to show UN-cooked cauliflower rice, so, it doesn't fully convince me.

      I am going to cook it ahead.....I like your recipe though....might add something "green" in the mix...

        You do not need to cook or steam the cauliflower rice. By prepare, I mean to rice it in a food processor if it isn't already riced.

      This was totally delicious! I made a double batch and the only thing I added was a teaspoon of sweet smoked paprika and a teaspoon of hot smoked paprika. We all loved it. This recipe is a keeper! I did use frozen cauliflower rice from Aldi.
