Who doesn’t love an easy, low carb casserole for dinner? Or pizza? Or low carb pizza casserole? Really, that’s the best of both worlds.

Especially if it’s super easy to make.

This isn’t a deep layered dish with pizza toppings; it’s actually a pizza in a casserole dish. Thick, gooey, topped with all your favorite keto friendly pizza toppings…mmm.

There are lots of easy keto pizza crusts out there: cauliflower crust, coconut flour pizza crust, and deep dish pan pizza are some of the most popular. While these are all perfectly tasty and popular with good reason, they all require melting, kneading, and rolling out.

But this one is like none of those other keto recipes; it’s unique and so delicious that you’ll want to bake this yummy dish often. The flavor is so good that even the pickiest eaters in your family will be asking for seconds!

This is also going to be the easiest keto pizza crust you’ve ever whipped up!

    Recipe Ingredients

    • Cream cheese
    • Large eggs
    • Heavy cream
    • Grated parmesan cheese
    • Minced garlic
    • Dried oregano
    • Parmesan, Asiago or Romano cheese (any combination can be used)
    • Mozzarella cheese
    • Low carb pizza sauce
    • Pizza toppings (whatever you choose!)

The crust layer is made in the food processor with a mix of eggs, cream, and a variety of cheeses along with a little garlic and dried oregano seasonings. Doesn’t that sound amazing?

How to make an easy low carb pizza casserole recipe

Because the mixture for the gluten free crust is thin and the baking pan needs to contain the liquid, this must be made in a casserole dish. The sides keep everything on the pizza (or in the casserole, as it were) and -trust me- you don’t want to try this on a pan.

I used a 9×13 casserole pan, but the recipe could easily be doubled to fit into an 18×26 jelly roll pan for a party sized sheet pizza. You could even make this in your favorite cast iron skillet; you just need the sides to support the dough and hold in the sauce and toppings and the rest is easy.

This cheesy dough has such a rich and satisfying flavor to it that you may even find you prefer it to the popular Fat Head dough that so many keto followers rave about.

    pizza baked in casserole pan

    Recipe Instructions

The best part about this gluten free casserole is how much easier it is to make than most low carb pizza dishes. Why? There’s absolutely no need to roll out the dough with this recipe!

Plus, it’s made with regular everyday ingredients. That’s always nice; all too often with keto pizza crusts you need to buy expensive low carb flour or other special ingredients.

The pizza crust used in this recipe is really just a super cheesy omelette. But, with the sauce and toppings added, no one has been able to tell it’s an egg based crust.

Although the other low carb pizza dough recipes are also great, I always go back to this super easy pizza casserole recipe. Why? Because it’s the easiest to make…and the dough has a rich flavor that is second to none. It’s one of our family’s favorite low carb recipes; the kids loved it!

All you do is sprinkle a layer of cheese across the bottom of your baking dish, top it with the egg mixture you blended in your food processor, and bake the low carb “crust.” Once it’s cooked, take it out and build the rest of your pizza.

Simply add your sauce, any toppings, and a final layer of mozzarella cheese to finish off your low carb pizza casserole. Broil until the cheese is bubby and serve!

Crazy easy, right? That’s the beauty of this easy pizza casserole.

    closeup on plate

    The Egg-Free Option

If you have any sensitivity to eggs, this isn’t going to be the best recipe for you, but you can still use the rest of the casserole recipe and use an allergen friendly foundation like this delicious egg-free Fat Head dough.

You can still enjoy the spicy sauce, savory toppings, and melty cheese that make pizza casseroles so enjoyable that way. The egg free dough requires a little more work than this particular low carb pizza casserole dough, but it’s worth it if you’ve got an egg sensitivity!

    Variations

One way to customize this easy low carb casserole dinner is to use different cheeses and toppings. You will want to keep the mozzarella as it gives the crust a good texture, but the others can be adjusted.

A loaded meat pizza casserole topped with chopped up low carb meatballs, pepperoni, chicken, ground beef, and sausage is a traditionally popular choice and very filling.

You could also top it with some of my favorite low carb vegetables: zucchini, mushrooms, olives, peppers, garlic, and spinach are always good with anything pizza.

Garlic, mushrooms, and bleu cheese are another great combination. Or a Caprese pizza casserole topped with fresh basil, tomato slices, and some ricotta and mozzarella. You could even drizzle it with fresh pesto if you have some handy! Margherita style with some oregano and tomato and light cheese on top is also yummy.

Try a Philly-inspired low carb pizza casserole by topping it with peppers, mushrooms, a few onions, and some shaved steak. Or sausage and peppers for a Bronx-inspired flavor.

You can also change up the sauce and turn this basic recipe into a gourmet keto low carb white pizza topped with spinach, bacon, blue cheese, and sliced tomatoes. Roasted garlic would also be yummy on that!

And classic pepperoni is always a winner.

There’s really endless ways to customize this sugar free, low carb pizza casserole recipe; which one will you try first? The keto diet is so delicious!

    • Sheet Pan (for thinner crust pizza)
    • Food Processor
    • Electric Mixer
    • Mixing Bowls
    • Serving Spatula

    Reasons to Love it

Since it is made with simple ingredients, you are sure to enjoy this easy and delicious pizza! The whole family loves this one, even those NOT watching carbs.

    Notes

To sneak in a vegetable, I sometimes grate summer squash, drain it, and add it into the pizza crust. The kids never know it's there!

Made this tonight. It was sooooo good! As close as you can get to the high carb flour crust pizzas as it gets! I’ve tried other low carb pizza recipes and they’ve all been runny/juicy. Not this one! Definitely will be making again. I put fresh sausage, pepperoni and mushroom on ours. Used Rao’s Margherita pizza sauce. Would have liked to add onions and peppers but my husband isn’t a fan.

OK what kind of magic did you create here? This is AWESOME!!! I have had just about every conceivable GF Keto pizza out there and this hands down is THE BEST!!! Not only does it taste great but it's easy too. I love the cheese *base* that gets all nice and crispy around the edges. I made it as written but I would like to try some variations, including your suggestion of some shredded squash in the base. My Hubby declared it THE. BEST. PIZZA. EVER. Will definitely be making this one frequently.

I've made every conceivable keto pizza out there (chicken crust, fathead dough, pork rind, coconut flour, almond flour, etc., etc.,), but this one is my favorite. It's simplistic and doesn't require a hundred mixing and rolling of dough steps. It spreads easily. When all cooked up, it's delish and doesn't feel eggy to me because all of the layers meld together beautifully. It reminded me in a comforting way of lunchlady pizza, although with much better texture and flavor. I multiplied the recipe by 1.5 servings and sprayed a large silicone-lined jellyroll pan and spread the "dough" over that to make a larger version so we could have lots of leftovers.

The ingredients are rich, so unlike some of the other pizzas I've made such as chicken crust, 2 or 3 small squares is more than enough. I topped mine with a thin layer of SF tomato basil spaghetti sauce, lices of provolone, a little fresh motz, and a little shredded parm, with a light layer of freshly diced tomatoes and drizzled it with a basil garlic oil that the fresh motz was packed in, and MMmmMMmmMMmm... My toddler was pretty obsessed too. I had a cold slice the next morning for breakfast as well which was great. Thanks for this keeper of a recipe.

Made this for lunch today, half recipe because I’m pretty sure this crust wouldn’t freeze well. I made the mistake of using my hand mixer, and it just didn’t get the cream cheese well, so in the future I would use my high speed blender for mixing the crust. I totally improvised the toppings - Italian sausage, white sauce, poblano pepper and mozzarella. I baked the crust in a Pyrex dish, which is not broiler safe, but I found that 10 minutes at 350ºF worked well to finish the toppings off. Definitely a keeper recipe that my husband and I both enjoyed.

Since there are only two of us, I’m wondering if the leftovers of this casserole could be frozen (I’m thinking probably not, due to how eggy the crust is.) Thanks! Reading the variations gave me the idea of doing a Mexican version with green enchilada sauce, chorizo, roasted poblano peppers and Mexican blend cheese, with Cotija cheese sprinkled over the top…

This was really, really good and so quick and easy to throw together on a busy week night. I did as someone else suggested and baked the 'crust' part at 400 degrees for about 20 minutes then added the toppings and broiled until the cheese was bubbly and just starting to brown. SOOOOO GOOOD!!!!! I was hoping to having some leftovers for lunch but that didn't happen! Everyone gobbled it all up.

I followed the recipe although eggs tend to give me that yuk feeling if too much. They were perfect. The crust was enough to make us feel like we were treating ourselves to pizza! I made it w/all the goodies on a supreme. We have enough for another dinner and will make it again soon. A favorite for me. Thank you!!!

Tried this tonight and it was delicious. Only thing I wish the crust were a little crispier but I did see a comment above that someone increased the heat for a crispier crust. I will definitely try that next time. Delicious as is and will definitely make again.

I love this recipe. Satisfies my craving for pizza. I don't feel like I'm missing out. I made one tweak and that is to cook the base at 400 instead of 350. Allows the cheese on the bottom to crisp up and give a little crunch!

We have just made a similar recipe from your 5 ingredient cookbook, the single size breakfast pizza, it is delicious, but says calories 131. This appears to be incorrect - nearer to 400 I think when comparing to other similar recipe macros.

If you've got an egg sensitivity,. Use flax or chia seeds soaked in water. You get a gel, like egg white.

This is by far one of my new favorites! I had my doubts about the crust, but made it anyway! I am so very glad I did! This dish was delicious! My husband, who is a pizza freak, asked me to make it again tomorrow! Definitely worth the time to make it! Don't pass this one by!

This is my favorite keto pizza recipe. It's super easy, the crust is firm enough to pick up if you want, but using a knife and fork works well too. I make ours a supreme by adding onions, peppers, olives, pepperoni and Italian sausage. I cook the sausage, and lightly saute the onions and peppers since the final cooking stage is the broiler. I also add more mozzarella and more Parmesan on top to finish off the pizza before putting it in the oven. Delish!

I'm doing Keto right now so every few dinners I make a whole Keto dinner so I can eat everything with my family (let them suffer with mama for once lol). I made this last night and this was such a winner with my husband & 6 yo daughter! My husband couldn't believe there wasn't any grain/flour in the crust! I had to tell him the ingredients lol Said it was so good he had to get a beer to drink with it lol This is a huge win for me - I loved it and it will now be in my dinner rotation for pizza (since they said they want me to make it again) So easy to make with my low carb homemade pizza sauce and top with pepperoni. I am adding Italian sausage next time for sure now that I know the recipe is legit. I'm probably going to have some in the fridge at all times to snack on as well. I just ate a small piece cold for lunch today and hot damn, if it doesn't taste just like cold pizza! I'll be trying more recipes from this site now for sure. Thank you!

I agree. My family says this recipe is just like a sheet pizza. I like to make it in a sheet pan for a thin crust that goes a lot farther. The keto white pizza version shows how I do that.

I went on keto about a month ago and was distraught thinking that it might be a long time until I could have pizza agaIn. And then I found this recipe. At first bite, I thought I was in heaven. I will make this again and again. Thank you for this gift. It is fantastic.

VERY good!!! This is probably the easiest pizza you'll ever make from scratch. I'll definitely make this again! I used my 11x16 bar pan to make the crust thinner. I also used a whisk for the egg mixture instead of a food processor or blender. I softened the cream cheese, whisked it so it was smooth, added the eggs, whisked again until smooth and creamy, added the rest of the ingredients and whisked a final time. Worked perfect. No lumps of cream cheese. The crust does not get crispy but it is firm enough that you can hold the pizza to eat it. If you're looking for a quick and easy recipe to satisfy your pizza craving, give this one a try! ~ Becky

You can freeze the casserole pieces to thaw and reheat later. You can also freeze the crust to make it later as well.

I’ve tried multiple recipes for “keto” type pizza for over a year since being on keto. Haven’t been able to find anything I like so I was skeptical of this - Very! Who would ever think of eggs and cream cheese being a good pizza dough. I don’t like the cauliflower crust pizza at all even though I love cauliflower.

This pizza is AMAZING! Making it again this week. The entire family eats it and enjoys it. I did alter a couple of things. I made bacon and then sautéed onions, garlic and mushrooms. I added all of those ingredients as well as taking some of the oils from sautéed foods and brushed the oils on the pizza “dough”. This will be a staple at the dinner table. It’s great as leftovers as well.

Am I missing something here? Why does the recipe call for a 1/4C of parmesan and 1C parmesan? What is the 1/4C for? BTW, love this recipe. I've made it several times.

It's because the 1/4 is used in step 2 and the 1C is used in step 3 (which was originally written as Asiago and corrected back to that).

The only thing I don't like is (with any pizza) when it is reheated the crust is soggy. With Reg pizza I would put it in the over to reheat, I could try that with this one too.

If you don't care for the thicker egg based crust, it's better to half the ingredients for a thinner crust or bake the full amount in a larger jelly-roll pan. You can also stretch out the servings if you bake it in the larger pan.

Hormonal imbalances can make it difficult to get into ketosis. So you may want to find a doctor that can work with you and get your hormone levels in balance. I've known some people who have had success with professionals who practice functional medicine.

Agreed. I’m a 49 year old with induced menopause and my husbands cardiologist who practices functional medicine started him on keto (after diagnosing him with diabetes) and shortly thereafter I started keto myself. Doctor has helped with getting hormones balanced among other health benefits I’ve experienced such as relief of fibromyalgia I was diagnosed with a year back. I’ve been able to lose 55 lbs so far and I started August 2019. I’m a believer in functional medicine after learning more about it and, of course, after seeing health benefits we’ve experienced. I’ve still got weight to lose, but I know this is the best thing we’ve ever done to get healthy. I’ve also started reading a book called “The End of Alzheimer’s “ (my dad has this) and doctor that wrote also recommended functional medicine. It’s a different way of seeing your health and treating it.

I put pepperoni, Italian sausage, bacon, mushrooms, onion and pineapple on one and all that except the onions on the other. So good.

It's best to use heavy cream, especially if you are low carb. But it the extra carbs don't bother you, you can use the 2% milk but I'd recommend using a little less since it's much thinner.

I tried this recipe and actually love it. The only problem I have is that you can kind of taste the eggs. Overall, this is a great recipe. I added a little too much sauce and I put the pepperoni on the pizza before the last cup of cheese. Notes taken for my next one.

To remove the egg flavor, make sure to leave your eggs outside the fridge until they're room temperature (30-45min) and then use. (:

This recipe is so delicious! It's our new favourite pizza replacement. I use 2 cups of mozzarella in the crust instead of 1 cup and 1 cup of the other cheese, as I like the crust to be fairly neutral vehicle for the toppings, and mozzarella has a less powerful flavour. Tonight's creation is home made sauce, roasted garlic, asparagus, sauteed mushrooms, salami with prosciutto and triple cream brie - yum!!

Wow. This is great! We sauteed 6 pieces of bacon till almost done then crumbled and did the same with 1/ 4 lb. breakfast sausage and several handfuls of sliced pepperoni and added for a few minutes under the broiler and then sprinkled the mozzarella over and ran under the broiler for another couple minutes. AMAZING

I have nothing new to add, jsut ... This is to die for! It tastes just like the pizza I order out. Whenever I make a recipe that "tastes just like the original" (which I notice you are careful not to say) I try to grade it on its own merits, not those of the original recipe. This pizza, however, stacks up to Italian pizzeria pizza. The leftovers even taste exactly like leftover pizza. I really like the thickness of the "crust", I bet it can handle a stack of add-ons. I do miss that crisp "crunch" of a regular crust, however the flavor is right and that's more important.

This is the third or fourth recipe we've tried from this site and we've loved every one of them. Moving on to the Asian section for a few nights. Yum!

      Thank you!!

I’m intrigued. I read another recipe just today that wasn’t keto (the flour would be replaced with almond flour to make it legal) and they loaded the toppings in with the pancake like batter. It makes me wonder if u can do the same with this. When it’s done u can cover with sauce and cheese and probably reduce the cooking time to save the “crust” from getting too over cooked. I make that observation because I’m the “kitchen sink” kind of person when I comes to my pizza. ? if I cooked the crust first, by the time all of my toppings were heated, the base might be rubber!

The crust on this pizza is basically a high cheese omelette, but I don't find it eggy at all. It does need to be cooked first so the topping won't sink into the crust.

If you take a look at my white pizza recipe it's basically the same crust mixture poured into a sheet pan to make a larger sheet pizza. And I do like the thinner crust too. Otherwise, you can just double the recipe and bake it in a rimmed sheet pan instead to get a double size pizza.

Made this tonight & it was so delicious! I don't care for the cauliflower crust so I tried this recipe, never thinking it would be so good. My husband also loved it. We like a lot of garlic so I added 3 fresh minced garlic cloves instead of 1/2 teaspoon. The toppings I used were sauted onions , red peppers & pepperoni. I was wondering how far in advance can you prepare & bake the crust? It would be so easy if you could make ahead of time. Wasn't sure so made it like the recipe said. If anyone knows please let me know. This is definitely a keeper & will be making it whenever we get the urge for pizza which is quite often.

The crust can be made ahead and stored in the refrigerator for a few days or the freezer for longer storage. You may want to undercook it a bit since it will need to be reheated.

That should work out. You'll just need to cook the crust part in each mold until it's browned. I don't have a good feel for time as I haven't tested so just keep an eye on them. Then, add toppings and put under the broiler until the cheese is melted and lightly browned.

Just made this tonight and it was a hit! Yes, the crust doesn't taste like pizza but that's because it isn't! It's a casserole. I used fresh shredded parm and the crust tasted like cheese. It has an eggy texture but with the sauce and toppings it isn't eggy at all! This was delicious! We added green peppers, pepperoni, and meatballs. I wanted to make sure the meatballs were heated through so I put it in at 350 for another 10-15 minutes. Worked great! Will definitely make again!

      Lisa,
Are you kidding me? You are a culinary genius!!! I've been making gluten-free pizzas for many years, but decided to go keto and needed a low-carb recipe. The macros on some are way off. The other seem to require almond flour (an allergen for me). You nailed this! The flavor is better than I could have ever imagined. I'll take this any day over any other pizza I've ever had... even the high-carb, glutenous pizza. Thank you so much for sharing this masterpiece with us!

I'm not particularly on a Keto diet but not being able to eat any grains has kind of pushed me in that direction. This recipe is a godsend. I haven't eaten pizza this good for years. I can't wait to make it for my husband as he often wants pizza but tries to wait until he is away for work to eat it so it isn't in front of me. Sometimes I have something like this or eggplant parmesan that I make for myself so that he can have his take out pizza! Thank you so much for this. I made my own sauce (because of the intolerances) and I also sauteed fresh fennel until it was very soft and added that in a layer just before the sauce. Delish! Thank you, thank you.

Wow! Just wow! Make this! You will not be disappointed. Great job Lisa!

I made two batches first go around with 2 different 9x13 dishes. I made the base all together then split the amount in half for each dish.

Reading what some comments put about how the base could be eggy, I made sure the base was nice and brown (not burnt) before taking it out of the oven.

For the pizza sauce I didn't have the opportunity to make my own so I did research and found this one on Amazon... https://www.amazon.com/gp/product/B0763ZVVVD
Yo Mama's Marinara. 6 net carbs for the whole pizza or 0.75g net carb per slice if cut in 8 pieces.

On the kids pizza I just added pepperoni and bacon crumbles.

On the adults pizza I added pepperoni, italian sausage, sauteed red peppers, bacon crumbles.

I also added a bit more mozzarella to the top of each again after putting the toppings on to melt a bit.

A word of caution for the broiler. I haven't use mine much but be sure to keep an eye on it. I walked a way for a bit and when I came back the tops of the toppings were charred just a bit. I got there just in time. It only takes a couple minutes at that setting to finish it off.

If you grind up a few tablespoons of Chia seeds and add them to the crust, you get a bunch of fiber, and a few net carbs. But the crust is much more bread like. I far prefer it that way now. It also makes the bottom a little less greasy.

Are the 2 cups of mozzarella to be divided? I didn’t see that and I put two cups of mozzarella into the crust and didn’t even think about the mozzarella on the top. Plus, would it be ok to use the shredded mozzarella .

Yes. 1 cup for the crust and 1 cup for topping as stated in the instructions. I noted in the ingredient list that it should be divided. Sorry about not stating it up front.

I’ve been on Keto for 8 weeks and I crave pizza daily. I now can satisfy my craving. This is the BEST food I have eaten in 8 weeks. I added more meat and other no carb pizza toppings which made it look like a deep dish! Absolutely awesome. My husband who hates my diet took it for lunch to work a couple of days. Thank you!!!!

I've been keto for about 4 months now and have come across a couple of keto pizza recipes that were "okay" but this one is the best by far. This is even after messing up by accidentally adding 2 cups of mozzarella to the "crust" instead of one cup. My non-keto hubby and daughter, who support me by eating what I make, think so as well! I topped it with sauce, sauteed onion and bell pepper with mushrooms, pepperoni, and fresh mozzarella. I am already looking forward to lunch tomorrow. Thinking about doubling the recipe next time so that I can have even more leftovers as I foresee my hubby helping himself to "MY" pizza....LOL! Thank you so much for this recipe!!!

My husband is diagnosed diabetic with Celiac, and has Gastroparesis, so I was excited to find this recipe because he loves pizza. However, we have to watch the fat intake due to the Gastroparesis. The recipe calls for the mozzarella to be full fat. I’m assuming there is a good reason. What would it be like if I used a non-fat or low fat mozzarella? Thanks!

The 2% actually works better than full fat so the lower fat or non-fat should be okay.

I just made this for lunch, and it really is good! I did the sheet pan version, which only took about 20 minutes to cook the crust. I forgot to add the mozzarella to the crust (so just the egg mix and parm), but it still turned out ok. Just a little bit eggy, but if I made it correctly, that would likely be corrected. As a personal preference, I might also add more sauce next time, since I like it thick, but the amount called for was enough to cover the crust.

Thanks for this recipe. It was a big hit with my family too. I used the powdery cheese in the plastic dispenser and wondered if it would be ok or if I should use the grated. It worked fine. I used already grated mozzarella cheese. The only thing I changed was to add thin sliced and chopped (about 1/2 inch) bell pepper and onion. It was great!

You need to check the crust before adding the sauce and toppings. It should be brown and fully cooked. Maybe your oven is off or your cheese wasn't right?

New to low carb-was excited to share pizza night with the family ( we're used to Dominos)so first bites were exciting and tasting like pizza. I had to keep getting over the idea of "egg" though it didn't taste like egg. By the end of the only piece, I have to say it was beginning to roll around in my mouth picking up different flavors and not going down as easily. I didn't use fresh grated parmesan and think that might make a difference. I haven't tried fathead yet, so will give that a whirl.

Just tried this tonight...only modification I made was a 1/4 cup more Parmesan in the crust. We made it in a sheet pan and made a Margherita pizza with fresh mozzarella, five cheese blend fresh basil and sliced tomatoes. Oh. My. Goodness. My husband who so far has only tolerated the Keto recipes I’ve made so far absolutely loved this and so did I. Couldn’t taste a difference and maybe the thin crust made a difference because there was no “eggy” texture to our crust. So happy I found this because pizza was the biggest culprit to me having to be on Keto, and with this replacement, I’m in heaven!

This recipe is the first one I tried that was actually very good. Flavorful and taste just like a pizza.
The changes I made were, italian seasoning for the oregano and I added 1/2 tsp of Red Pepper Flakes.
I had to bake the crust 40 minutes before it was golden in color. I also added extra sprinkling of Parmesan cheese across the pizza sauce

Great store bought marinara sauce is Rao's. Its pricy but fabulous and only has 3 net carbs per half cup (no sugar in it).

Can't wait to try this pizza. I always need a quick go-to for a busy night and this looks like a winner.

This was fantastic! My husband was raving about how delicious this was and my kids begged for more. I’m the only one eating low carb and I was hoping to have lots to take as leftovers for my work lunches. Not so much - the whole family gobbled it up!

That's why I make the casserole in a larger jelly-roll pan now. It makes a thinner crust and more slices.

I am ecstatic to try this recipe this weekend! We usually have fathead and I've been loving it, but it doesn't quite last as long for two of us - when it's just me, I eat it for lunch the next two days, but when my husband eats it too, it's gone in a flash. So I think this recipe might do the trick. Fill him up and still leave me with leftovers the next day.

If you want to extend this recipe even more, I recommend making it in a larger jelly-roll baking pan. It will be a thinner crust and be almost twice the size of one done in a 9x13 pan.

I made this for dinner Friday night and used a round pizza pan for it. I was skeptical of it coming out like pizza, mainly because of the lack o f an actual crust and I was very happy with the results. The "crust" really did provide the perfect platform and delivery system for the toppings that we put on it and even with the toppings we used -- feta, mozzarella, spinach, pepperoni, mushrooms and roasted peppers -- the calories for one piece were still low as was the carb content.

I think this is going to be my go-to recipe for when we're craving pizza.

If you have a crock that can go in the oven for browning the top, I'd say yes. The crust can definitely be cooked in a slow cooker, but it's difficult to brown the top unless you put it in the oven. Also, I doubt the bottom of the crust would cook as well in the slow cooker.

Oh man, this was pretty good, but I think I found an amazing use for this "crust". I made this Friday night, but I used a sheet pan for the dough instead of a casserole dish because I wanted it thinner. Well, I had a few pieces leftover so I layered them, topped them with sauce, and heated it. It was reminiscent of lasagna, and delicious!!!! I am definitely going to be using this "crust" as my lasagna noodle next time for individual lasagnas.

This casserole uses an egg based crust similar to quiche. You could prepare the crust part ahead and bake with toppings later from freezer or fridge. If freezing, I'd add the sauce and topping before freezing. I'd probably hold off on the sauce if putting in fridge so the crust won't get soggy.

        Hi Nicole!

You should always use full fat when on a low carb diet so that's the cream cheese I typically use, but a lower fat one will work in this recipe. You could use a low carb milk in place of the heavy cream if you'd like. The crust is egg based so it's somewhat like an omelette, but doesn't really taste like one because of the cheese and sauce.

I realize this is probably a silly question, but for the mozzarella and Asiago/Parmesan or Romano, the cup counts are for *grated cheese*? This recipe seems so very, very simple ... so, of course my mind goes to ways to complicate my life (like sautéing zucchini & onions, for a topping).

This will be my second time commenting on this recipe. This is our new favorite pizza! I have made it several times and each was delicious. Last night my casserole dish was "otherwise occupied" so I made the pizza on a 13x18 baking sheet lined with greased parchment paper. This was our favorite so far! Hot, the crust was firm enough to pick up the slice and fold over to eat. Cold the next day though... the pizza was indiscernible from really good delivery! YES! IT WAS THAT GOOD! Cold pizza is my favorite breakfast but it wasn't just me... all three adults who ate it cold said the same thing - that you could not tell it from a regular delivery pizza! I'm hooked! And its so easy to throw together too! Thank you so much for this recipe! I wish I could post the fabulous photo of my perfect slice of cold pizza that shows just how sturdy the crust is! Thanks again... Amy

This was delicious! Toppings I used were sausage, pepperoni, salami, onions, bell pepper and olives. While it's definitely a casserole and meant to be eaten with a fork it had a flavor that was reminiscent of the deep dish pizza from Mazzios that I love. I really miss pizza and have tried many low carb options. I had settled on a recipe that has a cheese based crust you roll out and can actually pick up the slice but it's pretty time consuming. This was as good, although different, and far easier! A keeper!
