    With the busy school year starting, it’s time to get out those quick and easy dinner recipes. I came up with a low-carb chicken cordon bleu casserole using convenient ingredients in just a short amount of time!

    It took me less than thirty minutes to bake and prepare this delicious casserole that looks and tastes like a gourmet meal. It’s seriously one of the best chicken recipes to make for a delicious dinner tonight!

    This chicken cordon bleu recipe is perfect to make for your family as your schedule becomes super busy. It’s a very easy recipe to throw together without having to think much about it.

    If you are a really busy parent (or even a busy adult with jobs and other responsibilities), this family-friendly meal is exactly what you need. You don’t even have to make stuffed chicken breasts! There isn’t a lot of measuring or food prep necessary. It’s all made in one dish.

    I found some shortcuts that sped up my time with food prep. I just know you are going to love them too!

    Ingredients

    There are just a few simple ingredients in this easy chicken cordon bleu casserole. Here’s what you need:

    Meat

    To cut prep time, I used one package of black forest deli ham but you can use any ham you like. A ham steak works great too. Just make sure it doesn’t have sugar.

    I also used a bag of frozen pulled chicken breasts from the freezer section to make prep time easier. If you are planning ahead, you can meal prep shredded chicken in advance and use that! Or just shred some rotisserie chicken for last minute.

    I love that the meat is pre-cooked, which saves time in the kitchen when making this chicken cordon bleu recipe.

    Cheese sauce

    To make the creamy sauce, I used a combination of mayonnaise, heavy cream, cream cheese, parmesan cheese, and swiss cheese.

    Yes, it’s a very rich and filling recipe!

    Spices

    Use your favorite spices in this cheesy casserole. I used garlic powder, black pepper, and chicken bone broth.

    And, you can’t forget the salt and pepper!

    Crunchy topping

    This is optional, but I used come crushed pork rinds to add a bit of crunch on top of the casserole. They are a great low-carb option to crispy bread crumbs. You can also make your own seasoned keto panko breadcrumbs!

    For a little extra flavor, pour a little melted butter over the topping!

    Quick tips

    • Substitute shredded cheese. The swiss cheese doesn’t needed to be shredded. You can also use cheese slices!
    • If you use chicken breasts that aren’t pre-shredded, make sure you cut the chicken breasts into strips.
    • Use pork rinds for some extra crunch. Add plain crushed pork rinds over the casserole for a crunchy topping and to add the “fried” feel of classic cordon bleu.
    • Add melted butter. Melt a little butter and pour it over the pork rinds. This will give the topping extra flavor.

    Instructions

    This is a really simple recipe to throw together last-minute. You basically combine all the ingredients and then bake them. It’s so easy to make chicken cordon bleu! Here’s how:

    Make The Cream Sauce

    First, mix together the mayonnaise, heavy cream, and cream cheese. Then, stir in the parmesan cheese, spices, and swiss cheese.

    This will be the base sauce.

    Add The Meat And Broth

    Next, stir in the chicken breasts, ham, and chicken broth or chicken stock.

    Bake The Casserole

    Add the ham and cheese mixture to the baking dish. Sprinkle on your crunchy topping and drizzle melted butter on top.

    Bake at 350°F for about 25 minutes until you have golden brown. Remove the baking dish from the oven and allow to cool slightly.

    Serve warm and enjoy! It’s absolutely delicious.

    This is such a wonderful recipe that almost any low-carb side dish you make will taste delicious with it!

    My go-to is some sort of roasted veggies (like roasted broccoli) and some "mashed potatoes", really just creamy cauliflower mash.

    You can never go wrong with some green beans almondine. The almonds have a really yummy nutty flavor that pairs well with the creamy ham and cheese.

    For something light and tasty, make some oven-roasted asparagus! It's easy and scrumptious.

    Why it works

    Traditionally, a classic chicken cordon bleu recipe is stuffed chicken breasts wrapped around ham and cheese. Then, it’s breaded with a breadcrumb mixture (like panko crumbs) and deep fried.

    But, that’s not very keto-friendly!

    So, I took the classic flavors of a chicken cordon bleu recipe- chicken, ham, and swiss – and combined them into a casserole form that will feed your entire family. I even incorporated the “deep fried” part of the traditional dish by using pork rinds.

    You are going to love this low-carb recipe because it doesn't call for cream of chicken soup or egg noodles like regular versions!

    Before I share the entire recipe card, there are some questions I want to answer.

    How long does this casserole take to prep?

    The prep time for this easy low carb meal should be less than five minutes. You'll just need to combine all the ingredients into a mixing bowl.

    What sized casserole dish do I need?

    Once everything was mixed together, I just spread it out into a 9x13-inch baking dish. Honestly, you can probably use any baking dish size that you have in your cabinet, even a shallow dish. Since the meat is already pre-cooked, you are basically just heating it up, so the cheeses all melt together. This will work no matter what size of dish you use.

    What is a keto-friendly way to add a crunchy topping for casseroles?

    I opted to top off the casserole with crushed pork rinds. You could use seasoned pork rinds if you already have some made. I find that storing crushed pork rinds in the freezer is not only convenient but also eliminates a lot of the pork taste. You can also make your own seasoned low-carb breadcrumbs!

    How long does this keto casserole take to cook?

    Since the meat is pre-cooked, it should only take 20-25 minutes for the chicken cordon bleu casserole to heat fully and begin to brown. With less than 30 minutes from start to finish, you won't be stressing to feed your family during the busy back-to-school season.

      This is a family favorite! I make it once a month and have been for over a year. My husband is diabetic so he is very appreciative of such a decadent meal.

      I have tweaked the recipe a bit here and there and I believe I've achieved a nearly perfect dish. The original recipe is very, very rich. Not necessarily a bad thing but I found myself wanting to lighten up just a bit. So I add parboiled asparagus in one inch pieces, one tablespoon of Dijon mustard and the zest and juice of half a lemon. It's delightful either way.

      I turned this recipe into “Turkey Cordon Bleu” for Thanksgiving ‘23 and, no lie, it was the best thing on the table! If you’re keto, it gives you all of the flavors of Thanksgiving without the carbs! Instead of chicken, I roasted a turkey breast and used that in place of the chicken. I also omitted the broth and it turned out perfectly. It was so delicious and even all the other non-keto family members were remarking at how good it was. Excellent recipe. Thank you for getting me through the holiday without feeling deprived and without a food coma!

      Used ranch seasoning instead of garlic and mixed only 3 tablespoons of chicken broth with the cheese mixture.
      No pork rinds just mozzarella cheese on top. Delish.

      Excellent rendition of a favorite recipe. I used the Instant Pot to cook seasoned chicken thighs, shredded the meat, then used it for the casserole. Very rich, so it was self-limiting. I used the pork rinds and added a bit of melted butter over top. It was wonderful.

      Was wondering if u can I use raw chicken verse pre cooked chicken or does the meat need to be pre cooked looking to make this week for first time

        You'd likely need to bake it longer if using raw meat. Since the ham is already cooked, I like to use pre-cooked chicken. But technically, you can use raw just be sure it's fully cooked before removing from oven.

        This is my favorite keto chicken cordon Bleu recipe. I double the recipe, carefully add only some of the broth (I chop, season and cook my chicken and use the broth from that). I also add just a bit of brown mustard (maybe a teaspoon) heat through then layer baby swiss on top and return to oven till melted & bubbly. SOOOOOOOOOO yummy!!! Thank you ????

      I see that the recipe makes 10 servings in a regular 9x13 pan. The pieces must not be very big then. Is that correct?

      This looks so good. Since I have to be so frugal and not purchase convenience meats, I always have cooked chicken in the freezer in 2 Cup portions for casseroles, etc. Would you estimate that the amount of meat you called for would be about 2 cups cubed chicken?

      That's the common amount in all my low-carb recipes, it seems.

      First time making this it is good, but the garlic needs to be omitted. Put what it calls for it is just too much. My family agreeded. Overall easy to make and will make again without the garlic and the broth was fine after is cooled some.

      Absolutely delicious!!!
      I only changed a few things. I bought chicken strips (bc I couldn't find the pulled) and followed the cooking instructions to thaw. Once cooked (thawed) I used a hand mixer the shred the chicken. I also skipped the broth all together and used bread crumbs instead of pork rinds.

      This was incredibly delicious! We used free range organic chicken tenders sauteed in Kerrygold butter. Added chopped onion, sliced mushrooms and organic chopped broccoli. Served it up on a bed of organic greens. So simple to make, which I appreciate. Thank you for all of the wonderful recipes!

      This looks really great ! Will be making it but will have to tweak for diabetic compliance. I would use Delli sliced smoked ham and left over chicken I have cooked myself. I found most prepacked or precooked foods contain non compliant starches and dextrose or maltodextrin that do not show up on the carb list but are listed in the ingredients section. (in smoked deli meats these sugars are cooked out in the smoking process) Same for the flavored Pork Rinds, only the plain ones are compliant. (see the ingredient list) Also , shred your own block cheese or have sliced at the deli as pre packaged pre shredded cheese contains starches to keep it from clumping. Hidden starches and hidden sugars like dextrose and maltodextrin can make a diabetic's BG spike and eating to much can throw a person out of ketosis. NOtE: read the ingredient list on the Rotisserie chickens you find in Sams and Costco's, they contain Corn Meal, starches and dextrose, so they are not compliant for Keto. Cooking your own Rotisserie chicken in a Air fryer or in a crockpot would be more beneficial.

          I used the chicken frozen. The cheese should thicken the sauce. You can always add in a little xanthan gum or another thickener if needed.

      I made this last night and it turned out great. Instead of using frozen chicken, I cooked a couple of chicken breasts in the crock pot and shredded them. That way I have the chicken for the casserole and stock for soup later. I also used some of the broth instead of the bone broth.

      I am going try this tonight...To cut down even more on the time, I am going to get shredded swiss, and use the Costco rotessiere chicken that is already deboned and chunked pre packaged and ready to go. I think I will also use the larger pre cubed ham you can get in the grocery store as well. To top it off, I will pan sauté the crushed pork rinds in butter to get them golden brown, crunchy, and then top them on the casserole and place under the broiler for a few minutes for extra crunch.

      This recipe was not good at all!I feel like I wanted a lot of time and money making this. (I cooked chicken to put in it.) It didn't taste like chicken cordon blue at all! All I could taste was cream cheese.

        You could leave the cream cheese out, but then it wouldn't have the right texture for a casserole. The ham, Swiss cheese, and chicken flavor of cordon bleu is there.

      Replace half the chicken with frozen cauliflower skipping the broth since it has liquid. Also the ham you use can make it watery. I have been known to sauteed the ham to drive off some of the water.

      Tried this tonight. Used Costco rotisserie chicken, less ham and no chicken broth. Also Dijon mustard to cream cheese. Added spinach and fresh green beans chopped for veggies. Delicious. Definitely a do over. Will probably use less Swiss cheese due to richness but loved it.

      I do not know what I am doing wrong. My carbs per serving is showing 22.7 and calories 577. I even re added all ingredients manually to myfitnesspal, and still showing it this way. How are you getting 5 carbs and mine show 22.7? HUGE difference and I cannot afford to eat that many in one meal. That is my daily intake

        I just redid the calculation and got 1g carbs per serving. There's something wrong on your end likely with an ingredient being used.

        I had the same problem. I went through each ingredient it was automatically finding and saw a HUGE number of carbs for the garlic powder. Once I selected a different kind of garlic powder from their list, the carb count went way down.

        I use MyFitnessPal too. The trick when you're importing the recipe, is to replace the items that are obviously wrong.For example, the garlic powder it chose said that 1/2 tsp of garlic powder was 145 carbs! obliviously that's wrong. I also inputted unsalted chicken broth. I came up with 351 calories and 4 carbs, per serving. That will very some between brands, but it should be close enough. I'm going to include my link on MyFitnessPal (I hope it works), and you can see for yourself. I haven't made the recipe yet, but am looking forward to it.

          when you use MyFitnessPal always search for spices like garlic as a spice, like spice-garlic, minced or spice-garlic, powdered to get accurate calorie count. hope this helps!

      Unfortunately, as someone else also commented, mine turned out so watery and runny 🙁 It was not "solid" at all like in your photos. No way to "slice" it up like yours. I had to drain off most of the liquid and scoop the "casserole" into bowls. It did taste good, but was not at all as shown. It didn't even have the thick, creamy consistency of let's say a tuna casserole - so watery! I followed the recipe perfectly too. 🙁

      This is delicious but needs some tweaking. Came out incredibly salty, so I would recommend lower sodium ham and low or no salt chicken broth. I doubt the chicken comes unseasoned, so maybe do your own or use drained, canned? May lose texture with canned. It also came out a little runny on the bottom, less liquid? I also had to cook it longer to get it somewhat browned. It is wonderfully gooey and cheesy. Broccoli sounds like a great addition as that is what we usually serve with most chicken.

      Mmmmm. This was delicious. I omitted the chicken broth, since I didn't have any. I also got carried away with the seasonings. I added onion powder and salt. I did NOT need to add salt, but it still tasted great! So creamy and gooey. Oh, I also used provolone instead of swiss cheese as a personal preference.

      i have made this several times and it seems to come out with some liquid to it, any suggestions on what i have done wrong, i do not cover it when i cook it, follow instructions. It just doesnt have that solid feel to it. Still tastes good.

        You could reduce the amount of chicken broth or try adding it in with the heavy cream. Perhaps using an electric mixer to make sure the liquid and cream cheese are well blended.

      My husband is a borderline diabetic. I buy Carba-Nada Egg Fettuccine. For your casserole, to make a one pan dinner, I used 6 ounces of noodles and poached chicken in white wine (didin't have broth). I put the cooked noodles in the bottom of the casserole, added chopped chicken ham and swiss cheese. Made the sauce as you did except I used the poaching wine (strained) insteasd of broth. Both my husband and friend raved about the dinner that night.

        This pasta contains, according to package, 24G of carbs in a serving. Yes, less than some pasta servings, but still too much, especially when combined with other carbs at the meal and total during the day. Eliminate pasta, breads, sugars, etc. Just some helpful advice from a person who has reversed(for the time being), her almost diabetes. Try to stick with around 10 to 15 grams of carbs per meal.

          Don't forget net carbs equals carbs minus fiber, so with the 7 grams of fiber, the net carbs are 17 grams. Still too high for me, though I might try it sometime with zucchini noodles, or shirataki noodles.

      You are awesome! I made the coconut cream pie the other day, looked pretty and tasted GREAT! We fought the kids for it, and WON! This casserole is quite intriquing, will start here, then move to the picatta. Your recipes are a God send, as I was living on cheese and nuts, as I wasnt sure what else to eat, and too busy to read! I am down over 40 and hubs is down over 30. Now we are not so bored!

      I have some deer sausage (like kielbasa) that I need to use. How do you think this would taste w/ kielbasa and chicken mixed in lieu of ham? Also.. would cauliflower add a potato-like texture so it's not all meat and sauce?

      Making this tonight...it looks/smells AMAZING. I had to sub 1/2 n 1/2 for the heavy cream, and sprinkled seasoned stuffing mix over the top...lightly sprinkled...so a bit higher in carbs than yours, but I think it will work.

      I made this earlier today and it is so good! I had to sub sour cream for the heavy cream and omit the chicken broth because I didn't have any. I also added broccoli. Will definitely be my go-to for quick and easy low carb dinner!

          Whey powder is usually in with the protein supplements. It can be difficult to find the plain no sugar added one. I get mine from Amazon. Coconut flour is sold in the warehouse stores like Costco and BJs. I buy it there and online.

      I have always love chicken cordon bleu... and I always have a bag of seasoned pork rind 'breadcrumbs' at the ready, because I use them so often: for making meatloaf, eggplant parmesan, coating fish and pork chops...
      Thank goodness for Walmart, they are now the only store within a 20-mile radius of me that I can count on for stocking pork rinds!
      Looking forward to this meal, thank you for all your easy 'regular ingredients' recipes!!

          My local Sam’s Club has a huge tune for a very reasonable price. This is what I purchase and make seasoned and unseasoned bread crumbs in bulk so I have lots inthe freezer. Thank you for the wonderful recipes! They are a lifesaver!

        Just an fyi. The irnds are sold in chain markets. You should be able to find them in the same isle as ethnic food's. Goya product's, Mexican food etc.. Took me 5 stores until I figured that out.
