    There's nothing novel about zucchini bread. But when you add chocolate to the equation, what you end up with is a delicious and decadent treat.

    So how do you make an occasional indulgence such as this one much more healthy? You need a few key baking ingredients that will taste great without spiking your blood sugar.

    The Ingredients

    If you do a lot of low-carb baking, you probably already have most, if not all, of the ingredients you need for this chocolate keto zucchini bread.

    Here's what you'll need to make this gluten-free and keto chocolate zucchini bread:

    • Coconut flour is the preferred keto-friendly flour to use as it gives a lighter spongey texture
    • Unsweetened cocoa powder is needed for the chocolate flavor. Feel free to use a dark cocoa or cacao which is the unprocessed version.
    • Golden low-carb sweetener is a product by Lakanto. But you can use any brown sugar substitute instead, including the one by Lakanto.
    • Cinnamon always adds a more interesting taste to chocolate baked goods.
    • Coconut oil is the fat of choice but you can use butter or avocado oil
    • Grated zucchini is the secret to this moist gluten free chocolate zucchini bread.
    • Chocolate chips add extra chocolate flavor! Just make sure you choose keto-friendly baking chips. You can even make homemade sugar-free chocolate chips.
    • Additional baking staples used are baking soda, baking powder, salt, eggs, and vanilla extract.

    Baking Instructions

    This low-carb chocolate zucchini bread recipe is almost as simple as a baking mix! You just need to mix everything together, spread into a pan, and bake.

    Make the Batter

    The first thing you need to do is mix all the dry ingredients in a large mixing bowl.

    Next, add in the wet ingredients by blending in the eggs, coconut oil and vanilla until the ingredients are well combined.

    Spread the Batter in a Loaf Pan

    Once the batter is prepared, pour the mix into a greased or parchment-paper lined 9" x 5" loaf pan.

    Bake It!

    The batter will need to bake at 350°F for 45-55 minutes, or until it tests done.

    A trick you can use to know when it's ready is to place a toothpick in the center of the loaf. When the toothpick pops out, you'll know it's ready.

    Then, you can remove from the oven. Allow it to cool for 15 minutes before removing the zucchini bread from the pan. Let it cool completely before slicing.

    Zucchini Loaf Quick Tips

    • Store zucchini bread in an airtight container in the refrigerator or freezer. It will keep for 2 weeks in the refrigerator and 3 months in the freezer.
    • Drizzle melted chocolate on top to dress it up. A white chocolate topping really dresses it up!
    • Use a different type of baking chip. Instead of regular chocolate, try white chocolate or peanut butter chips.

    Serving Suggestions

    Although this gluten free zucchini bread is a perfect snack or dessert as-is, you can add a cake frosting to make it even more decadent. A dollop of sugar-free whipped cream or a scoop of low-carb ice cream are tasty toppings too.

    It goes well with a keto iced coffee in the summer or a sugar-free peppermint mocha latte in the winter.

    Should the zucchini be peeled first?

    There's no need to peel the zucchini. But if you want to hide the green color I recommend processing all the ingredients together, except the baking chips, in a food processor to break down the shredded zucchini into the batter.

    Can I use almond flour?

    This chocolate zucchini bread can be made with almond flour but other changes will be needed. Generally, you'll need more almond flour than coconut flour along with less eggs and liquid.

    • ½ cup coconut flour
    • ½ cup unsweetened cocoa powder
    • ½ cup Lakanto Golden Monk Fruit Granular Sweetener or regular white
    • ½ teaspoon ground cinnamon
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • ¼ teaspoon salt
    • ¼ cup coconut oil melted or fractionated
    • 4 large eggs
    • 1 teaspoon vanilla
    • 2 cups zucchini shredded
    • ½ cup sugar free chocolate chips

    Instructions

    • In large mixing bowl, combine the coconut flour, cocoa, sweetener, cinnamon, baking soda, baking powder, and salt.
    • Blend in the eggs, coconut oil, and vanilla until well combined.
    • Fold in the zucchini and chocolate chips.
    • Pour mixture into a greased or parchment paper lined 9x5-inch loaf pan.
    • Bake at 350°F for 45-55 minutes or until toothpick inserted near center comes out clean. 
    • Remove from oven and cool on rack for 15 minutes before removing from pan. Cool completely before slicing.

    Notes

    The chocolate chips can be left out if desired, but they give the bread a richer chocolate taste. You can also use white chocolate or peanut butter chips instead.
    This recipe can also be frosted to make a delicious chocolate cake.
    Store zucchini bread wrapped in foil or plastic wrap. It will keep in the refrigerator for up to two weeks. For longer storage, it can be placed in the freezer inside an airtight container for 3 months.

      I was really excited to make this. It was very disappointing. I had to bake it 20 minutes longer than the recipe said to get a clean toothpick. After it was out of the pan I let it cool an hour and a half. When we sliced it the cake was spongy. My family hated the flavor. I'll try again with a different recipe.

        So sorry this one didn't work out. It is supposed to have a cake-like texture similar. Removing excess moisture from the zucchini or decreasing the amount of coconut oil to 3 tablespoons should have helped with that.

      This is a fabulous recipe! I made it as muffins, it made 11 muffins. I used 1/2 bar (2ozs) of bittersweet chocolate chopped in pieces instead of chips. I used 1/2 cup of brown swerve and 1/2 cup of allulose. Most keto dessert-type recipes use about half the sugar I want, so I just double it. They were done in 25 mins. The combination of zucchini and coconut flour is pure genius - it makes a lighter, yet divine choclatiness cake/muffin.

        I don't remove the excess moisture as it keeps the bread moist and a lot gets absorbed by the coconut flour.

      This is the hands down BEST sugar free chocolate dessert bread I’ve ever had!!! My husband doesn’t typically like anything gluten free or sugar free but he couldn’t stop raving about it. Cannot tell it’s sugar free ????????????

        The amount will be the same. You may need more liquid, but he bread is very moist so it should be okay as is.

        I don't peel it but you can if you want to hide the green. Or, just process the batter so the shredded zucchini isn't seen.

        It will work for muffins. I don't have an accurate time as I've never made it that way. But I'd start checking on them after about 15-20 minutes and take them out when they test done.

      I'm going to try this tonight. I made regular chocolate zucchini bread a couple of weeks ago for a family gathering and while I loved it doesn't fit my keto plan. I wish Lily's had white chocolate chips. I'll let you know how it turns out.

      Thank you! My new chocolate fix. I had Swerve on hand. Haven't purchased Monk sweetener yet. Really moist. Trying to search for how many servings.. While counting total carbs, 7 is a little high so eating & logging 1/2 a slice. Freezing some. Luv your recipes! 2. 5 yrs Keto.

        Subtract the fiber from the total carbs. Each slice only has 3 net carbs.

      This was amazing.. I have one piece left and getting ready to make another. My husband says it's very brownie like to him. But I am over the moon with how much it reminds me of the old chocolate cakes we used to eat . Like could it get any better...I highly doubt it! Best if all it's very simple to make.. I bit if a lazy one when it comes to making sweets even though I crave them all the time. Thank you so much for this fantastic recipe!

        The zucchini is listed as "shredded" in the ingredient list. I shred with a food processor, but it can be had grated too.
