    Here's everything that goes into my perfectly sweet cinnamon sugar churros recipe:

    Gluten-free flour

    The base of these keto churros is a mixture of almond flour and coconut flour. Both are great low-carb flour alternatives for all your keto baking needs!

    Keto sweetener

    Granulated erythritol makes this recipe perfectly sweet and keto-friendly. It bakes just like your everyday granulated sugar.

    Baking powder and xanthan gum

    A bit of baking powder helps your churros puff up, while xanthan gum improves the texture ten-fold!

    Xanthan gum is my secret weapon when it comes to gluten-free baking.

    Butter

    Unsalted butter adds great fat content and flavor to these churros.

    Vanilla

    A bit of vanilla extract gives this recipe an excellent flavor – don't skip this step!

    Egg

    I use an egg to help bind this recipe; this is especially essential with gluten-free baking.

    Coconut oil

    To fry my churros, I prefer coconut oil for its high smoke count and subtly sweet flavor. Canola oil or peanut oil would work just as well.

    Cinnamon

    Though optional, I highly recommend adding a bit of cinnamon to your finished churros.

    Frying tips

    • Fry your churros at 350°F or 180°C for an even crisp.
    • For a classic churro shape, pipe them through a star tip.
    • Roll your fried churros in the cinnamon sugar coating while they're still warm to help the mixture stick.
    • Depending on how sweet you like your desserts, adjust the amount of erythritol in this recipe.

    How to make keto cinnamon churros at home

    Making these low-carb churros yourself does not have to be a hassle. Follow this step-by-step guide and learn how to make a batch of this delicious Mexican dessert right in your kitchen!

    Step 1: Dissolve sweetener

    Start by adding water, butter, and erythritol to a saucepan and heating over medium heat.

    Let this mixture simmer until your erythritol has dissolved and the butter is melted.

    Step 2: Form your dough

    Next, remove the saucepan from the heat and add dry ingredients, including almond flour, coconut flour, baking powder, and xanthan gum.

    Stir everything up until you've formed a dough.

    Step 3: Cool and add extras

    Once the dough has cooled slightly, add the vanilla extract and egg, stirring once more to combine.

    Then, it's time to transfer dough for piping!

    Step 4: Pipe and fry

    Transfer the mixture to a piping bag fit with a star tip for that classic churro shape.

    Meanwhile, heat oil in a deep pot or skillet over medium-high heat. Once your oil is hot and ready, begin piping 4-5-inch strips of churro dough into the oil.

    Fry your churros until they're crispy and golden brown, removing them using a slotted spoon.

    Place them on a paper towel-lined plate to help soak up excess oil.

    Step 5: Roll churros in cinnamon sugar topping

    Mix a bit of granulated erythritol and cinnamon in a small bowl, then roll your warm churros in the mixture.

    And with that, your keto cinnamon churros are ready to be devoured!

    How to serve cinnamon churros

    My keto churros are delicious on their own but can be amplified with a sweet and low-carb dipping sauce.

    I recommend using a chocolate sauce like my sugar-free chocolate syrup or a blended strawberry sauce.

    Don't forget to make a cup of sugar-free hot cocoa and dunk your churro in there to soak up that yummy chocolate.

    Ingredients

    For the Churro Dough:

    • 1 cup almond flour
    • ¼ cup coconut flour
    • 2 tablespoon granulated erythritol (or your preferred keto-friendly sweetener)
    • 1 teaspoon baking powder
    • ¼ teaspoon xanthan gum optional, but helps with texture
    • ½ cup water
    • 2 tablespoon unsalted butter
    • 1 teaspoon vanilla extract
    • 1 large egg

    For the Coating:

    • 2 tablespoon granulated erythritol
    • ½ teaspoon ground cinnamon optional

    Instructions

    • In a medium saucepan, combine the water, unsalted butter, and erythritol. Heat over medium heat until the mixture comes to a simmer and the butter is melted.
    • Remove the saucepan from heat and add the almond flour, coconut flour, baking powder and xanthan gum (if using). Stir until a dough forms.
    • Allow the dough to cool slightly, then add the egg and vanilla extract. Mix until well combined.
    • Transfer the churro dough to a piping bag fitted with a star tip.
    • Heat the coconut oil in a deep skillet or pot over medium-high heat. You'll need enough oil to submerge the churros.
    • Pipe 4-5 inch strips of dough into the hot oil. Use scissors or a knife to cut the dough cleanly from the piping tip.
    • Fry the churros until they're golden brown and crispy, about 2-3 minutes per side.
    • Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain.
    • In a small bowl, mix together the granulated erythritol and ground cinnamon (for coating). Roll the warm churros in the mixture to coat them evenly

    Notes

    • When frying the churros, make sure the oil is hot enough (around 350°F or 180°C) to ensure they cook evenly and become crispy.
    • Use a star-shaped piping tip to pipe the churro dough for that classic churro appearance. If you don't have a piping bag, you can use a sturdy plastic bag with the corner snipped off.
    • It's best to roll the churros in the erythritol and cinnamon coating while they are still warm to help the mixture stick to the surface.
    • You can adjust the sweetness of the coating by adding more or less erythritol to suit your taste.
