    Here's everything that goes into my brie cranberry bites:

    Mozzarella cheese

    Mozzarella cheese is a key ingredient in fathead dough; it gives your dough a delicious flavor, pliable texture, and high-fat content!

    Almond flour

    To keep this recipe low-carb and gluten-free, I use almond flour. Together with mozzarella cheese, it makes a great substitute for traditional crescent dough.

    Baking powder

    A bit of baking powder helps your cranberry brie bites rise when baking.

    Egg

    One egg binds the ingredients together for a workable dough!

    Brie cheese

    The star of this recipe is the ultra-creamy brie cheese. It's light, decadent, and oh-so-good.

    Sugar-free cranberry sauce

    A bit of sweet cranberry sauce pairs perfectly with brie cheese. You can use any brand of keto-friendly cranberry sauce or make a homemade cranberry sauce with sugar-free ingredients.

    A few fresh rosemary leaves add an extra bit of festive flavor to this appetizer. Plus, the garnish looks super pretty!

    Baking tips

    • Heat your dough mixture in short intervals stirring well between each interval. The goal is to melt the cheese and create an evenly mixed dough without cooking the mixture.
    • Grease your hands with oil when working with the dough to prevent sticking.
    • Create wells in the baked dough while they're still warm.

    How to make keto cranberry brie bites

    It's easy to make cranberry brie bites - just follow these steps:

    Step 1: Preheat oven and prep pans

    Begin by preheating your oven to 350°F and grease a mini muffin tin with a bit of cooking oil or butter.

    Step 2: Create the fathead dough

    Next up, add mozzarella cheese and almond flour to a microwave-safe bowl, heating in 20-30 second intervals. Stir between each, letting the cheese get super melty and well combined.

    Step 3: Roll and cut the dough

    Now, roll out your fathead dough using a rolling pin for evenness.

    Then, use a round cookie cutter to cut out small circles, adding them to your muffin tray; this will form little brie baskets!

    Step 4: Fill the baskets and bake in intervals

    Add a cube of brie cheese to each basket, then pop your tray in the oven.

    You'll know they're done when the dough turns a gorgeous golden brown color.

    Remove from the oven and make small wells in each dough basket with a spoon. Add a dollop of cranberry sauce and a touch more brie to each well.

    Then, bake for a few more minutes to melt the brie topping!

    Step5: Cool cranberry brie bites and serve warm

    Grab your finished brie cranberry bites from the oven and let them cool for a few minutes.

    Garnish with a few sprigs of rosemary, and they're ready to enjoy!

    How to serve cranberry brie bites

    I love the idea of serving these cranberry brie bites as part of a larger holiday charcuterie spread!

    Add your garnished bites to a large serving board and begin filling it with fresh keto fruits like strawberries and blackberries.

    Also, add low-carb nuts like walnuts, pecans, and almonds.

    Can I freeze cranberry brie bites?

    I don't recommend freezing this recipe because of the brie.
    Brie, when frozen and thawed, can change consistency and won't be quite as delicious afterward.

    My cranberry brie bites yield about 20 bites per batch. So if you have leftovers, simply store them in the refrigerator for a few days in an airtight container.

    Reheat cranberry brie bites in the oven for the best texture.

    Is there keto crescent roll dough?

    Crescent roll dough, or puff pastry dough, isn't keto by design, usually containing high carb counts from wheat flour and other additives.

    Luckily, you can create your own keto crescent roll dough from home with just a few ingredients!

    Whenever a recipe calls for a sheet of puff pastry, this is my signal to make a batch of fathead dough. 

    The ingredients in this recipe are simple, requiring just almond flour, mozzarella cheese, egg, and baking powder.

    Ingredients

    For the Fathead dough:

    • 1 ½ cups shredded mozzarella cheese
    • ⅔ cup almond flour
    • ½ teaspoon baking powder
    • 1 egg

    For the filling:

    • 100 grams brie cheese cubed
    • 4 tablespoon sugar-free cranberry sauce
    • fresh rosemary for garnish optional

    Instructions

    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a microwave-safe bowl, combine the shredded mozzarella cheese and almond flour. Heat it in the microwave in 20-30 second intervals, stirring in between, until the cheese is fully melted and well combined with the almond flour.
    • Add the baking powder and the egg to the melted cheese mixture. Mix until you have a smooth dough.
    • Roll the dough out between two sheets of parchment paper to about ¼-inch thickness.
    • Use a round cookie cutter or a glass to cut out small circles from the dough. Put each circle in a mini muffin tray to form a little basket
    • Place a small cube of Brie cheese into each dough basket. Bake in the preheated oven for about 8 minutes or until the dough is golden brown..
    • Remove the mini muffin tray from the oven and use a small spoon to create a small well in each baked dough basket.
    • Spoon a small dollop of sugar-free cranberry sauce into each well, and top it with a little more Brie cheese.
    • Return the mini muffin tray to the oven and bake for an additional 3 minutes, or until the Brie cheese is slightly melted.
    • Remove from the oven and let them cool for a few minutes before serving.

    Notes

    • Be careful not to overheat the cheese and almond flour mixture in the microwave. Heat it in short intervals and stir well between each interval to ensure even melting and combining.
    • If the dough becomes too sticky to work with, you can lightly grease your hands or the parchment paper with oil to prevent sticking.
    • Make sure to create a well in the baked dough baskets while they are still warm. This will make it easier to fill them with cranberry sauce and Brie cheese.
    • Feel free to garnish the bites with fresh rosemary leaves for added flavor and presentation.
