    Brie is one of those cheeses that truly is a treat! It makes such a delicious snack or party dish with its gooey texture and mild saltiness.

    If I want to serve something that looks and tastes fancy, I'll serve some brie cheese. Or, if I'm just wanting a satisfyingly sweet and salty snack, this oven-baked cheese is perfect for that too.

    It goes with so many things and is always a crowd-pleaser, no matter who I am serving. You will be surprised how fast this gets eaten up!

    Recipe Ingredients

    This keto-baked brie is easy to put together and uses just a handful of ingredients - some of which you may already have in your kitchen. Here is what I used to make this recipe.

    Brie Cheese

    Brie cheese is the main part of this baked brie recipe and is absolutely crucial. There is no other cheese quite like it or nearly as versatile. I usually find a great deal to buy a whole brie cheese at Costco.

    If you have never tried brie before, you should definitely give this recipe a try!

    Pecans

    Chopped pecans add just the right amount of crunch and nuttiness to this keto-baked brie recipe. They are full of nutty flavor and complement this mild cheese beautifully.

    If you don't have pecans, you can swap them out for walnuts or almonds.

    Brown Sugar Substitute

    Using a brown sugar substitute gives this dish the depth of flavor that brown sugar brings without the unnecessary carbs. It pairs perfectly with salty and mild cheese and enhances its natural flavor.

    Keto Maple Syrup

    Using keto maple syrup strengthens the flavor of the brown sugar substitute, and the combination gives the syrup a depth of flavor similar to caramel. It goes well with the other ingredients in the recipe and sets this brie dish apart from the rest.

    You can either make your own or buy one. My favorite is the one from ChocZero!

    Recipe Instructions

    This baked brie recipe is surprisingly easy to whip up in a pinch and tastes amazing! Perfect as a fancy appetizer, a quick sweet and salty treat, or as part of a fun party platter. 

    All of the steps are in the recipe card at the bottom of this post, but here is a brief overview of the simple process.

    1. Bake the cheese 

    Preheat your oven to 350°F and place the brie cheese wheel on a parchment-lined baking sheet.

    Bake for 12 to 15 minutes until the cheese is very soft but not fully melted. Remove from the oven and set aside for 10 minutes to cool down.

    3. Make the syrup

    While your brie is cooling, add the brown sugar substitute and keto maple syrup to a pot on the stove. Bring the mixture to a boil and whisk continuously for 1 to 2 minutes.

    Take it off the heat and set it aside.

    4. Add any toppings

    Once cooled down slightly, top the brie cheese wheel with chopped pecans.

    Then, drizzle your syrup over the top and serve warm.

    Serving Suggestions

    This baked brie recipe is perfectly balanced with sweet and salty. It would go great with some crackers, like these flaxseed crackers!

    It would also be delicious with some fruit or a sugar-free jam. You could even dip these tasty little cheese puffs in it for more cheesy goodness.

    Whatever kinds of foods that you like to mix sweet and salty with would go great with this brie dish. It balances the flavors perfectly and creates a unique snack or appetizer. It could also be classified as dessert!

    Before we get to the recipe card, here are some questions people often ask about this keto-baked brie.

    Do you take the rind off of brie before baking?

    You do not want to remove the rind from the brie before baking because the rind is what is holding the cheese together. Brie becomes very soft when heated, so you need the slightly sturdier rind to hold the cheese in its shape.

    If you like, you can even eat the rind. It is slightly tougher but still tastes like brie.

    What goes well with baked brie?

    If you are not sure what to serve alongside your tasty baked brie recipe, you have a lot of options.

    Brie is a very mild cheese and goes well with a variety of foods. It is great with fresh fruit, or you can eat it with any kind of keto crackers.

    You can also eat it with nuts or some tasty sugar-free jam.

    Should this be served hot or cold?

    Brie should always be served warm or at room temperature. When it is cold, it becomes rubbery and hard as well as bland. It is not very pleasant to eat cold.

    When it is room temperature or warm, it is gooey on the inside and perfect for dipping things into.

    How long will this last?

    This baked brie will last for 2 to 4 days after it has been baked. Make sure to keep it in an airtight container for optimal freshness.

    When you want to finish it, you can gently reheat it in the oven to bring its texture back to a nice liquid consistency. Or, you can try leaving it out at room temperature if your house is warm.

    It is best to make this brie dish the day that you will be serving it, as this is when it is most fresh and tastes the best. I don't recommend making oven-baked brie ahead of time.

    • 8-9 ounces brie cheese
    • ⅓ cup chopped pecans
    • ⅓ cup brown sugar substitute
    • 2 tablespoons keto maple syrup

    Instructions

    • Preheat the oven to 350°F.
