    I think it's great to have food that matches a party theme. Are you the kind of person who likes to use food as part of the decorations for celebrating holidays and special occasions?

    If so, then these fun cauliflower pizza bites are going to become one of your favorite recipes to make for parties or lunch.

    Our family always makes sugar cookies for every holiday. So, we have quite a collection of cookie cutters - but they can be used for more than just cookies!

    Today, I'm going to show you how easy it is to make cauliflower pizza bites into fun and different shapes. It is a gluten-free recipe that you can share at any party. Your taste buds are going to love it!

    Once you try these cauliflower pizza bites, you'll want to make them for all your special occasions. And you can bake up the crusts ahead and add toppings too. You'll just need to heat them right before serving.

    Ingredients

    Don't let the long list of ingredients scare you away. There are really just a few different parts to these pizza bites: cauliflower, spices, sauce, and toppings.

    Cauliflower crust

    To make the crust, you just need some cauliflower rice, an egg, and shredded mozzarella cheese. I also used grated Edam cheese, but you can use more mozzarella or parmesan instead.

    Spices

    The best way to make the cauliflower crust taste good is to add some spices to the batter. Here is what I used:

    • Mustard seed
    • Ground sage
    • Ground oregano
    • Dried thyme
    • Black pepper

    Pizza toppings

    Then, just add your favorite keto-friendly pizza toppings to the top. I used a combination of:

    • Ham steak
    • Red bell pepper
    • Green bell pepper
    • Red onion
    • Black olives

    Sugar-free pizza sauce

    Always read the ingredients label and ensure the pizza sauce you use doesn't have added sugar. I recommend Rao's or this homemade recipe!

    Tips

    • Use a food processor to make cauliflower rice. Keep chopping until it reaches a rice consistency. If you don't have a food processor, use a box grater.
    • Remove excess liquid. After making the cauliflower rice, use a cheesecloth or tea towel to strain as much liquid out of the cauliflower as possible.
    • Line baking sheet with parchment paper. If you don't, the pizza will stick to the baking sheet.

    Instructions

    The steps to make these pizza bites are really quite simple. You’ll make the cauliflower crust, then get all the spices, toppings, and sauce ready.

    After that, you just assemble all the ingredients and bake! Here's a bit more information about how I made this healthy recipe.

    Make the crust

    First, preheat the oven. Then, while it preheats, make the cauliflower crust.

    To do this, mix the cauliflower rice with the egg and Edam cheese. Then, mix in all of the spices.

    Cut out shapes

    This part is optional but so much fun! Lay the cookie cutters on the baking pan and then fill the cutter with the crust mix. This way, you have control over how thick or thin the crust is.

    You don't have to use cookie cutters. Any size of biscuit cutters can be used.

    Bake the crusts

    Bake the mini cauliflower crusts until they are golden brown. Then, let them cool down completely before moving to the next step.

    Add sauce and toppings

    Spread some pizza sauce on each bite. Then, sprinkle your toppings and finish with mozzarella cheese.

    Bake again

    Bake the pizza bites again. This time you just bake them long enough for the cheese to melt.

    ️ Serving suggestions

    These pizza bites are a delicious appetizer and a fantastic way to eat more veggies.

    If you are hosting a party, then serve them with another keto-friendly appetizer, like cheese dip. I like to serve it with pork rinds, but low-carb tortilla chips are another option.

    Variations

    Here are some of my favorite ways to change these pizza bites up.

    • Make them with a thick crust - fill the cutter all the way to the rim. For a thin crust, only fill the cutter halfway. Personally, I prefer the thinner crust, and you'll make twice as many.
    • The best thing is that you can make these cauliflower pizza bites in any shape you want. And, if you hoard cookie cutters as we do, you should have no trouble finding the shapes you want.
    • Because I was making Christmas appetizers, I used red and green bell pepper along with some ham. For some added color and flavor, I added some onion and black olives.
    • If you don't have cookie cutters, you can fill a muffin tin with the cauliflower crust and make pizza cups.
    • Add some garlic powder or Italian seasoning to the crust for an Italian flair. Fresh basil and mini pepperonis are also fantastic toppings to add.
    • Since Edam is a popular cheese for Christmas in the Philippines, I used it to top off the keto pizza bites. Unfortunately, it doesn't melt very well, so I blended in some grated mozzarella cheese.
    • Of course, you can use any cheese you prefer for these tasty appetizers. We also like to mix in provolone, parmesan, and even cheddar. So, feel free to mix it up.
    • Although you don't need to use a sauce, I like to add a thin layer of my homemade no sugar added pizza sauce. You can also use a low-carb marinara sauce instead.

    Can you freeze these pizza bites?

    Yes, you can freeze the baked crusts with toppings and bake the keto pizza bites frozen.

    To freeze them, wrap them up individually in plastic wrap and then place them in a resealable freezer-safe food storage bag. Keep them in the freezer for up to 6 months.

    Ingredients

    • 1 head cauliflower riced
    • 1 large egg beaten
    • ¾ cup Edam cheese grated (queso de bola)
    • ¾ cup mozzarella cheese grated
    • ⅛ teaspoon ground mustard seed
    • ⅛ teaspoon ground sage
    • ⅛ teaspoon ground oregano
    • ⅛ teaspoon dried thyme
    • dash ground black pepper
    • 1 slice ham steak cubed
    • ¼ cup no sugar added pizza sauce
    • 1 small red bell pepper julienne cut
    • 1 small green bell pepper julienne cut
    • 1 small red onion julienne cut
    • black olives pitted and sliced

    Instructions

    • Strain excess liquid of riced cauliflower.
    • In a bowl, combine riced cauliflower, beaten egg and Edam cheese. Add mustard seed, sage, oregano, thyme and black pepper. Mix well. No need to add salt since Edam cheese is usually a bit salty.
    • In a baking sheet, spread cauliflower mixture. Using Christmas Cookie cutters, fill with cauliflower mixture. If you prefer a thick pizza, fill the cookie cutters to rim. If you want a thinner pizza, fill only half and then flatten with the back of the spoon.
    • In a greased baking sheet, bake cauliflower crusts in a preheated 350°F oven for 6 to 10 minutes or until they start to brown. Avoid browning too much as you will bake this again with the rest of the ingredients. Allow to cool for handling.
    • Arrange pizza bites. Spread a thin layer of Homemade Sugar Free Pizza Sauce, add grated Edam and mozzarella cheese. Top with red and green bell pepper, red onion and ham pieces. For Christmas shapes like the Snowman and Angel, add a slice of black olives at the upper part – resembling the portion of the head. Top with more mozzarella as desired.
    • In a preheated 350F, Christmas pizza bites for 5 to 8 minutes or until cheese has melted and a bit golden. Edam cheese may become a bit crunchy as it doesn't easily melt.
    • Serve immediately!

    Notes

    Makes 6 Thick Pizza Bites or 12 Thin Pizza Bites (see #3) Add more Homemade Sugar Free Pizza Sauce if you use thinner pizza bites.
    Any size biscuit or cookie cutters can be used but varying sizes will finish baking at different times.

      The directions call for mustard seed, oregano, sage, thyme,and black pepper, but no where does it say the amount.
