    Keto Strawberry Cream Pie with Pecan Crust

    This light and fluffy keto strawberry cream pie is delicious, creamy, and so easy to make! No baking required, this icebox pie sets in the fridge for a perfect summer treat.

    Nothing says summer like fresh berries! 

    I like to take advantage of the lower berry prices in summertime. They’re great to have as a simple snack or to brighten up a summer salad. Plus, they freeze well for later!

    Berries have lower sugar than other fruit. This means they can be enjoyed in moderation on a low-carb or keto diet. Their sweetness also makes them wonderful for desserts!

    A perfect summer treat!

    So a few years ago during one very hot weekend, I was inspired to make this easy no bake keto strawberry cream pie. 

    The result was the perfect light and airy treat! You will love the flavor of this pie. It has just the right amount of sweetness.

    It’s a great dessert for the whole family, especially when strawberries are in season. And making this low carb treat is as easy as… well… pie!

    One of the great parts about this recipe is that it requires NO baking!

    That’s right, not even the crust needs to bake. So during those hot summer months when you don’t want to turn on the oven, just whip up this low carb strawberry pie. 

    This kind of recipe is called an ice box pie. They started in the South, where summer temperatures and humidity are pretty brutal. To avoid heating up the kitchen, Southerners created recipes for pies that set in the fridge instead of the oven.

    Our summers may be a little milder up north, but we still get a few hot weeks. That’s why I decided to make this keto strawberry pie with a pecan crust that doesn’t need to bake at all.

    The crust simply requires mixing the ingredients and pressing them into a pie dish to chill in the fridge. 

    For the filling, you’ll blend your strawberry puree with the gelatin, whip the heavy cream, then fold the two together and pour into your crust to set.

    Allow it to chill for about four hours, and you have yourself the perfect summer treat!

    Keto strawberry pie without the crust

    Even with the crust, this pie is very low carb. The recipe yields 8 slices, and each one has 7 grams of carbs and 3 grams of fiber. So each slice will have 4 net carbs.

    However, if you want to lower the carbs even more, simply make the strawberry mousse pie without the crust!

    If you divide the filling into 8 servings, each one will have 3 grams of carbs. There is no fiber, so the total carbs and net carbs will be the same.

    Whether you enjoy this pie with or without the crust, it will make a delicious keto treat either way!

    Variations

    There are a few different ways to make this low carb strawberry pie based on your preferences. 

    • No dairy: Replace the heavy whipping cream with whipped coconut cream
    • Substitute protein isolate: Simply use more almond flour in the crust
    • Other berries: You can use any low carb berry in this recipe. Just be aware that a different ingredient will change the macros slightly
    • Other low carb sweeteners: I choose to use Monkfruit because I don’t experience any side effects. However, you can use any low carb sweetener. The crust requires about ⅓ cup of a sugar equivalent sweetener, and the filling needs about ¾ cup of a sugar equivalent such as Swerve.

    An easy to make low carb pie that takes little time to prepare. It's a light and airy no bake icebox pie that sets in the refrigerator.

    Ingredients

    Crust:

    • 1 cup almond flour
    • 1 ¼ cup finely ground pecans
    • ⅓ cup protein isolate I used zero carb Isopure
    • 3 tablespoons low carb sugar substitute
    • ⅛ teaspoon stevia concentrated powder
    • ¼ cup butter melted

    Filling:

    • 10 grams grass-fed gelatin about 1.5 packet
    • 6 tablespoons water divided (3 cold, 3 boiling)
    • 3 cups strawberries fresh or frozen
    • ¼ teaspoon stevia concentrated powder
    • 2 ¼ cups heavy cream
    • 1 ½ teaspoons vanilla extract

    Instructions

    Crust

    • Combine all crust ingredients in 9 in deep dish pie pan. 
    • Stir in butter thoroughly then press evenly on bottom and sides of pan.
    • Chill for at least 2 hours.

    Filling:

    • In small bowl, sprinkle gelatin over 3 tablespoons cold water to allow gelatin to soften. Add 3 tablespoons boiling water and stir until the gelatin is completely dissolved and mixture is clear. Set aside.
    • If using frozen strawberries, heat them in pan or microwave until thawed. Add stevia and monk fruit to strawberries and puree with blender. Stir in gelatin mixture. Set aside.
    • Whip heavy cream with vanilla extract until soft peaks form. Then slowly fold in the pureed strawberry mix. Pour into chilled crust.
    • Top with additional sliced strawberries if desired. Place in refrigerator and allow to chill until set, about 4 hours.

    Notes

    The crust requires about ⅓ cup sugar equivalent sweetener and the filling needs about ¾ cup sugar equivalent such as Swerve or Sukrin.

      Is there a substitute for Almond flour? I buy the super fine kind and it's always grainy!

        You could try finely crushed low-carb cookies or crackers. Because it's no-bake, you'll need to use a flour substitute that tastes good without baking.

      Why does it call for monk fruit sweetener plus the monk fruit extract? Is the extract needed?

        It's done to reduce the erythritol which is added in the bulk monk fruit sweetener. But you can use the sweetener conversion calculator to change any sweetener to another.

        You could try agar agar. I use it as a stabilizer to prevent the whipped cream from going flat.

      The notes call for sugar substitute in the filling. There is no Swerve in the ingredients list, only Monk fruit extract

        The notes give the option to use ONLY a one-for-one sugar substitute like Swerve if you don't have the monk fruit extract.

      Sounds tasty! Strawberries start showing up around mid June, I can't wait!

      I may try a little experiment, mixing the fruit and the cream in my cream whipper, shake it up, and spray out some mousse. Just like cheesecake, I don't need the crust, I just like the filling.
