    Spinach Tomato Meatza Pizza

    A paleo-friendly low-carb meatza pizza is basically just a seasoned ground beef mix cooked flat to make a crust. Then, it's topped off with veggies. Perfect for pizza night!

    I was in the mood for some yummy low-carb pizza. But, I wanted to try something a little bit different than the standard bread-like pizza crust.

    You may have heard of a meat crust pizza referred to as "meatza." I decided to use tomato slices instead of sauce and added some chopped spinach to make this spinach tomato pizza.

    If you have a favorite low-carb paleo meatball recipe, I'd give it a try for the crust because my crust tasted similar to a meatball. Or, you could use either my low-carb meatball or meatloaf recipe.

    I'm not sure where the idea of meatza came from, but it really is a novel idea. It's a perfect way to make low-carb pizza.

    Just grab your favorite ground meat, season it, and roll it out into a dough.

     Why you'll love it

    This low-carb pizza recipe is super easy and brimming with flavor. It's a delicious way to enjoy your favorite type of comfort food.

    This is a high-protein and grain-free pizza recipe. It's basically a meat pizza with tons of cheese melted on top. You are going to love every bite!

    Ingredients

    There are two parts to this meatza pizza - the meat crust and the toppings. Here is a bit more information about what you'll need:

    Eggs

    The eggs are very important. They act like glue, keeping all the meat and ingredients together.

    Spices

    You also need Italian seasoning with some extra garlic powder and red pepper flakes. If you use garlic salt, just don't use extra salt.

    Meat

    I used two pounds of ground beef. If you wanted to, you could make the meatza with half ground beef and half Italian sausage (which is basically pork sausage).

    I do not suggest using ground chicken or ground turkey because they do not have enough fat.

    Tomatoes

    Instead of using any kind of high-carb sauce, I just use two fresh tomatoes on my meatza pizza. The fiber in the tomatoes means they will have fewer net carbs than a sauce will.

    Spinach

    This is optional, but I definitely recommend it. The spinach contains essential nutrients and lots of fiber!

    Cheese

    Finally, you'll also need shredded mozzarella cheese along with some shredded parmesan cheese.

    Tips

    • Add marinara sauce. This will increase the amount of carbs, so add just a little bit.
    • Use parchment paper. A piece of parchment paper will protect the pan as the meatza cooks. This will make cleaning up easier too.
    • The meat doesn't have to fill the pan. Round the corners and it will bake just fine.
    • Add fresh basil on top. This will really give it a delicious aroma and flavor.

    Instructions

    The steps to make this gluten-free meat crust pizza recipe are really quite simple. Here's how I did it!

    Mix eggs, parmesan and spices

    Beat the eggs with the parmesan cheese and seasonings in a small bowl.

    Add ground beef

    Next, add the ground beef. Stir this together until it is completely mixed together.

    Bake the meatza

    Spread the meatza mixture on a baking sheet that has raised sides. Bake it and then drain off any grease.

    Add toppings

    Finally, put some sliced tomatoes and shredded mozzarella cheese on top. Broil until the cheese is golden.

    ️ Serving suggestions

    Serve meatza with the same things you would eat with other types of keto pizza.

    You serve this pizza by the slice, so you don't even need a fork to eat it. Just pick it up in your hands and enjoy each cheesy slice.

    Serve this with some cauliflower rice or your favorite keto breadsticks that you can dip into olive oil. Or, add your favorite low-carb keto salad on the side with it.

    Variations

    The flavor combinations are endless for this meaty low-carb crust. Simply change the meatza toppings to customize the recipe. I think a bunch of low-carb vegetables would be delicious on top of this pizza recipe.

    I think it would be a lot of protein to put meat toppings on a meat-based, low-carb crust. I prefer using the crust for a cheese or vegetable pizza. That way, you are getting a more complete meal.

    Next time, I will try using low-carb pizza sauce and different toppings.

    This is a great way to make a low-carb pizza without having to bother with a flour-based crust. However, if you'd prefer a more traditional bottom, check out my coconut flour or cauliflower pizza crust recipes.

    You can also make a chicken pizza crust if you'd rather use blander ground meat for your meatza.

    Before we get to the printable recipe card, here are some questions people often ask about how to make meatza.

    Is pizza sauce keto?

    When you are on a low-carb diet, every carb counts. Pizza sauce can be keto-friendly, but you have to measure it. It's better to use tomato sauce, but even that is kinda high in carbs.

    How do you spread the sausage crust out?

    I use a rolling pin to make this nice and thin.

    Is this similar to a meatloaf?

    Some might call this meatza pizza a flat meatloaf covered with pizza toppings. So, regardless of what it's called, I just think it's a delicious low-carb meal that really satisfies.

    What size pan should I use?

    It doesn't matter what shape of pizza you make. A jellyroll pan is nice to use for a sheet pizza. But, you can also use a pizza pan for the traditional round pie shape.

    Ingredients

    • 2 eggs
    • ½ cup parmesan cheese grated
    • 2 teaspoons Italian seasonings
    • 1 teaspoon garlic powder
    • 1 teaspoon salt
    • 2 pounds ground beef
    • 2 tomatoes
    • 9 ounces frozen chopped spinach cooked and drained
    • 2 cups mozzarella cheese shredded

    Instructions

    • Beat the eggs with the parmesan cheese and all seasonings.
    • Add the ground beef and mix until well combined.
    • Spread the mixture onto a large baking sheet with sides (a jelly roll pan works well).
    • The mix doesn’t have to fill the bottom of the pan, I made rounded ends.
    • Bake for about 20 minutes in a 450 degree F oven.
    • Remove from oven and drain off any grease.
    • Place sliced tomatoes and spinach on top then sprinkle with mozzarella cheese.
    • Return to oven on a high rack near broiler. Broil until cheese is melted and brown.

    Use cheese alternative for paleo.

      Can you mix 1 lb Italian Sausage and 1 lb ground beef instead of using 2 lbs of ground beef?

          I made this yesterday combining 1 LB Italian Sausage and 1 LB Lean Ground Beef. Followed your recipe. I did add low carb pizza sauce, black olives and sliced mushrooms. Next time I might add some pepperoni. It was fantastic! Great low carb solution for those days when one is simply hungry for a bit of a change of pace. Extremely tasty! Simple to prepare. I am hoping I can freeze a couple of servings of this. Thank you for this recipe (and, of course, all the other delicious recipes you have shared with us).

      It's the fear of gluconeogenesis which isn't something to worry about. Although, it is good to keep protein within reason for your weight.

      So good! We used a low carb pizza sauce and did add some pepperoni, but it was mostly cheese and veges on top. We had so much left over, because there's just the two of us, that my husband fried some eggs this morning and put them on top of the re-heated pizza - delicious and very filling for a great breakfast! Thanks for the recipe!

        Yes. You need to cook the ground beef crust first, then bake with toppings.

      I am just wondering if you could add almond flour to the meat crust to make it a little more like regular pizza?????

        This is more like a meatloaf crust. If you want a more breadt crust, I'd leave out the meat and use an almond flour based crust.
