    How to make chicken green bean stir fry

    This is a very simple recipe that only requires basic cooking abilities. I like to use fresh veggies, but if you use canned tomatoes and frozen green beans, you can eliminate having to prep the vegetables.

    It's made in three simple steps:

    • Prepare and cook the chicken. Cut chicken into thin slices. Melt butter in a large skillet over medium heat. Add the chicken and garlic to the skillet. Cook until all the meat turns white.

    • Prep the vegetables while the chicken is cooking. Chop the tomatoes and snap off the ends of the green beans (if using fresh).

    • Cook with remaining ingredients. Add the vegetables and seasonings to the cooked chicken. Mix well. Cover and cook at low heat for 10-15 minutes.

    That’s it! Just some chopping, then you add everything to the pan and let it cook. 

    No need to spend a bunch of time in the kitchen for a tasty and healthy meal like chicken green bean stir-fry.

    Recipe variations

    There are a few slightly different ways you can make this recipe based on what’s most convenient for you.

    • Use canned/frozen veggies: I like to use fresh tomatoes from my garden, but you can always replace them with 1 can of diced tomatoes. For the green beans, you can use fresh, frozen, or canned.
    • Frying: I like the flavor you get from frying in butter, but you could also use olive oil or avocado oil.
    • Make a side: If you want a heartier dish, you could serve it over some easy cauliflower rice.

    Ingredients

    • 3 chicken breasts skinless and boneless
    • ¼ cup butter or frying oil olive or avocado oil is best
    • 2 cloves garlic minced
    • 16 ounces string beans
    • 2 tomatoes cut into 16 pieces
    • 1 Tablespoon lemon juice
    • ½ teaspoon thyme
    • 2 teaspoons salt
    • ¼ teaspoon pepper
    • 1 Tablespoon tamari gluten-free soy sauce or coconut aminos

    Instructions

    • Cut chicken into thin slices.
    • Melt butter in large skillet. Add chicken and garlic. Cook until all meat turns white.
    • Add remaining ingredients and mix well. Cover and cook at low heat for 10-15 minutes.

    Notes

    Canned green beans and tomato can be used to eliminate the need to prepare the vegetables.
    Red pepper flakes can be sprinkled on to kick up the seasoning.

      This turned out so good! I added some green and red bell pepper strips to the vegetables and splashed a little toasted sesame oil over the top, giving it a quick mix before serving. Delicious!

      Are canned diced tomatoes okay when garden tomatoes aren't in season? And, would you use one can or two?
