    Keto Apple Fritter Bread with Zucchini

    This gluten-free keto apple fritter bread recipe uses zucchini as mock apples. It makes the perfect warm and delicious fall treat for those watching carbs and sugar!

    Fall is the perfect season for warm and cozy baked goods. In fact, you’ve probably seen tons of low-carb pumpkin recipes for breads, muffins, cookies, and more. 

    But what about apples, the other classic fall flavor? This fruit is higher in carbs and usually not eaten on a keto diet. That’s why I created my gluten-free mock apple zucchini bread! 

    It uses chopped zucchini and apple extract to mimic the fruit’s flavor and texture. There are no actual apples needed! It’s a great way to enjoy this classic fall treat without the guilt.

    So when you’re looking for something delicious to enjoy on a chilly fall day, give this mock apple fritter recipe a try!

    Making Keto Apple Fritter Zucchini Bread

    This keto zucchini bread recipe comes together in three simple parts. First, we’ll prep the batter by mixing together the ingredients.

    Next, we’ll assemble the layers. And finally, we’ll bake our delicious bread and finish it off with a sweet glaze!

    To start, we’ll make the batter:

    1. Using an electric mixer, beat together the white granular sweetener and butter until smooth and creamy. Then beat in the eggs, one at a time, and apple extract until fully blended.
    2. In a separate bowl, sift together the flours, baking powder and optional xanthan gum.
    3. Add the dry ingredients into the creamed butter mixture and stir until well-combined.
    4. Add the almond milk into the batter and mix until smooth.

    The next step is layering the apple fritter bread:

    1. Preheat the oven to 350°F and either line a 9×5-inch loaf pan with parchment paper or grease.
    2. Mix the low-carb brown sweetener and cinnamon together in a small bowl, then set aside.

    1. Spread half of the batter into the loaf pan. Add half of the chopped zucchini, then half the brown sweetener and cinnamon mixture. Lightly press the zucchini into the batter.
    2. Spread the remaining batter over the zucchini layer.
    3. Top with the rest of the zucchini mixture plus the cinnamon mixture. Lightly press the chopped zucchini into the batter.
    4. Bake until top is golden brown and toothpick inserted near center comes out clean. Then remove to a cooling rack.

    Finally, cool and add the glaze:

    1. Allow the bread to cool for about 15 minutes.
    2. Meanwhile, prepare the glaze by mixing together powdered sweetener and heavy cream until well-combined.
    3. Once the bread has cooled, drizzle with the glaze.

    Cut the apple zucchini bread into 12 slices and enjoy!

    Using Xanthan Gum

    Xanthan gum is often used as a low-carb binding agent in baked goods. However, not everyone likes using this ingredient.

    If you prefer to use guar gum, you could substitute the xanthan gum. It should be a suitable replacement to hold the gluten-free bread together.

    The other option is to simply omit the xanthan gum. Just be aware that the bread does crumble a bit more without it.

    Carbs in Apple Fritters

    Apples themselves are a higher-carb fruit that is not recommended on a low carb diet. Once you include them in baked goods like apple fritters, that increases the carbs even more.

    For example, one apple fritter from Dunkin' Donuts has 60 grams of total carbohydrates and 27 grams of sugar! 

    Compare that to this recipe for keto apple fritter bread. If you cut the loaf into 12 slices, each slice will have 6 grams of total carbohydrates and 3 grams of fiber. That leaves us with 3 net carbs and only 1 gram of sugar per slice.

    What a difference! That’s why I love making my own mock apple recipes to satisfy a craving for a fall-flavored treat.

    Ingredients

    • ¼ cup brown sweetener
    • 1 teaspoon cinnamon
    • ½ cup low carb sugar substitute I used Sukrin
    • ½ cup butter softened
    • 3 eggs
    • 2 teaspoons apple extract
    • 1 cup almond flour
    • ½ cup coconut flour
    • 2 teaspoons baking powder
    • ½ teaspoon xanthan gum optional
    • ½ cup unsweetened almond milk
    • 1 medium zucchini peeled, seeded and chopped

    GLAZE:

    • ¼ cup powdered sweetener
    • 2-3 tablespoons heavy cream

    Instructions

    • Preheat oven to 350°F. Use a 9x5-inch loaf pan and spray with non-stick spray or line with parchment paper. I prefer to use parchment paper so it’s easy to remove the loaf from the pan after baking.
    • Mix Sukrin Gold and cinnamon together in a bowl. Set aside.

    • In another medium-sized bowl, beat white granular sweetener and butter together using an electric mixer until smooth and creamy.

    • Beat in eggs, 1 at a time, until blended in; add in apple extract.

    • Spread half the batter into the prepared loaf pan; add half the zucchini, then half the Sukrin Gold/cinnamon mixture. Lightly pat apple mixture into batter.

    • Spread the remaining batter over apple layer and top with remaining apple mixture, then the remaining brown sugar/cinnamon mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.

    • Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 1 hour to 1 hour 10 minutes.

    • To make glaze, mix powdered sweetener and cream together until well mixed.

    You can use any keto sweetener that you prefer in the recipe.

      This was delightfully delicious and a pleasant surprise using zucchini! I have been on Keto almost 3 years and somehow never ran across zucchini as an apple substitute. I've only seen chayote recipes and those are not carried by any of my local grocers, so I was happy to try the zucchini. This recipe yielded generous portions and low carbs! I actually added 1/3 cup chopped pecans on top with the sweetener/cinnamon mixture, plus a generous dollop of whipped cream when serving and the carb count was only 4.5 for 10 servings. It was moist and yummy and just like apples!!

      I don't have coconut flour. Is it definitely needed or could I just up the amount of almond flour because I have lots of that.

        You could try using all almond flour but you may need to reduce the egg and or liquid. It should work without modification but may need slight tweaking. The texture will be less spongy without the coconut flour.

        Will fix that in the recipe card. You can use any brown sugar substitute for the Sukrin Gold and any powdered sweetener for the Sukrin Melis.

      Can I do it in muffins pan? If yes...how long in the oven! I did this recipe in the loaf pan...it was delicious but I want to try like muffin size...easier to freeze.

        The muffins should bake in about half the time, but exact time can vary so it's best to just keep an eye on them as they bake.

      Loved the cake. I skipped the glaze and put the zucchini on the top only instead of as a middle layer also, in order to lower the carb count. It did not really substitute the apple feel even though it was nice as zucchini itself so next time I will just use the crumble and skip the zucchini to lower the carb count even more. Delicious cake that I will use for other layering or just the way it is!

      This turned out great! I used all the ingredients, but in a slightly smaller pan, so the loaf is a little taller. It took 1 hour and 15 minutes to bake.The zucchini actually seemed like apples! The bread has a nice texture and would make a good base for other flavors. Next time I'm going to try out as a cinnamon crumb cake loaf.

        It's a quick bread so you can make them as muffins too. Just adjust baking time as needed.

        It's not easy to find in local stores so I've ordered products online. OliveNation is a brand that I've used and like. You can also use apple flavoring.

      This was delicious!
      Instead of bread, I made the recipe into jumbo muffins. I used monk fruit sweetener (there is a gold and classic version. I put the classic version in the spice grinder to make a powdered version for the glaze). I was unable to find apple extract, so I used apple bourbon that was in the house.

      Hi Lisa! I have saved (pinned) a guh-zillion of your recipes. I am a slow-starter, so I've only made a few... maybe 10 , or so (although, a couple, repeatedly!). I would love to try the Sukrin products. As for this recipe, as well as (seemingly) a million others, I cannot try it as it is written (there's a chocolate cake recipe that boasts being the best, that I would love, love, love to try) Unfortunately, I am allergic to zucchini ----after receiving the results of my allergy test(s) I asked, how can I be "allergic" to zucchini???!?!??!??! It's mostly water!!!! Nonetheless, I was assured that I am allergic to it, and that I shouldn't eat it at all. Darn. Any suggestions as to what I could use to replace the zuchinni in recipes (can't imagine what to replace zucchini noodles with!) ... especially baking recipes like this one?

        I've used chayote squash and jicama as "apple" in recipes so either of those would work in this recipe in place of the zucchini.

        Swerve is just as good. Unless you order Surkin online it’s hard to find. However you’ll most likely have to order the apple extract online as well so might as well order both if you want to try how different the sweeter is but Swerve is the same thing

      I've tried Sukrin sugar substitutes and they are great tasting. I haven't tried apple recipes, using squash. This is the second one I've seen, on the internet. I love zucchini, so whether it tastes like apple or zucchini, I'm sure I'd enjoy it.

      I buy Sukrin on Amazon--I have to purchase all healthy sweetener alternatives on there because none of the grocery stores where I live carry it Sprouts carries Sukrin occasionally. All I can get is stevia at the grocers. Where do people live who have access to all this wonderful stuff for low carb? I'd be lost without Amazon, but don't really like purchasing everything from them.

        I can find Swerve, Erythritol, stevia, and monk fruit in my local grocery store in Southeastern Connecticut. I've never seen Sukrin there.

      Those extracts are super awesome for flavor without the carbs. I'm going to have to try this recipe out as a much healthier alternative to my old favorite apple cake recipe.       I made this today. No one knew it was courgette (Zuchini )
      I used an apple oil as I couldn't find extract. It was perfect! So nice to have apple cake again, it was very sweet though, which I didn't mind, one slice with cream is enough. I used Erythritol and i couldn't taste the cool aftertaste thing that some people dislike. Thank you for this recipe, I shall make it again. The website wouldn't allow me to give 5 stars so I had to give it 4

      This is Definitely on my "to make" list! I usually use chayote instead of zucchini to replace apples (we think it's much closer), but since chayotes take 40 minutes or so to soften on top of the stove, I think they'd be too crunchy for this recipe--I'm going to experiment with zucchini first, then with cooked, softened chayote.

        Maryann, the erythritol in the sweeteners is not absorbed. More than half the remaining carbs are fiber and which aren't completely absorbed either.

      Whenever I see a recipe that calls for xanthan gum I use Great Lakes gelatin instead. The same one I use for making gummy candies.

      I may try this with eggplant. I think it would have a close texture to baked apples, and its very mild in flavor. Turnips may work too, although I've never tried to sweeten them.

      This looks delicious and I will for certain try this bread. The funny thing i,s I am always looking at American recipes using Swerve ,which I cannot buy here. Sukrin however I do and have, therefor, at home. One must only be aware it can have a slight cooling aftertaste.
