    Why you'll love it

    Hash browns are one of the best parts of breakfast! Even though I've heard of people making hashbrowns out of cauliflower, I think making cabbage hash has the most authentic flavor and mouth feel.

    These keto cabbage hash browns have such a full and powerful flavor. The texture isn't identical to potato hash browns, but it is so close that you might even prefer the shredded cabbage version.

    These veggie hash browns crisp up to a beautiful golden brown color, and you'll smell the garlic and spices as the hash browns fry.

    It's such an easy recipe to follow that you can make it in the morning or in the middle of the day for lunch.

    Ingredients

    There are basically three main ingredients and a handful of spices in these crispy keto hashbrowns. Here's a bit more information about what I used.

    Shredded cabbage

    This is the main ingredient in cabbage hash browns. I shredded a green cabbage at home for the freshest flavors.

    Eggs

    Use a few large eggs as the emulsifiers. They are basically the glue that holds all the ingredients together and makes the cabbage hash hold its shape.

    Onion

    Dice up a small yellow onion really small so that it doesn't distract from the taste and texture of the cabbage hash.

    Garlic

    Fresh garlic will have so much more aroma and flavor than garlic powder. I suggest buying garlic cloves and dicing them yourself for the best results.

    Spices

    This is the part where you have the most room for creativity. Use your favorite herbs and spices. I used basil, paprika, onion powder, salt, and pepper.

    Tips

    • Let the oil get hot. This is what gives the hashbrowns the crispy exterior, so wait until you hear the oil sizzling.
    • Place hash browns on a paper towel-lined plate. After they finish frying, let them set on a paper towel so that they can soak up some of the extra grease.
    • Wait until the bottom of the cabbage hash is golden brown before you flip it over. These are delicate, so the longer you wait to flip them over, the less likely they will fall apart.

    Instructions

    These cabbage hash browns are so easy to make that after you make them once, you'll want to make them over and over again.

    Mix the ingredients

    First, mix all the spices together in a bowl - with the exception of the oil. Then, add cabbage and stir it together completely.

    Next, heat a layer of oil in a large skillet over medium-high heat.

    Fry the cabbage hash browns

    When the oil is hot, form the cabbage mixture into pancakes, and drop them into the skillet. Brown on both sides until they are crispy.

    Serve hot

    Remove, and allow to drain on a paper towel-lined plate before serving.

    Don't let these cabbage hash browns sit for too long; they taste best when you serve them nice and hot.

    ️ Serving suggestions

    There are a lot of different ways to serve these keto cabbage hash browns. They are the perfect addition to your low-carb breakfast meal plan.

    If you are the kind of person that enjoys salty and sweet combos, then serve this with some keto cinnamon waffles or Oreo chaffles.

    Or, keep things simple and just top them with sour cream and munch on simple sous vide keto egg bites.

    Scrambled eggs require almost no prep time - all you need is a nonstick frying pan. They taste amazing with these hashbrowns!

    Variations

    There are a lot of different ways to make crispy cabbage hashbrowns. Here are a few of my favorite variations of this easy recipe.

    • Make it sweeter. Add a little bit of your favorite sugar substitute.
    • Use an air fryer. If you don't want to pan-fry the keto cabbage hash browns, cook them in an air fryer - just place aluminum foil in the basket before you add the hash browns.
    • Make it spicy. Drizzle some sriracha or hot sauce on top.

    Are cabbage hash browns healthy?

    Cabbage is an incredibly nutritious leafy green vegetable. It's high in fiber which benefits your gut health. It also has a lot of vitamin C for your immune system. It's also been known to help people lower cholesterol and improve their inflammation. So yes, these hashbrowns are very good for you.

    Should I use red or green cabbage?

    I prefer to use green cabbage because it has the mildest flavor, and the green colors easily turn brown, just like regular hashbrowns. Red or purple cabbage can also work, but it will have a stronger flavor and different texture, and the colors will stand out.

    How many carbs are in cabbage hash browns?

    There are three grams net carbs in each serving of these hashbrowns.

    How do you bind hashbrowns together?

    Eggs make the best emulsifiers. If you are allergic to eggs, I suggest using flax eggs instead.

    Ingredients

    Notes

    I like to use the pre-shredded cabbage. If you grate the cabbage yourself, you may need to use paper towels to soak up any excess moisture. I do find that box graters will bring out more of the liquid in grated cabbage when compared to used a food processor grating blade.

      The cabbage hash browns ended up being more like scrambled egg with cabbage. It was missing something to give it more body like almond flour to bind it together. I liked the concept, so maybe this recipe needs a little tweaking.

      Hi Lisa not sure you will want to post this review. I grated the cabbage on my box grater and added some sugar substitute other than that followed the exact recipe. Mine were very watery and the egg was not enough to bind them in order for a pancake like hash brown. They tasted really good but did not stay in any formation. The second batch I added another egg and some grated parmesan to see if that would help bind them which did a bit, but the first ones tasted better

        The water content in cabbage can vary and I do find that box graters tend to bring out more of the water versus a food processor grater or pre-shredded cabbage. I can add a note about placing the grated cabbage on paper towels first to remove any excess water.
