    Go beyond muffins with fresh fruit and whip up a batch of jam muffins! These jam-filled muffins will elevate your breakfast or lunch. In fact, they toe the line between muffins and cupcakes.

    The jam in the middle is a surprise inside the muffins. Kids and adults love them, and I'm sure you will enjoy them too.

    These baked muffins fit perfectly with a low-carb lifestyle. They are also gluten-free, so you can share them with anyone who is gluten-sensitive or intolerant.

    You will more likely stay dedicated to the ketogenic diet when you make delicious baked goods. Save this muffin recipe; you'll want to make it again!

    Ingredients

    All of the ingredients I used are really easy to find. If you have baked keto desserts, you might already have everything you need.

    Almond flour

    Whenever you bake with almond flour, use almond flour and not almond meal. If you use almond meal, the muffins will have a grainy texture.

    Powdered sweetener

    Use powdered sweetener to give the muffins the classic fluffiness you'll love. Liquid or granulated sweeteners won't add to the light texture in the same way.

    Baking powder

    Baking powder also helps the muffins rise beautifully and makes them extra airy.

    Butter

    Use unsalted melted butter so that you can control the sodium levels in the muffins. If you need this recipe to be completely dairy-free, use ghee.

    Eggs

    These are the emulsifiers. Use them to bind all the ingredients together.

    Almond milk

    Whenever you bake keto recipes, use unsweetened, plain almond milk. If you use vanilla almond milk, use less vanilla extract, or else the vanilla flavor will be overpowering.

    Vanilla extract

    Always add a bit of vanilla or almond extract whenever you bake.

    Sugar-free strawberry jam

    In order to keep this recipe low-carb, I used sugar-free strawberry jam from ChocZero.

    You don't have to use strawberry - you can use your favorite low-carb fruit jam. I have a fantastic recipe for sugar-free raspberry jam that will taste amazing as the filling.

    Tips

    • Use silicone muffin cups. The muffins will stick to the paper liners but come right out of the silicone ones.
    • Be careful with the toothpick trick. Since these are filled with jam, the "toothpick inserted" trick to check if it is fully cooked won't work. Only stick the toothpick into the top of the muffins, not into the middle.
    • Cool completely. They are soft muffins, so let them cool before you try to eat them.

    Instructions

    Here's how to make one of my favorite muffin recipes.

    Mix the ingredients

    Mix all the ingredients - except the jam - together in a large bowl.

    You don't have to mix the flour mixture separately from the wet ingredients. Mix them together.

    Use the correct sized bowl. A medium bowl might work, but if it is too small, it will be difficult to mix together.

    Fill muffin liners

    Add muffin liners to your muffin tin. Then, fill each one about ⅓ of the way with the batter.

    Add strawberry jam

    Place a spoonful of your favorite jam in the middle of the liners.

    Top with more batter

    Add the rest of the batter on top of the jam.

    Bake the jam muffins

    Finally, bake the muffins until they are golden brown. Let them cool completely before enjoying them.

    ️ Serving suggestions

    These muffins filled with strawberry jam are healthy to add to your breakfast or lunch.

    If you want to enjoy them for breakfast, add something with lots of protein on the side. I love these keto egg bites. They are easy and portable - just like the muffins.

    Variations

    There are more ways to make these muffins than just filling them with strawberry jam. Here are some fun variations you can make to this classic recipe.

    • Make chocolate chip muffins. Make some delicious muffins with sugar-free chocolate chips instead.
    • Make them richer. Use Greek yogurt instead of butter (remember to use unsweetened and unflavored Greek yogurt).
    • Add a crunchy topping. Top the muffin batter with some shredded coconut flakes.

    Can you freeze these muffins?

    Yes, these muffins are perfect for freezing! First, place them in a single layer on a baking sheet. Then, place the baking sheet in the freezer. Once all the muffins are completely frozen solid, place them in a freezer-friendly food storage bag.

    They will stay fresh in the freezer for up to six months.

    Is strawberry jam keto?

    No, not all types of strawberry jam are keto-friendly. You have to look at the ingredients label and the nutrition facts. Make sure that the jam you buy is low in sugar and carbs.
    I always like to buy my strawberry jam from ChocZero! It's only 1G of net carbs per serving and has added chia seeds for some extra texture in every bite. So yum!

    How do you store jam-filled muffins?

    Store cooled muffins in an airtight food storage container and keep them in the refrigerator for up to three days.

    How do you make muffins without muffin tins?

    If you don't have a muffin tin or a muffin pan, I have a hack for you! Just place some mason jar lid rings on a baking sheet. Then, place each muffin liner inside the mason jar rings.

    The rings will prevent the muffin liners from sliding around too much.

    Ingredients

    • 1 ⅓ cups almond flour
    • ¼ cup powdered sweetener
    • 1 ½ teaspoons baking powder
    • 3 tablespoons butter melted
    • 2 large eggs
    • 3 tablespoons unsweetened almond milk
    • 1 teaspoon vanilla extract
    • ½ cup ChocZero Strawberry Jam

    Instructions

    • Preheat oven to 350°F. Line 6 cups of a muffin pan with liners.
    • In a large mixing bowl, beat together all of the ingredients except the jam until well combined.
    • Fill each lined muffin cup about ⅓ full. Top each with a heaping teaspoon of strawberry jam. Divide the remaining batter evenly between the six muffin cups to top each off.
    • Bake for 25 minutes, or until fully cooked. Allow to cool on wire rack before removing from pan. Cool completely before serving.
