    In an effort to eat more vegetables and come up with some delicious low carb holiday side dishes. For this mashed cauliflower with spinach recipe, I modified an old mashed potato recipe to use cauliflower.

    Regular mashed cauliflower is just a bit too plain for me, so I like to up the flavor and add more color. Cheese is always a great addition. And, throwing in another healthy low carb vegetable like spinach doesn't hurt either.

    There's also something about eating a vegetable mashed rather than whole. It may be more like baby food, but the texture has a nice feel to it.

    I also love the flavor combination of sour cream and cheddar in this keto cauliflower mashed potatoes with spinach recipe. The flavors taste so great together!

    You may have noticed that I love to have gooey melted cheese on top of my low carb casseroles. It's a favorite of mine. If you like your cheese crispy and brown, you can turn on the broiler at the end of baking.

    Don't be afraid to change up the seasoning in this recipe. You can certainly tailor it to suit your tastes. Some people may not like dill, but I think it really adds a nice touch.

    This keto cauliflower mashed potatoes with spinach recipe is sure to be a crowd pleaser with its sour cream and cheese flavor. The spinach adds a wonderful green color that will have people wondering if it's really a broccoli mashed potato casserole instead.

    That's the great thing about combining everything in the food processor. You can really disguise a vegetable and make it appear to be something else.

    Although I love my sweets, I need to do more vegetable side dishes. There are so many health benefits that come from eating veggies that are difficult to get elsewhere.

    I'm also a believer that most nutrients should come from whole foods and not supplements. So, I like to eat as many nutrient dense ingredients as possible.

    I really liked the flavor of this keto mashed cauliflower dish. I plan to make it again for the holiday lunch at work or our family dinner gathering.

    Ingredients

    • 10 ounces chopped spinach cooked and drained
    • 1 medium head cauliflower cut into pieces
    • ½ cup butter
    • 1 cup sour cream
    • 1 ½ teaspoons dried minced onion
    • 1 teaspoon salt
    • ¼ teaspoon dried dill weed
    • 1 cup Cheddar cheese shredded
    US Customary - Metric

    Instructions

    • Cook cauliflower in boiling water for 6 minutes then drain.
    • Place cooked cauliflower and butter into food processor.
    • Pulse together until cauliflower is well blended with butter.
    • Add spinach, sour cream, dried onion, salt and dill.
    • Pulse in food processor until well combined.
    • Transfer to a casserole dish.
    • Top with the grated cheddar cheese.
    • Bake at 350 degrees F for 20 minutes until cheese is slightly browned.

      can the cauli be cooked waterless in microwave just to wilt it, instead of boiling in water? just so there wont be too much liquid.

        I always add water for cooking in the microwave as it's used for steaming. It may not work as well without water but it's worth a try.

          I always cook my cauliflower in the microwave without adding any water. I have not had a problem doing it this way.

        Outstanding and a nice change from regular mashed cauliflower. I used half the butter and half the sour cream and it was perfectly creamy. If you boil the cauliflower then let it sit in a strainer for a few minutes, it won't be overly liquidy.

        I didn't know there was such a thing as a mashed potato salad. I have a mashed cauliflower and a cauliflower mock potato salad. Both of those can be made dairy-free.

        I usually use florets when making cauliflower mash. I'm not sure how well it would mash using frozen rice. But frozen cauliflower florets and frozen spinach would work.

      Great recipe! Just starting low carb and I was wondering what to do with that bag of cauliflower and some sour cream and found your website.       This recipe is amazing. I didn’t put sour cream in in it. I put heavy cream in it and it was so creamy. I seasoned it with garlic powder, onion powder, parsley, black pepper, and salt.

      This was more like riced cauliflower. It was still delicious but did not have the mashed potato texture. The recipe was amazing because my kids and husband loved it, now they want the real mashed cauliflower.

      This dish was delicious! My mom isn’t a huge fan of our low carb food but this one she really liked. We put a couple squeezes of siracha on it. Yum! Thank you for this recipe! It’s a keeper!

        Yogurt is a good sub for sour cream so I think it should work out fine in the recipe.

      My son and I have been on keto since June 30th. I had intended to make this for my son and I to try, but I had a potluck to go to a few days ago and nothing else to take. I usually don't like to take things that haven't been tried before, but I took a chance. OMG, everyone loved it including me, and I emailed the link for the recipe to two people while I was still at the potluck. There were two things I did a little differently. I didn't have any 10 ounce packages of spinach but I had a 27 oz can so I drained it and used about half. Also I had a four cheese Mexican blend on hand which is what I used. I had a hard time from the pictures determining what size dish you had used and I finally decided that an 8 by 8 would be too small. I wasn't sure about using a 9 by 13 either, so I opted for a dish I had that was in between and it worked out fine. When possible, can you please put the size dish that you used in your recipes? Thank you so much for this wonderful recipe. I will definitely be making this again and again.

        I usually do put the dish size. This one was made in a 2 quart casserole.

      This was so good! I completely cheated! Birds Eye makes mashed cauliflower and they have always made frozen spinach. Heated both and combined other ingredients in and baked! Still so very good and quick!
