    Enjoy this holiday season while staying low carb with these cinnamon orange keto muffins.  This recipe is from Louise Hendon of the Keto Summit and author of The Essential Keto Cookbook and creator of the 3-2-1 Keto Meal Plans.

    There are certain flavors that seem just perfect for the fall and winter months.  And cinnamon and orange are two of them!

    If you're new to low carb and Keto baking, then let me go through some of the Keto ingredients used to make these muffins.

    Low Carb & Keto Flours

    Instead of regular wheat flour, these keto muffins are made from almond flour.  Nut flours are very popular in low carb and keto baking. 

    Try using other nut flours (like hazelnuts or pecans) for a different flavor.  You can make your own nut flours by food processing the whole nuts until a fine meal is created.  Just note that some nuts have more net carbs than others.

    Another low carb flour is coconut flour, but it behaves a bit differently from nut flours, so if you want to try making muffins using coconut flour, then I suggest following Lisa's coconut flour muffins recipe here.

    Low Carb & Keto Sugars

    Instead of sugar or honey, stevia is used to sweeten these muffins.  You can use other low carb and Keto sweeteners like erythritol if you prefer. 

    I know not everyone likes the taste of stevia as it can leave a slightly bitter aftertaste (especially if you add too much), so try the dough as you're adding in the stevia to make sure you don't add too much. 

    I find the cinnamon and orange flavors go really well with stevia, so even if you're not typically a fan of stevia, you'll probably still like it in this recipe. 

    Keto Oils

    Instead of using butter or seed oils, this recipe uses ghee or coconut oil.  Ghee contains less lactose and casein than regular butter so it's a good alternative for those wanting to stay mostly dairy-free, while still giving the muffins a creamy and buttery flavor.  Or if you prefer to be 100% dairy-free, then go for coconut oil instead.

    Cinnamon Orange Keto Muffins

    Ingredients

    • 3 cups almond flour
    • ½ cup ghee or coconut oil, melted (but not hot) 120 ml 
    • 4 large eggs whisked
    • 1 Tablespoon cinnamon
    • 1 teaspoon nutmeg
    • ¼ teaspoon cloves
    • 3 Tablespoons orange zest
    • 1 teaspoon lemon juice 5 ml
    • 1 teaspoon  baking soda
    • Stevia or other Keto sweetener, to taste
    US Customary - Metric

    Instructions

    • Preheat oven to 350 F (175 C).
    • Mix together all the ingredients in a large mixing bowl. Add stevia to taste.
    • Pour into muffin pans (use silicone muffin pans or grease the metal muffin pans). This recipe makes 12 muffins.
    • Bake in the preheated oven for 18-20 minutes until a toothpick comes out clean when you insert it into a muffin.

      I saw another post with this recipe and she said it is 1-1/2 teaspoons. But it was dry huh?

          Maybe you should test, taste, and modify the recipes if they are not yours before posting.
          I am new to Keto and was looking forward to trying your recipes. I think that I will pass now knowing that even you haven't tried these yet yourself!

          They come from a known source but their style is much different than mine. It has been on my list of recipes to tweak and change and I do need to do that soon.

      There is something wrong with this recipe. Followed directions and my batter was dry! Needs more moisture and 3 tbs of cinnamon can't be right. Maybe 3 tsp. I'm a cinnamon lover but that uses half my bottle of cinnamon. Consider fixing recipe.

      Thank you for all this great reading. I may order your cookbook however, have a few books coming and not sure of all I have ordered right now but I am all about fast/easy/easy to find ingredient recipes and looking to see if I can seriously lower my Blood Sugar/A1C as am Type II diabetic. Would soooo love to get off medication and if possible reverse my diabetes. I am curious (as am a real “muffin” lover), your recipe above (which sounds very flavorful) makes 12 muffins however, I did not see (apologies if I missed it in the recipe) what a portion size is.....1 muffin.....or 2????????

      I haven't made these yet but they are for my three day Keto menu beginning tomorrow. The recipe says it makes 12 muffins, my question is, how many would you expect to eat on the three day diet?

      3 tablespoons of cinnamon sounds like way too much. I’ve never heard of a recipe using that much in one doesn’t muffins. They must be very spicy.

        Sweetener amount definitely varies by individual. It's difficult to get an amount that pleases all, especially for those on low carb and keto.

      Very expensive for poor tasting muffins that were dry. Followed directions to the letter twice and batter does not pour. More like soft dough. Disappointed. Wish I would have read the comments before making.

      I just made this recipe. Not enough liquid. I added 3/4 cup of almond milk. I’ve been vegan for a year now. This is not the best recipe I’ve made. Won’t make again. Waste of Almond flour. ☹️

      Sorry I may have done something wrong but yuck. It needs water or butter or oil unless you want chunky muffins that don’t raise. The texture is top course and not appealing

        It is. If you think it's too much, you could reduce it. I would use a tablespoon or less.
