    You’ve probably heard of using zucchini to replace noodles in pasta. It’s an easy way to reduce carbs! And, all the flavor comes from the sauce anyway.

    But, what about using fresh zucchini to replace your pizza crust instead? The result is a tasty, satisfying dish that packs in all the flavor without the unnecessary carbs!

    These zucchini pizza boats are not only delicious, but they’re also so easy to make. Just add all your favorite toppings, bake them up, and then enjoy each “slice!”

    Stuffed zucchini boats are a fun food to eat. Not only do they look delicious, but they are filled with the tastiest ingredients too.

    If you want something easy and tasty, these keto zucchini pizza boats are the perfect option!

    But, if you have more time to make a traditional pizza crust, I highly recommend making my coconut flour pizza crust or cauliflower pizza crust. They turn out really well for a traditional-style pizza.

    Healthy zucchini pizza boats are really filling for lunch and the perfect thing to save in your meal prep. This is going to become your favorite zucchini recipe of all time that satisfies your pizza cravings.

    If you have a child, make them their own zucchini boat. They will love it!

    Ingredients

    There are just two types of ingredients in this simple recipe. That's why it's one of my favorite healthy recipes of all time.

    Zucchini

    Of course, you will need some fresh zucchini! Don't peel them, just cut each one in half lengthwise.

    Pizza toppings

    Want to add some of your favorite pizza toppings? No problem! Just mix them in with the tomatoes or throw them on top of the cheese. 

    Chopped-up pepperoni, ground sausage, or bacon would be a great way to add protein to these zucchini pizza boats. Or, try mixing peppers, mushrooms, or other veggies with the tomato filling!

    You can also play around with spices like oregano or basil to add more flavor to the stuffed zucchini boats.

    Cheese

    For cheese, you can use slices like I do or shredded mozzarella cheese if that’s easier.

    I prefer slices because shredded cheeses use an anti-caking powder to keep the pieces from sticking to each other, which adds carbs. But, either will work just fine.

    Some Parmesan cheese would be a great addition, too!

    Tips

    • Put parchment paper on the baking sheet. This will make the clean-up a lot easier.
    • Use Italian seasoning. Save time and just use your favorite Italian seasoning in the oil.
    • Make squash boats. Mix things up and use yellow squash and zucchini together.

    Instructions

    This recipe for keto zucchini boats only takes minutes to prepare and less than 30 minutes to bake!

    Prepare the zucchini

    First, we’ll get the zucchinis ready.

    In a small bowl, mix together the olive oil, garlic, salt, and pepper, then set it aside.

    Next, cut off the zucchinis' ends and cut each one lengthwise. Remove and discard the seeds from the zucchini flesh.

    Oil the boats

    Brush the olive oil mixture onto the cut side of each zucchini half.

    Add toppings

    Next, add your toppings to the zucchini boats and throw it all in the oven:

    Fill the zucchini halves with diced tomatoes. You can sprinkle with additional salt and pepper if desired.

    Top each zucchini half with a mozzarella cheese slice.

    Bake the zucchini boats

    Place the pizza zucchini boats in the oven and bake at 350°F for 25-30 minutes or until the cheese has browned.

    That’s it! Once the cheese has browned, you’re ready to enjoy a “slice” of zucchini pizza.

    Tip: You could also grill your zucchini pizza boats if you don’t want to heat up your oven. Just be sure to keep an eye on the temperature gauge.

    My favorite variation is to make ground beef zucchini boats. You can also sprinkle some Italian sausage on top. Ground turkey or turkey sausage is another fantastic option.

    Ingredients

    • 1 tablespoon olive oil
    • 2 cloves garlic minced

    • 2 medium zucchini
    • 1 cup diced tomatoes
    • 4 slices mozzarella cheese about 20.6 grams

      What a surprise. I made these tonight. So easy with just a few ingredients.
      They tasted so fresh and good. I had to back them at 425 b/c my fish was cooking for dinner. They turned out perfect. I made just the basic recipe. My husband really liked it as well.
